1/8 teaspoon white pepper
1/3 cup 100% apricot fruit spread, warmed
1 tablespoon orange juice

Steps:

  • Preheat oven to 350°.
  • Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, for 30 minutes.
  • In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens.
  • Bake 30-35 minutes longer or until golden brown and juices run clear, basting several times with remaining apricot mixture.
  • Let stand for 5 minutes before serving.

1 (1 1/2-pound) Cornish hens
Vegetable oil, for frying
1/2 cup hoisin
1/4 cup honey
1/2 teaspoon red pepper flakes
1/4 cup scallions, sliced

Steps:

  • Preheat oven to 350 degrees F.
  • In a very deep pot, bring enough oil to fill the pot by 2/3 of the way. Heat the oil to 350 degrees F.
  • Add the hen slowly to the oil and fry for 8 to 10 minutes on each side until golden brown and have reached an internal temperature of 165 degrees F.
  • Remove the hen from the oil and drain on a paper towel.
  • Whisk together in a large bowl, the hoisin, honey, red pepper flakes, and the scallions. Brush mixture over the cooked hen on both sides and reserve the extra sauce for dipping.
  • Place in oven for about 7 minutes. Take out. Flip over and brush reserved hoisin sauce on flipped side. Place in oven for another 7 minutes.

1/2 cup ginger orange marmalade
4 garlic cloves, minced
salt & pepper
vegetable stuffing (for Cornish Hen)
vegetable oil (for brushing the birds)
1 orange, sliced

Steps:

  • Wash the hens and dry.
  • Salt and pepper the hens.
  • Stuff the birds with the vegetable dressing.
  • Cover the birds loosely with foil and bake in 375°F oven for 45 minutes.
  • Uncover and continue baking for 15 minutes.
  • Mean while mix the marmalade and garlic in a small pot to melt the marmalade.
  • Paint the birds with the glaze, decorate with the orange slices and continue baking for 15 minutes or until golden and the birds are done (watch you don't burn the birds).

2 tablespoons honey
4 teaspoons lemon juice
2 cloves garlic, minced

Steps:

  • Combine soy sauce, teriyaki sauce, honey, lemon juice, garlic, black pepper, and ginger in a large resealable plastic bag. Add Cornish hens. Seal and marinate in the refrigerator for 8 hours.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a metal rack and set inside a roasting pan.
  • Transfer hens from the plastic bag to a flat work surface; tie legs together with kitchen twine. Place hens on the prepared rack.

1 Cornish hen (1 1/2-pound)
1 1/2 tablespoons olive oil
1 tablespoon dijon-style mustard
2 tablespoons mustard seeds
1/2 teaspoon crumbled dried rosemary
1 -2 garlic clove, minced
1/4 cup dry white wine
1/4 cup chicken broth

Steps:

  • Remove the backbone from the hen with poultry shears or a sharp knife, place the hen, skin side up, on a work surface, and press down the breastbone to flatten the hen.
  • In an ovenproof skillet roast the hen, skin side up, in a preheated 450°F oven for 10 minutes.
  • While the hen is roasting, in a small bowl whisk together the oil, the mustard, rosemary, the garlic, and salt and pepper to taste.
  • Remove the hen from the oven, spread the mustard mixture over the skin, and roast the hen for 15 minutes.
  • Transfer the hen to a preheated broiler and broil it about 4 inches from the heat for 2-3 minutes. Now put the mustard seed in with the mustard mixture and broil for 2-3 more minutes(this is so the mustard seeds won't burn).
  • Transfer the hen to a platter and keep it warm.
  • To the skillet add the wine and boil the mixture over high heat until it is reduced by half. Add the broth, boil the mixture for 1 minute, scraping up and brown bits, and add any juices that have accumulated on the platter. Strain the sauce through a fine sieve onto 2 plates. Cut the hen in half with a sharp knife, and arrange each half on top of the sauce.
  • Serve and enjoy!

2 cups red wine
6 scallions, thinly sliced
1 tablespoon fresh ginger, chopped

Steps:

  • Put the hens in a baking dish.
  • Mix the hoisin sauce, red wine, scallions, ginger, garlic and sesame oil together in a bowl and pour the marinade over the hens.
  • Cover and refrigerate the hens for 1-2 days.
  • Preheat grill to medium heat.
  • Put the hens on the grill bone side down and grill, covered, about 10 minutes.

This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! 2 rock cornish game hens, halved
1 (6 ounce) box long grain and wild rice blend

2 teaspoons apple jelly
1 1/2 cups red seedless grapes, halved or 1 red apple, cored and coarsely chopped
1/2 cup thinly sliced celery
1/3 cup unsalted cashews

Steps:

  • Combine 1/4 cup of jelly and cinnamon in a small sauce pan.
  • Heat and stir until melted; set aside.
