GERMAN BEEF ROULADEN
Until I entered kindergarten, we spoke German in our home and kept many old-world customs. We always enjoyed the food of our family's homeland. Mom usually prepared this for my birthday dinner. -Helga Schlape, Florham Park, New Jersey

Steps:
- Cut steak into six serving-size pieces; pound to 1/4-in. thickness. Sprinkle with salt and pepper. Place a bacon strip down the center of each piece; arrange a pickle half on one edge. Roll up and secure with a toothpick. , In a large skillet, heat oil over medium-high heat. Brown beef on all sides. Add the water, onion, parsley and bouillon if desired. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until meat is tender. Remove to a serving platter and keep warm. , For gravy, skim fat from drippings. Combine the flour, water and browning sauce if desired; stir into drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with beef.

PIGS-IN-A-BLANKET WITH SAUERKRAUT AND MUSTARD

- Preheat the oven to 400°F. Set racks in the upper and lower thirds of the oven. Line two 13x18-inch baking sheets with parchment paper. In a small bowl, beat the egg with 1 tablespoon water. Prep the ingredients for the filling and set aside.
- If using a 17-ounce puff pastry package, roll each sheet to a 9x12-inch rectangle. Cut each piece lengthwise into eight 1 1/2-inch wide strips. Cut each strip crosswise into two pieces, about 4 1/2 inches long. You should have 32 pieces of pastry.
- Spread the center of each piece of pastry with 1/2 teaspoon mustard and top with 1/2 teaspoon sauerkraut. Brush one narrow end of the pastry with egg wash, add one piece of sausage, and roll to enclose. Return to parchment-lined baking sheets. Brush the top of each pastry with egg wash and sprinkle with caraway seeds, seam-side down. Chill in refrigerator for 15 minutes. Bake until golden brown and puffed, 23 to 27 minutes.
BOB'S PIGS IN BLANKETS
This is an old holiday favorite of my best friend's family. They make it every year. His family calls them pigs, but I think it is some variation of beef rouladen anyway, it's certainly delicious! I throw them in the slow cooker for about 5 hours instead of cooking them on the stove top for 3.

Steps:
- 1. Partially freeze round steak. Trim off fat
- 2. Cut up meat into 3/4" to 1" strips about 3 inches long. Pound strips to 1/8" thickness.
- 3. Lay out strips on table, springle lightly with pepper and onion salt. Cut bacon in half legnthwise and then about 2 to 3 inches long. Lay a piece of bacon on each strip of round steak. Roll each strip up, end to end fairly tightly and push toothpick through to secure.
- 4. Brown pigs in grease over medium high heat. (I use bacon grease)
- 5. Dice onion and cook in pot until slightly glassy and add sifted flour. Add water stirring slowly to start gravy.
- 6. Then put pigs back in pot. Add water to cover pigs and simmer 2 to 3 hours. Add flour or cornstarch to thicken gravy and kitchen bouquet to darken.

- Cut the flank steak into thin filets; about 1/4 inch thick and 3 inches wide.
- Generously spread one side of each filet with mustard to taste. Place bacon, onions and pickle slices on each filet and form into a roll. Use string or toothpicks to hold the roll together.
- Heat a skillet over medium heat and melt butter. Place the rolls in the butter and saute until browned.
- Pour in 2 1/2 cups of water and add the bouillon cube; stirring to dissolve the bouillon cube. Simmer the rolls for about an hour.

- Cut hot dogs lengthwise 3/4 of the way through. Insert a piece of cheese or 1/2 teaspoon caramelized onions into each hot dog, if using; set aside. If not using cheese or onions, poke hot dogs several times with the tip of a knife.
- On a lightly floured work surface, working with one sheet of puff pastry at a time, roll into a 14-by-11-inch rectangle. Cut lengthwise into seven 1 1/2-inch wide strips. Cut each strip crosswise into 4 rectangles, each about 3 1/2 inches long.
- In a small bowl, beat together egg and 1 tablespoon water; set aside. Line baking sheets with parchment paper or a nonstick baking mat; set aside. Place a hot dog on the narrow end of one piece of pastry. Roll to enclose, brushing with some of the beaten egg to adhere; transfer to prepared baking sheet. Repeat process with remaining hot dogs and pastry. Brush the tops of puff pastry with egg and sprinkle with seeds, if using. Transfer to refrigerator and let chill for 15 minutes.
- Preheat oven to 450 degrees.
- Transfer baking sheets to oven and bake until puffed and golden, about 20 minutes. Let cool briefly before serving with mustard and ketchup.
GERMAN PIGS IN A BLANKET
Easy German version of Pigs in a Blanket starts with crustless bread with German flavors like curry ketchup, gherkins, and German mustard. Make with your kids!

- Cut the crusts from the bread and using a rolling pin, roll to make the bread a little pliable.
- Spread thinly with the mustard making sure it reaches the edges evenly, then drizzle over a little curry ketchup, if used. Place a Frankfurter at the top end and tuck in a couple or more the gherkin slices.
- Roll up quite firmly, place joint side down on a baking tray and secure with a wooden toothpick. Brush the top and sides with the melted butter.
- Make 5 more rolls in the same way then bake for 12 to 15 minutes until golden brown and crisp. Remove and cool until warm. Take out the sticks before serving.
- Alternative suggestion: Use a pretzel dough to make pigs in the Bavarian pretzel blanket. We recommend the Kathi Pretzel Mix to make a perfect pretzel dough.
ROULADEN -GERMAN PIGS IN A BLANKET
This recipe came from a co worker. Ray always brought this dish to our pot lucks and it was usually the first dish gone! It is a delicious traditional meal that even though can be a little time consuming, it is worth it and can be made ahead of time. Our family requests it especially during the winter months, served over noodles or spatzles.

Steps:
- Trim all fat from meat and if not pounded flat by your butcher, take a metal or wooden cooking mallet and pound the steak until the tissues are broken down and it is pretty thin.
- Cut steak into long thin strips.
- Season flour with salt and pepper.
- Arrange an assembly line for preparation for ease of rolling.
- On each piece of steak, place a dab of mustard and rub it along the steak.
- Add a piece of bacon.
- Add a piece of pickle slice.
- Sprinkle a dab of marjoram.
- From one end of the steak, start rolling the steak, bacon, pickle until completely rolled and secure with toothpicks or string.
- Continue until all steak is rolled.
- Dredge rolls of steak into flour until coated.
- Heat oil in deep fryer pan.
- Brown steak until browned.
- Transfer to casserole dish.
- Continue browning and transferring into casserole dish until done.
- Preheat oven to 350°F.
- Stir and scrape up any browned bits left in frying pan and slowly add 2 cups of beef broth.
- Sprinkle a dash of extra marjoram into gravy and stir.
- Pour gravy over steak rolls in casserole dish.
- Either bake now at 350°F for 1-1-1/2 hours or you can refrigerate and cook later.

EASY PIGS IN A BLANKET
Even as adults, we're always craving this kid favorite. Use puff pastry to encase chunks of gourmet sausage. Using sausage (as opposed to franks) really lets you play with flavor; try an array of types, from chicken and apple to spinach and feta.

- Heat oven to 375°F. Line baking sheet with parchment. Unroll dough and brush with mustard. Cut each triangle in half lengthwise to create 2 skinnier triangles.
- Place 1 frank on each wide end of dough, then roll up and arrange on prepared sheet in two concentric circles, making sure dough on both circles touches.
- Beat egg with 1 Tbsp water, brush over dough and sprinkle with caraway seeds. Bake until golden brown, 18 to 22 min. Serve with mustard.

We always made these at harvest time when the neighbors got together and filled silo. This is how I learned to make them from my grandmother.

Steps:
- Brown ground beef and onion. Salt and pepper to taste. Drain grease. Stir together rice and browned ground beef and set aside.
- Bring a large kettle of water to a boil and remove from heat.
- Carefully remove 16 leaves from the head of cabbage and put leaves in the water and let set until wilted.
- Remove a leaf from the water with tongs, take a good sized tablespoon of the hamburger-rice mixture into the leaf and wrap leaf around the burger mixture. May need to secure with a toothpick to keep closed.
- Place in a greased 9x13 pan.
- Repeat with remaining leaves and burger mixture.
- When you have used all the mixture, pour tomato juice and water over top of cabbage rolls.
- Cover and bake for an hour at 325.
PIGS IN A BLANKET
Steps:
- In a pot of salted boiling water, cook the cabbage leave for about 2 minutes. Drain on paper towels and allow to cool.
- Heat oil in a large skillet and cook onions until tender. Stir in green pepper and garlic and cook for three minutes. Stir in crumbled ground round and cook until meat is browned. Add thyme and season to taste. Stir in 1 cup crushed tomatoes and simmer gently for 2 minutes. Stir in cooked white rice and toss to coat. In a small bowl, mix together 1 cup crushed tomatoes and chicken stock and spread out in bottom of baking dish.
- Preheat oven to 350 degrees. Lay each cabbage leaf out flat ad place about 3/4 cup of rice mixture in center of leaf. Fold in sides of leaf and roll up. Place seam side down in baking dish. Cover dish with foil and bake for 20-30 minutes. Serve each cabbage roll up with a little sauce and garnish with chopped parsley
PIGS IN A BLANKET
Kids love this one. My mom made it for me as did her mom. If making for a small child, cut the hot dogs into fourths length wise. The cheese is always optional.
