RUSTIC CONDENSED MILK BREAD
This homemade rustic condensed milk bread recipe gives you pillow soft, fluffy and delicious bread. Probably the easiest and tastiest bread you will make.

Steps:
- Pour milk, add egg, sugar, condensed milk and yeast in a bowl. Mix together.
- Add the flour and salt. Then all together to form a dough.
- Add butter and mix in thoroughly.
- Knead until smooth and elastic. If using a mixer, it should pull away form the sides of the bowl. If kneading by hand, when you stretch the dough and it doesn't tear.
- Put in bowl, cover and put in a warm place to rise for an hour.
- Then cut into 4 or 5 pieces. Take one piece and roll out. Cut strips halfway into the dough as shown. Then roll and put in a loaf tin.
- Repeat the process for the rest of the dough.
- Let it proof for a further 45 minutes.
- Give it an egg wash then bake in a preheated oven at 180°c/Gas mark 4 for 25-28 minutes.
- All done. Let it cool and enjoy.

Steps:
- The day before making bread, place 3/4 cup spring water, 1/4 teaspoon bread machine yeast and 1 3/4 cup bread flour into pan of a bread machine. Select dough cycle and let knead for 5 minutes. Stop machine and let rise overnight.
- The next day, pour starter from bread machine pan into a non-metallic container. Reserve 1/3 cup for this recipe and freeze remainder for later use.
- In a large bowl, mix together 1/3 cup reserved starter, 1 cup spring water, 1/2 teaspoon yeast, 2 cups bread flour, whole wheat flour and salt. Select Dough Cycle; press Start. After 10 minutes, remove dough from machine and place in a lightly oiled bowl. Cover with a damp towel and let rise until doubled, about 2 hours. Deflate dough and let rise again until doubled, about 1 hour.
- Turn dough out onto a lightly floured surface and form into a round loaf. Place loaf on a baking sheet that has been sprinkled with cornmeal. Cover and let rise until nearly doubled, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
- Spray loaf with water and place in preheated oven. Spray loaf again every two minutes during the first 10 minutes of baking. Bake for 40 minutes, until bottom of loaf sounds hollow when tapped.

My husband had a favorite sandwich shop that closed and the bread for the sandwiches was a sourdough type with a great texture. After much experimentation, I have come close to duplicating the bread's taste and texture. You can easily halve this recipe for only one loaf.-

- In a large bowl, dissolve yeast and sugar in warm water. Let stand 5 minutes. Add salt, vinegar and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Do not knead. Transfer to a greased bowl. Cover and let rise in a warm place until doubled, about 50 minutes., Stir dough down. Transfer to a greased 9-in. pie plate. - Mix water, yeast, and salt together in a large bowl until mixture becomes foamy, about 10 minutes. Stir flour into yeast mixture until well incorporated. The dough will be loose and look wet. Cover bowl loosely with a damp towel and let sit for about 5 hours.
- Shape dough into 2 loaves using damp hands. Place loaves on a cornmeal-dusted work surface and score the tops a few times with a sharp knife. Allow loaves to double in size, 30 to 60 minutes.

I'm showing you my more savory, less sweet, take on this somewhat strange, but addictive viral sensation. If a cross between a cheese Danish and garlic bread doesn't sound great, you've probably never tried it!

Steps:
- Combine warm water, yeast, sugar, and 1 cup flour in a bowl. Let rest for 30 minutes.
- Add 2 cups flour and salt to the bubbly yeast mixture. Beat with an electric mixer fitted with a dough hook until dough is fairly smooth, elastic, and tacky but not sticky, about 5 minutes. Feel free to add more flour if dough is too sticky.
- Knead the dough briefly before transferring to a lightly greased bowl. Cover and let rise until doubled in size, about 2 hours. At the 30-minute and 60-minute marks, uncover and fold dough with wet fingers 5 to 6 times to develop gluten structure.
- Transfer to a work surface and press flat, squeezing out excess air. Divide with a bench scraper into 6 equal portions. Roll each portion into a smooth ball.
- Transfer rolled dough balls onto a Silpat®-lined baking sheet and press down gently. Dust lightly with remaining flour.
- Cover with a clean kitchen towel and let rise for 30 minutes.
- Meanwhile, preheat the oven to 375 degrees F (190 degrees C).
- Bake rolls in the center of the preheated oven until lightly browned, 20 to 25 minutes. Transfer to a cooling rack and let cool to room temperature, about 30 minutes. Increase the oven temperature to 425 degrees F (220 degrees C).
- While rolls cool, make cream cheese filling. Mix cream cheese, sugar, salt, black pepper, cayenne, parsley, green onions, and heavy cream together with a spatula until combined.
- Mix melted butter, garlic, salt, parsley, and egg together for coating with a whisk until combined.
- Transfer cooled rolls back onto the lined baking sheet. Use a sharp knife to make 6 cuts on each roll, about 90% of the way through.
- Dip the cut rolls into the garlic butter and coat in between the slits using your hands or a pastry brush.
- Pipe or spread 1/6 of the cream cheese mixture into each of the 6 rolls. Coat each once more in the garlic butter mixture. Top with Parmigiano-Reggiano cheese.
- Bake in the center of the preheated oven until beautifully browned, 15 to 20 minutes. Let cool slightly before serving.

BREAD MACHINE CONDENSED MILK SWEET BREAD
This is my family's favorite bread machine recipe. You can bake it in your bread machine but I prefer to do it the way the recipe reads. I don't care for the way my machine bakes bread. Make sure all of your ingredients are at room temperature before starting.

Steps:
- Put ingredients in bread machine according to your machine's manufacturing directions and set the dough cycle.
- When done, remove and seperate into 3 sections.
- Roll each section out like snakes and mesh ends together.
- Braid and press ends together.
- Place in baking dish and allow to rise for 25-30 minutes.
- Brush melted butter or egg white on top after rising.
- Bake at 340 degrees for 30-45 minutes, until top is golden brown.
- If a better crust is wanted: Heat some water in an oven proof container in the microwave until near boiling. Then place water in the oven beside the bread.
