- Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 1/4 cup sugar, 1 strip orange or lemon zest, 1/2 cup red wine, a cinnamon stick, 1/4 cup crystallized ginger, 1 each sliced unpeeled orange and lemon (seeds removed), 1/4 cup golden raisins and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepperto taste and cool to room temperature before serving.

Take it over the top with jarred caramel sauce, heated and drizzled over a scoop of good vanilla bean ice cream--outstanding!

- Preheat the oven to 415 degrees F (210 degrees C). Line a baking sheet with parchment paper.
- Arrange pie crust on the prepared baking sheet. Mix walnuts, brown sugar, 1 egg, butter, and vanilla extract together in a bowl. Spread the walnut filling over the pie crust, leaving a 1-inch border. Reserve 2 tablespoons of the filling in the bowl.
- Arrange apple slices in a circular pattern over the filling. Sprinkle cranberries over the apples. Drop small amounts of the reserved walnut filling here and there over the apples. Fold crust over the filling, overlapping as necessary to form a rustic circle.
- Beat remaining egg and water together to make egg wash. Brush edges of crust with the egg wash. Sprinkle Demerara sugar on top.
- Bake in the preheated oven until the crust is browned and apples are bubbling, about 30 minutes. Place baking sheet on a cooling rack for 30 minutes. Lift up tart using the parchment paper and place directly on a cooling rack for 1 hour.
- Run a large knife or angled cake spatula under the tart to release the parchment paper and transfer to a serving tray.

- Preheat oven to 450°. Place crust on an ungreased baking sheet., In a small bowl, mix cranberry sauce and orange zest; spread over crust. Top with mozzarella cheese, turkey, onion and Brie cheese; sprinkle with rosemary. Bake 10-12 minutes or until cheese is melted.

- Preheat oven to 350 degrees F.
- In a small saute pan saute shallots in olive oil. Add cranberries, orange zest and juice, and ginger. Reduce 50 percent. Check for seasoning.
- Place cooled cranberry sauce on pizza crust, add turkey sausage, Parmesan, Monterey Jack, and chile flakes. Bake for 15 to 20 minutes, and be sure the sausage is cooked through.

- You may use a purchased pizza crust or prepare your own. To make a pizza crust, coat a large bowl with teaspoon of olive oil and set aside.
- Stir first three ingredients together and let sit for 10 minutes, until nice and foamy.
- Place 1 1/2 cups of white flour and 1 1/2 cups of wheat flour in large bowl and mix in salt.
- Place one cup of regular white flour on work surface.
- Mix pour olive oil into yeast mixture and then pour yeast mixture into bowl with flour.
- Stir until as combined as possible.
- Turn out onto floured surface.
- With well floured hands, knead dough to work in the cup of flour on the board.
- Continue kneading until nice, smooth dough-ball is formed; approximately four minutes.
- Place in well oiled bowl, cover with plastic wrap, then kitchen towel and let sit for 30 minutes.
- Dough should double (at least).
- While the dough is rising, prepare the sauce.
- Heat the olive oil in a skillet on medium high heat.
- Add green onion and garlic to the pan, and cook for approximately 2 minutes.
- Add mushroom and cook until most of the water has cooked out of them.
- Add the alfredo sauce and stir.
- Add lemon juice and zest, and set aside.
- Mix potatoes, olive oil and rosemary in a bowl. Season with freshly ground black pepper.
- Use half the dough to form a large pizza crust (15 inch round), crimp the edges, brush edges with olive oil. Use the other half for another pizza.
- Place all of the sauce on the dough (less if you like, but I use it all).
- Sprinkle with cooked chicken, chopped parsley, spinach, bacon and parmesan cheese.
- Top with potato mixture.
- Top with slices of mozzarella cheese.
- Bake on pizza stone, vented pizza pan or ceramic tile coated with cooking spray at 425 F for approx 15-20 minutes until the potatoes begin to brown.

- Mix peri peri sauce with tomatoe sauce; so you have about 1/2 of a cup and spread over pizza base.
- Crunch dried kaffir lime leaves over the sauce.
- Spinkle on the chopped onion.
- Next evenly distribute the steamed and drained spinach.
- Add the chopped chilli.
- Mix the chopped turkey in a bowl with the cranberry sauce till coated and add to the pizza base.
- Sprinkle pizza lightly with salt.
- Cover all with mozzerella cheese.
- Bake untill cooked (about 20 minutes).
- Seve with fresh green salad.
