400 g condensed milk
100 g dark chocolate
2 tablespoons rum
1 tablespoon gelatin
2 tablespoons water
almonds, chopped un-blanched
almonds, toasted ground

Steps:

  • Put condensed milk and chocolate into a saucepan and heat gently until chocolate melts.
  • Soften gelatine in the water, dissolve over hot water, add to chocolate mixture with the rum.
  • Pour into a lightly wetted 7" square cake tin and let set overnight.
  • Cut into 3 cm squares and decorate as desired by tossing in toasted ground almonds or chopped un-blanched almonds.

3/4 cup cocoa
2/3 cup sugar
4 cups milk
1 1/2 cups strong coffee
1 cup brandy
1 cup heavy cream, whipped with 2 tablespoons sugar

Steps:

  • Blend the cocoa with the sugar. Gradually stir in the milk. Heat to a boiling point.
  • Remove from the heat and add the coffee and the brandy.
  • Chill until ready to serve.
  • Pour the cocoa mixture to make a glass two thirds full.
  • Add about 1/4 cup whipped cream for each serving.
  • Blend well and serve at once.

  • Put the cake cubes in a baking dish. Sprinkle with 1 tablespoon rum for each cup of cake. Spoon the pudding on top and stir into the cake. Chill. Serve with whipped cream.

5 mint leaves
3 wedges lime
1 cup crushed ice
1 teaspoon simple syrup
½ teaspoon lime juice
2 fluid ounces spiced rum (such as Captain Morgan's®)
2 fluid ounces cranberry juice
2 fluid ounces soda water

Steps:

  • Place the mint leaves, lime wedges, and ice into a cocktail shaker; mash well with a cocktail muddler. Pour in the simple syrup, lime juice, rum, cranberry juice, and soda water. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled glass to serve.

3 cups sugar
6 cups water
1 (46 fluid ounce) can pineapple juice
1 (12 fluid ounce) can frozen lemonade concentrate
2 (12 fluid ounce) cans frozen orange juice concentrate
1 quart strawberries (fresh or frozen) pureed in a blender
2 cups rum, or to taste
2 (2 liter) bottles chilled lemon-lime soda

Steps:

  • In a saucepan, dissolve the sugar in the water by bringing it to a boil over medium-high heat. Turn off the heat and allow it to cool.
  • Combine the sugar water with the pineapple juice, lemonade, orange juice and pureed strawberries in a 6-quart container. Mix in the rum to taste. Put the entire mixture into a large plastic ice cream pail and freeze overnight.
  • To make the drinks to order, scoop 1/2 cup of the frozen mixture into an 8 oz glass. Fill the glass with lemon-lime soda and serve with a straw. Keeps well in freezer for up to one month.

Made this frozen punch for Mothers day would be great for those summer BBQs. This can be made days before and placed in a punch bowl, which makes it easy for cooking and serving a family get together.

15 ounces of cream coconut milk
20 ounces pineapple chunks
46 ounces pineapple juice
10 ounces frozen limeade concentrate
2 liters carbonated lemon-lime beverage
8 ounces grenadine
1 liter cruzan banana rum
1 liter seltzer water (optional)

Steps:

  • Place milk and pineapple chunks in blender and blend to mix the milk into the pineapples. This will have a slight chunky texture.
  • Place in a very large bowl or pot with all the rest of the ingredients except for the optional seltzer.
  • Mix and pour into 3 gallon freezer ziplock storage bags. Freeze overnight.
  • Place into a punch bowl the icy mixture. You can add the optional seltzer if it`s to strong or to sweet for you. I kept it on the side for my guests to have an option to add if they want.
