Steps:
- Put condensed milk and chocolate into a saucepan and heat gently until chocolate melts.
- Soften gelatine in the water, dissolve over hot water, add to chocolate mixture with the rum.
- Pour into a lightly wetted 7" square cake tin and let set overnight.
- Cut into 3 cm squares and decorate as desired by tossing in toasted ground almonds or chopped un-blanched almonds.

Steps:
- Blend the cocoa with the sugar. Gradually stir in the milk. Heat to a boiling point.
- Remove from the heat and add the coffee and the brandy.
- Chill until ready to serve.
- Pour the cocoa mixture to make a glass two thirds full.
- Add about 1/4 cup whipped cream for each serving.
- Blend well and serve at once.

- Place the mint leaves, lime wedges, and ice into a cocktail shaker; mash well with a cocktail muddler. Pour in the simple syrup, lime juice, rum, cranberry juice, and soda water. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled glass to serve.

- In a saucepan, dissolve the sugar in the water by bringing it to a boil over medium-high heat. Turn off the heat and allow it to cool.
- Combine the sugar water with the pineapple juice, lemonade, orange juice and pureed strawberries in a 6-quart container. Mix in the rum to taste. Put the entire mixture into a large plastic ice cream pail and freeze overnight.
- To make the drinks to order, scoop 1/2 cup of the frozen mixture into an 8 oz glass. Fill the glass with lemon-lime soda and serve with a straw. Keeps well in freezer for up to one month.

- Place milk and pineapple chunks in blender and blend to mix the milk into the pineapples. This will have a slight chunky texture.
- Place in a very large bowl or pot with all the rest of the ingredients except for the optional seltzer.
- Mix and pour into 3 gallon freezer ziplock storage bags. Freeze overnight.
- Place into a punch bowl the icy mixture. You can add the optional seltzer if it`s to strong or to sweet for you. I kept it on the side for my guests to have an option to add if they want.
