Russian Deviled Eggs with Sprats: An easy and delicious Russian recipe with only 4 ingredients with no mayo! My absolute favorite Easter deviled eggs.

6 eggs (boiled)
1 tablespoon Greek yogurt
1 teaspoon mustard
10-12 canned sprats
garden cress (to garnish (optional))

Steps:

  • Cut the eggs lengthwise and remove the yolks with a spoon. Use a fork to mash them and add Greek yogurt and mustard. Fill the egg halves with the yolk mixture.
  • Pulse sprats using a hand mixer or an immersion blender, adding about 2 teaspoons of oil from the can. Top the eggs with pureed sprats using a teaspoon or a pastry bag. Sprinkle with garden cress to garnish (optional). Enjoy!

Deviled eggs are everyone's favorite appetizer and this fun display is perfect for the holiday season. Parsley and scallions color the herby green filling for the wreath. The bow is made up of a deconstructed pimento cheese: the eggs are stuffed with a spiced Cheddar spread and chopped pimentos provide a brilliant red blanket on top.

22 large eggs
8 ounces cream cheese, at room temperature
3/4 cup mayonnaise
1/4 cup shredded sharp Cheddar (about 1 ounce)
1/4 teaspoon paprika
Kosher salt
1 bunch scallions, thinly sliced (about 1 cup)
1 1/2 cups flat-leaf parsley leaves
1/2 teaspoon finely grated lemon zest
Two 4-ounce jars diced pimentos (about 1 cup), drained well and roughly chopped

Steps:

  • Bring a large stockpot of water to a boil over high heat and prepare a large bowl of ice water. Gently lower the eggs into the boiling water with a slotted spoon and cook for 12 minutes. Remove the eggs with the slotted spoon and transfer to the ice water to cool completely, about 5 minutes.
  • Peel the eggs and halve each lengthwise. Remove the yolks from 9 of the egg white halves and transfer the yolks to a food processor. Add 2 ounces of the cream cheese, 1/4 cup of the mayonnaise, the Cheddar, paprika and a pinch of salt. Process until the mixture is smooth and light. Season with additional salt if desired. Transfer the cheese filling to a small pastry bag and refrigerate while you make the second filling.
  • Remove the yolks from the remaining 35 egg white halves and transfer the yolks to the cleaned food processor. Add the remaining 6 ounces cream cheese, remaining 1/2 cup mayonnaise, the scallions, parsley, lemon zest and a big pinch of salt. Process until the mixture is smooth and light. Season with additional salt if desired. Transfer the herb filling to a large pastry bag and refrigerate while you arrange the egg whites.
  • Lay a large wooden cutting board (at least 26 inches by 18 inches) in front of you with one of the longer sides facing toward you. Place 1 egg white half (pointed-side down) at the center of the bottom third of the board. Arrange 2 egg whites halves (pointed-side in) on each side of the center egg, so that it looks like the two loops of a bow.
  • Arrange 2 egg white halves (pointed-side down) vertically underneath the center egg so that it extends diagonally to the left. Repeat, arranging 2 egg white halves extending diagonally to the right. This is extra ribbon for the bow.
  • Place 1 egg white half (pointed-side in) next to the left bow loop so that there is very little space between the eggs. Continue arranging 19 more egg white halves in the same manner, creating a large circle that ends with the last egg white half placed next to the right bow loop.
  • Arrange the remaining 15 egg white halves around the inside perimeter of the outer circle, keeping most of egg white halves pointed-side in. You may need to arrange some egg white halves at different angles around the top of the bow. It doesn't have to be perfect!
  • Cut a 1/2-inch-wide opening in the pastry bag with the herb filling. Fill the 35 egg white halves that make up the wreath with a dollop of the filling, then squeeze the remaining filling on top of the egg whites. Use a small offset spatula to gently spread the filling evenly over the eggs, maintaining the curves of the outside edge and creating a flat surface.
  • Cut a 1/2-inch-wide opening in the pastry bag with the cheese filling. Fill the 9 egg white halves that make up the bow with a dollop of the filling, then squeeze the remaining filling on top of the egg whites. Use a small offset spatula to gently spread the filling so that the eggs are mostly covered.
  • Cover the bow with 3/4 cup of the pimentos. Sprinkle the remaining 1/4 cup pimentos around the wreath as ornaments. Serve immediately.

I am calling these Russian because of my use of beets in the recipe. One day when I decided to make deviled eggs for the first time, I had made a beet salad that my mom taught me. This was just grated boiled beets mixed with mayonnaise and fresh garlic. I decided to use this instead of just plain mayo. And from here, my recipe was born! Hope you like it.

1 small beet, peeled
2 tablespoons mayonnaise
2 teaspoons Dijon mustard
2 teaspoons sweet pickle relish
6 eggs
1 pinch ground paprika, or to taste
salt and ground black pepper to taste
12 sprigs fresh cilantro

Steps:

  • Place beet in a small saucepan with water to cover; bring to a simmer and cook until tender, about 15 minutes. Drain and cool. Grate beet on medium holes of a grater. Place grated beet in a bowl; stir in mayonnaise, mustard, and relish.
  • Place eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Cut each egg in half lengthwise; place egg yolks in a bowl. Mash egg yolks with a fork; stir beet mixture into egg yolks. Season with paprika, salt, and pepper.
  • Place egg whites cut-side up on a serving platter. Spoon yolk mixture into egg white halves; top with cilantro.

1/4 cup organic plain whole-milk kefir
1 teaspoon wasabi paste
1 tablespoon mayonnaise
Pinch of Maldon sea salt
8 teaspoons (4 ounces) red caviar (red salmon roe)
Fresh dill or parsley, for garnish

Steps:

  • Remove the yolks from the eggs and place them in a bowl. Mash them with a fork, then add the kefir, wasabi paste, mayonnaise, and sea salt and mix well. Spoon the mixture back into the egg whites, topping each egg half with about 1 teaspoon of caviar. Arrange the deviled eggs on a platter and garnish with the fresh herbs.

12 large hard boiled eggs
1/3 c mayonnaise or more for creamier egg
2 Tbsp worcestershire sauce
1 1/2 Tbsp horseradish sauce
1/2 tsp onion salt
1 tsp beau monde seasoning
1 Tbsp sciracha sauce
1 Tbsp frank's hot sauce
1/2 tsp black pepper
FOR GARNISH
1 tsp dried parsley, basil or chervil
2 oz jar of caviar
3 drops hot pepper sauce on top
ON THE SIDE AS A SHOOTER
8 chilled vodka & bloody mary's

Steps:

  • 1. Peel the boiled eggs and slice in half. In a medium bowl, add yolks and mash until smooth. Stir in the mayonnaise, Worcestershire, horseradish, hot sauces and seasonings. Spoon into the eggs. Garnish with parsley or basil and refrigerate for several hours.
  • 2. Just before serving add a small dollop of caviar on top of egg and hot sauce. Chill your vodka and bloody Mary shooters before serving as well. April 20th, 2015---served these for our Easter Sunday Dinner

This Russian devilled eggs recipe makes very moreish Russian stuffed eggs with a creamy filling of the yolks of hard-boiled eggs mashed with mayonnaise, mustard, paprika, dill pickles, purple shallots, and perfumed dill. A feature on the zakuski buffets before the elaborate banquets of Russian emperors they were popularised during the Soviet era.

4 pieces hard-boiled eggs (peeled and halved)
2 tbsp mayonnaise, creamy
1 tsp yellow mustard
1 small dill pickle (finely diced)
1 shallot small purple (finely diced)
½ tsp paprika
¼ tsp turmeric
¼ tsp garlic powder
½ tsp salt
¼ tsp white pepper
1 tsp fresh dill (finely chopped)

Steps:

  • Boil eggs until the yolks are firm, then chill in the fridge.
  • Once eggs are cold, carefully peel them, then slice in half, cutting lengthwise. Clean your knife between eggs for smooth slices.
  • Use a teaspoon to carefully remove the yolks, transferring them to a mixing bowl.
  • Add the remaining ingredients to the bowl, then use a fork to mash together, taste, and adjust seasoning as you like.
  • Spoon the creamy egg mixture back into each egg white.
  • Garnish with sprigs of dill, transfer to a plate, and serve with shots of chilled premium vodka.

6 large eggs, hard-boiled, peeled and halved
1/2 cup Russian salad dressing
2 tablespoons red caviar (such as lumpfish, rainbow trout, etc.)
3/4 cup dill, as needed

Steps:

  • Let the eggs sit at room temperature for 45 minutes before plunging them in a pot with lukewarm water; bring the water to a boil. As soon as it does, cover, turn off the heat and let them sit for 20 minutes.
  • Place the eggs in a bowl before chilling them in the fridge for 1 hour.
  • When it's time to peel off the shells, roll each egg on the counter, putting enough pressure on to crack the shell before soaking them in cold water. In case you still have a hard time peeling them off, simply run some cold water between the shell and the outer membrane.
  • Use a sharp knife and slice them, cleaning the blade between each egg. Drop the yolks into a bowl, scraping it out if needed, and mash the yolks very well into tiny pieces.
  • Spoon a ¼ cup of the Russian dressing into the egg yolks and stir until well combined before adding more, a little at a time until desired mix is achieved.
  • Transfer the filling into a piping bag using a 32 star tip and fill up the egg's cavities.
  • Add a tiny amount of caviar on top of the filling. Garnish with a small sprig of dill in the filling at the top of each egg to give it that festive look.
