FRUITCAKE COOKIES
I make these cookies in place of Fruitcakes. They go much faster. These cookies will keep indefinitely in the refrigerator, or store in a closed tin after baking. They are better after several days. Best if made a week or two before Christmas, and hope some are left for Christmas

Steps:
- In a medium bowl, dredge candied fruit and raisins in 1 cup flour.
- In a large bowl, cream together brown sugar and butter. Beat in eggs. Gradually beat in bourbon and milk. Mix in remaining flour and spices. Stir in fruit and nuts. Refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C). Drop dough by teaspoonfuls, about 2 inches apart, onto ungreased cookie sheets.
- Bake for approximately 15 minutes. Remove from oven, and cool on wire racks.

- Preheat the oven to 300 degrees F. Line 2 cookie sheets with parchment.
- Sift together the flour, baking soda and cinnamon in a bowl. Cream the butter and sugar in a separate bowl, then gradually add the eggs. Add the dry ingredients alternately with the milk, blending well. Mix the pecans, cherries, pineapple and raisins in a large bowl, then pour the batter over them. Fold the fruit and nuts into the batter by hand, mixing well. Drop the batter by tablespoonfuls onto the prepared cookie sheets. Bake for 20 to 25 minutes, or until golden and done.

- Preheat oven to 300 degrees F (150 degrees C). Grease several baking sheets. Sift together the flour, cinnamon, and baking soda in a bowl; set aside.
- Beat together the butter and brown sugar in a large mixing bowl until fluffy, about 5 minutes. Beat in the eggs, one at a time. Gradually beat the flour mixture into the butter mixture, alternating each addition with about 2 tablespoons of milk until all the milk is incorporated and the dough is soft. Beat in the sherry, and mix in the nuts, raisins, dates, pineapple, and cherries until thoroughly mixed. Drop the dough by rounded teaspoons onto the prepared baking sheets.
- Bake in the preheated oven until the cookies are set and the bottoms are very lightly browned, 20 to 30 minutes. Cool on wire racks.

RUBY'S FRUITCAKE COOKIES
This is my aunt Ruby's recipe, which I have been baking every year for the last 13 years. All I can say is, without a doubt, they are definitely worth the full day's effort to make. Plus...these can be baked and stored for months in the freezer.

Steps:
- (This is the labor intensive part, but gives the best result). Cut into small pieces (quartered or smaller but still distinct pieces) the candied fruit and dates; and chop the pecans.
- Preheat oven to 250 degrees F.
- In a separate bowl, combine flour and spices.
- In a very large mixing bowl, cream butter& sugar.
- Add eggs one at a time.
- Add milk and Bourbon.
- Add the flour and spices mixture.
- Fold in fruit& nuts.
- (Messy, but this is easier done by hand).
- Drop by approximately 1 Tsp amounts onto a cookie sheet.
- They don't spread very much, so can be placed closely together.
- I can usually get about 30 on one cookie sheet.
- Bake each batch for 20-30 minutes.
- They should be slightly browned, firm but not hard.
- Be careful not to over bake.

FRUITCAKE COOKIES (CHRISTMAS LIZZIES)
Fruitcake Cookies, also known as Christmas Lizzies, are little fruitcake-like cookies that blend candied fruit and Louisiana Pecans with a touch of Brandy and held together with a little spiced batter. These fruitcake cookies are so flavorful, you won't believe how simple they are to make. If you only make one kind of cookie for the holidays, Grammie's Fruitcake Cookies are the one!

- Set the butter or margarine out to soften.
- Slice the candied cherries in half and dice the candied pineapple. Place these along with the glazed fruit mix, which should already be diced, in a bowl.
- Soak the raisins in the cherry brandy until plump, at least an hour or up to overnight.
- Add the cinnamon, nutmeg, allspice and baking soda to the flour and sift.
- Preheat the oven to 325 degrees and prepare cookie sheets by lining with parchment paper.
- Set a stand mixer to medium speed.
- Place the softened butter in the mixing bowl and cream until fluffy.
- Once the butter is fluffy, gradually add the brown sugar until completely blended.
- Add the eggs one at a time, completely blending each egg before adding the next.
- When the eggs are completely blended, add the sifted flour and spices slowly to the butter, eggs and sugar mix. Completely blend each addition before adding the next.
- Turn off the mixer, clean off the blade. The next steps will be mixed by hand.
- Combine the soaked raisins, pecans and cut candied fruit in a bowl and mix together completely.
- In batches, add some of the raisin, nut and fruit mixture to the batter and mix with a spatula by hand until all the ingredients are completely blended before adding more.
- Continue until all the fruit and nut mixture is thoroughly combined with the batter.
- Using a kitchen teaspoon, drop the cookie batter onto the cookie sheets, keeping each cookie about 1 inch apart. The cookies should be approximately 1 inch in diameter.
- Bake in a moderate oven (325 degrees) for 10 to 15 minutes, until browned on top.
- Remove the baking sheets from the oven and cool the cookies for five minutes on the cookie sheets, then transfer the cookies to a cooling rack and allow to completely cool for at least 3 hours. Don't rush the cooling rack time of the cookie bottoms will be soggy and the cookies will be sticky.
- Enjoy immediately or store in an airtight container.
- Makes about 10 dozen cookies.

NELL'S FRUITCAKE COOKIES
Altho this recipe requires a lot of "cutting/chopping"... it's worth every second. I made this for a cookie exchange one time and afterwards, when the hostess' husband arrived home... he took one look at my cookies and said "My grandmother made those fruitcake cookies!" ... to which I responded... "So did mine." He loved them and requested the recipe, which I gladly shared.

RUM FRUITCAKE COOKIES
I love these cookies because they are so full of fruit and lots of raisins. It came from a Favorite Brand Names cookbook. I have been making them for Christmas for the past few years and everybody loves them! My co-workers love them too, so I always have to make them some too! I hate making fruitcake so these are much easier! I line my cookie sheets with parchment paper so they don't burn. My oven is quite hot so I lower the temperature by twenty five degrees. I don't bake them for as long because my oven is so hot. I bake them for eight minutes and they are just a nice shade of brown. Hope you like them!

- Make the sponges. Halve the passionfruits and scoop out the seeds into a sieve placed over a bowl. Press the juice from the seeds through the sieve and discard the seeds.
- Beat the margarine and sugar in the bowl of a stand mixer fitted with the beater until light and creamy. Add the eggs a little at a time, beating well until smooth.
- Beat in about one third of the flour, then stop the machine and fold in the remaining flour using a large metal spoon until no streaks remain. Divide the mixture equally between the tins and bake for 25 minutes, until golden brown and just firm to the touch.
- Make the curd. Cut the passionfruits in half and scoop the seeds into a sieve over a bowl. Press the juice into the bowl and discard the seeds.
- Hand whisk the egg and yolk with the sugar and cornflour in a small bowl until smooth. Melt the butter in a small pan over a low heat, then whisk the liquid into the egg mixture.
- Return the mixture to the pan and place over a medium heat, stirring continuously for 4–5 minutes, until thickened. Pour the curd into a bowl, cover the surface with cling film and leave to cool completely.
- Make the syrup. Press the juice from the passionfruits as before, reserving 1 tablespoon of the seeds for decoration, then place the juice in a small pan with the sugar over a medium heat.
- To make the coconut cream filling, place the mascarpone into the clean bowl of the stand mixer fitted with the whisk. Measure out 75g of the thick coconut cream at the top of the chilled coconut milk and add this to the mascarpone with the sugar and cream and whisk until thickened.
- Slice both cakes in half horizontally and liberally brush the cut surfaces with the cooled syrup. Sandwich all 4 cake halves together in a stack, using 2–3 tablespoons each of passionfruit curd and coconut cream between each layer.
- Coat the top and sides of the cake with the remaining coconut cream, swirl a little passionfruit curd on top and decorate with the reserved seeds.

- Butter or grease the bottom of an angel food or tube cake pan. Line the pan with either parchment paper or a piece of brown paper bag. Butter or grease the top of the paper round. See pictures and instructions above recipe.
