Cuban-Style Roast Pork Shoulder With Mojo Recipe image

Cuban mojo-marinated roast pork should be juicy, succulent, intensely porky, and melt-in-your-mouth tender.

For the Mojo:
8 medium garlic cloves, minced
2 teaspoons (8g) ground cumin
2 teaspoons (8g) freshly ground black pepper
1/4 cup (about 1 small handful) minced fresh oregano leaves
1/2 cup (120ml) fresh juice from 1 to 2 oranges (see Note)
1/4 cup (60ml) fresh juice from 3 to 4 limes (see Note)
1/4 cup (60ml) extra-virgin olive oil
Kosher salt
For the Pork and to Finish:
1 (6-8 pound; 3-3.5kg) boneless pork shoulder roast, rind removed
1/4 cup (about 1 small handful) finely chopped fresh mint leaves
3 tablespoons (about 3 very large pinches) finely chopped fresh oregano leaves
Lime wedges, for serving
Steamed rice, black beans , and maduros , for serving

Steps:

  • For the Mojo: Combine garlic, cumin, pepper, oregano, orange juice, lime juice, and olive oil in a large bowl and whisk. Season to taste generously with salt. Transfer half of mojo to a sealed container and reserve in refrigerator. Add pork to remaining mojo and turn to coat. If desired, transfer pork and marinade to a gallon-sized zipper-lock bag and refrigerate 2 hours or up to overnight before continuing.
  • For the Pork and to Finish: Adjust oven rack to lower-middle position and preheat oven to 275°F. Line a rimmed baking sheet with a double layer of heavy-duty aluminum foil. Place pork and juices on top and fold up foil, crimping to seal loosely but making sure that there is room for air to circulate inside. Place in oven and roast for 3 hours. Fold back foil, increase oven temperature to 325°F, and continue roasting, basting pork with pan juices occasionally, until pork shows almost no resistance when a metal skewer or knife is inserted into it and the surface is crackly and brown, 2 to 3 hours longer. Remove pork from oven and let rest 10 to 15 minutes.
  • Pour accumulated pork juices into a bowl and discard all except 1 cup. Add reserved mojo to pork drippings, along with fresh chopped mint and oregano. Whisk together and season to taste with salt.
  • Serve shredded pork, passing mint mojo and lime wedges on the side. Serve rice, beans, and plantains on the side. Reserve any leftovers for sandwiches.

1 ½ pounds pork tenderloin, trimmed
¼ cup orange juice, fresh
¼ cup grapefruit juice, fresh
2 tablespoons cilantro, chopped
1 teaspoon cumin
1 teaspoon dried oregano
2 cloves garlic, finely chopped
½ teaspoon kosher salt
½ teaspoon red pepper flakes
1 cup long-grain rice
½ orange, grated zest
3 tablespoons orange juice
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons extra virgin olive oil
1 15-ounce can black beans, drained and rinsed
2 scallions, white and green parts, chopped
2 tablespoons cilantro, chopped

Steps:

  • Using thin knife, trim silver skin from tenderloin. Mix orange juice, grapefruit juice, cilantro, cumin, oregano, garlic, salt, and hot pepper in gallon-sized zip-top plastic bag. Add pork, close, and refrigerate for at least 30 minutes and up to 4 hours. Meanwhile, make Rice and Black Bean Salad.
  • Prepare outdoor grill for direct medium-hot grilling. For a gas grill, preheat grill on high. Adjust temperature to 400°F. For a charcoal grill, build fire and let burn until coals are covered with white ash. Spread coals and let burn for 15-20 minutes.
  • Lightly oil cooking grate. Remove pork from marinade, drain briefly, but do not scrape off solids. Place on grill and cover grill. Cook, turning occasionally, until browned and instant-read thermometer inserted in center of pork reads 145°F, about 20-27 minutes. Transfer to carving board and let stand 3-5 minutes. Cut on slight diagonal and serve with rice and black bean salad.
  • Rice and Black Bean Salad:
  • To make salad, bring a medium saucepan of lightly salted water to a boil. Add rice and cook (like pasta) until tender, about 16 minutes. Drain in wire sieve, rinse under cold water, and let cool.
  • In medium bowl, whisk orange zest and 2 tablespoons orange juice, 1 tablespoon vinegar, ½ teaspoon salt, and ¼ teaspoon pepper. Whisk in oil. Add cooled rice, black beans, scallions and cilantro, and mix. Let stand at room temperature for up to 4 hours. (If refrigerated, let stand at room temperature for 30 minutes before serving, or rice will be hard.)

1 lb pork tenderloin
2 tablespoons extra-virgin olive oil
1 pinch kosher salt
1 pinch fresh ground black pepper
1 tablespoon ground cumin
1 tablespoon dried oregano
4 garlic cloves, peeled and gently smashed with the side of your knife
1 medium onion, sliced
1 lemon, juiced
1 lime, juiced
1 cup low sodium chicken broth
3 tablespoons Dijon mustard
8 thin slices swiss cheese
6 dill pickle slices, thin the longway
8 thin slices deli ham
kosher salt & freshly ground black pepper
8 rosemary waffles (do not separate)

Steps:

  • Begin by braising the pork in a not cast iron skillet. To do this you want to season the pork with olive oil salt, pepper, cumin and oregano, then add to the dry skillet and brown on all sides to form a nice crust.
  • Add sliced onions and smashed garlic to the bottom of your crock pot and place the pork on top.
  • Cover and cook for 4 hours on high heat or 8 hours on low heat.
  • 30 minutes - 1 hour before it's done cooking, add liquids to crock pot. Recover and continue cooking.
  • Remove pork from crock pot and let rest. Slice thinly.
  • TO ASSEMBLE SAMMIES: spread mustard on 4 of the rosemary waffles (recipe here: http://www.food.com/recipe/sweet-and-savory-rosemary-belgian-waffles-519641) add a layer of cheese, pickles, ham, pork then cheese again (the cheese glues everything together). Season with salt and pepper in between the ham and pork layers. Top each with the remaining waffles to make a sandwich. Add to a panini press or grill (I prefer the George) and cook until cheese is melty and you have some good grill marks.

1 cup orange juice

1 (1 1/4 pound) pork tenderloin, cut crosswise into 8 slices
1 lime, zested and juiced
1 teaspoon olive oil
1 teaspoon ground cumin
½ teaspoon salt
1 pinch crushed red pepper flakes
1 clove garlic, pressed

Steps:

  • Flatten the pork tenderloin slices slightly, and set aside. In a bowl, mix together the lime zest, olive oil, cumin, salt, crushed red pepper, and garlic. Reserve the lime juice. Rub the seasoning mixture onto both sides of the pork slices.
  • Spray a heavy skillet or ridged grill pan with cooking spray, and place over medium heat. Pan-fry the pork slices until browned on both sides, 6 to 7 minutes per side. After you turn the meat over, pour the reserved lime juice over the meat and continue cooking until no longer pink in the center. Serve hot, topped with pan juices.

1 loaf French bread, small, about 8 inches
2 tablespoons mayonnaise
2 tablespoons sofrito sauce, jarred
1 teaspoon honey
1 tablespoon mustard
4 slices ham
4 slices roast pork
3 dill pickles, siced
4 slices sweet onions
4 slices swiss cheese
8 green olives, sliced
1 tablespoon butter, melted

Steps:

  • Slice French loaf in half lengthwise to make a sandwich. (If loaf is very fat, slice off narrow pieces from the inner part of each slice to make a thinner sandwich.).
  • Mix together mayonnaise, sofrito sauce, and honey to make a sauce. Spread this sauce on both sides of sandwich. Then spread on mustard.
  • Place ham, roast pork, dill pickles, sweet onion, green olives, and Swiss cheese on bottom layer of sandwich. Put sandwich together, brush both sides with melted butter, and wrap smoothly and tightly in foil.
  • Place wrapped sandwich, bottom side down, in preheated (medium heat) skillet, and press down with something heavy, such as a foil-wrapped brick.) I use a cast iron skillet with large tomato juice cans inside.
  • When you hear the butter sizzling, leave sandwich 3-4 minutes, then flip it onto it's top and press again, leaving it for 3-4 minutes more. Remove sandwich from heat and let rest for 3 minutes. Unwrap, slice, and enjoy!

1 boneless pork shoulder butt roast (5 to 6 pounds)
4 garlic cloves, sliced
2 large onions, sliced
1 cup orange juice

Steps:

  • Cut sixteen 1-in. slits in pork; insert garlic slices. In a large bowl, combine the onions, orange juice, lime juice and seasonings. 1/3 cup all-purpose flour
1/2 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons butter
1 tablespoon olive oil
1 cup fresh mushrooms, sliced
1 tablespoon fresh rosemary, snipped or 1 teaspoon dried rosemary, crushed
2 garlic cloves, minced
3/4 cup chicken broth
2 tablespoons dijon-style mustard
1 teaspoon lemon peel, finely shredded
1 tablespoon lemon juice
lemon wedge (to garnish) (optional)
fresh rosemary sprig (to garnish) (optional)

Steps:

  • Trim any excess fat from meat. Cut meat crosswise into 1/2" slices. Place each slice between two pieces of plastic wrap. Using the heel of your hand, press lightly to 1/8" thickness; remove plastic wrap.
  • In a shallow dish, combine flour, pepper and salt. Dip meat into flour mixture, turning to coat.
  • In a large skillet, heat butter and oil over medium-high heat. Add half of the meat; reduce heat to medium. Cook for 2 to 3 minutes or until meat is slightly pink in center and coating is golden brown, turning once. Remove meat, reserving drippings in the skillet. Cover meat and keep warm in 300F oven. Repeat with remaining meat.
  • Add mushrooms, rosemary and garlic to the reserved drippings. Cook and stir just until mushrooms are tender.
  • Add chicken broth, scraping up any browned bits from bottom of skillet. Bring to boiling; reduce heat. Simmer gently about 5 minutes or until reduced by half. Stir in mustard, lemon peel and lemon juice; heat through.
  • Serve the mushroom mixture over meat. If desired, garnish with lemon wedges and additional fresh rosemary.

This is another great recipe that my family and I enjoyed. Nothing is as good as when my 86 year old Cuban Grandmother makes it but this was good. I found this on another website, kinda added my own things into it. But I'm the type of person that can really never really FOLLOW a recipe. 1 1/2 lbs boneless pork chops
1 pint water, to cover
1 lime, juice of
1 sprig fresh thyme
8 black peppercorns
1 tablespoon garlic powder
1 tablespoon onion powder
salt
2 tablespoons olive oil
1 large onion, halved and thinly sliced
3 garlic cloves, peeled and sliced
1 lime, juice of
1/4 cup chopped fresh cilantro

Steps:

  • In a large saucepan, combine water, juice of one lime, thyme sprig, peppercorns, garlic powder, onion powder and salt. Bring mixture to a boil. Add pork chops, reduce heat to medium-low and simmer for 1 to 1 1/2 hours, until meat is very tender. Add more water as necessary to keep chops covered.
  • Turn off heat and let the chops rest in the broth for 30 minutes. Remove chops from broth and shred, removing excess fat; set aside.
  • In a large frying pan, heat olive oil over medium-high heat. Add the shredded pork and fry until it is almost crisp, about 5 minutes. Add the onion and garlic and continue to cook until the onion is just tender yet slightly crisp, about 10 minutes more. Add the juice of one lime, mix though and toss with cilantro. Serve and enjoy.
