If you love pie, and your favorite part is the pastry, look no further. This pie will sure to be a new family favorite. This pastry dough is almost like a shortbread. It would also go well with pears or peaches. You don't even necessarily have to peel the apples!

1 ⅛ cups all-purpose flour
1 tablespoon white sugar
¼ teaspoon salt
½ cup butter, cut into pieces
2 tablespoons ice water, or as needed
½ teaspoon vanilla extract
¼ cup brown sugar, or more to taste
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon
5 apples - peeled, cored, and sliced
2 tablespoons butter, cut into pieces
1 tablespoon coarse sugar crystals

Steps:

  • Whisk 1 1/8 cups flour, white sugar, and salt together in a bowl. Press 1/2 cup butter pieces into flour mixture with your fingers until the mixture resembles coarse crumbs.
  • Make a well in the center of the flour mixture. Pour water and vanilla into well; quickly work water and vanilla into flour to create a loose dough, adding more water if the dough is crumbly. You should be able to squeeze it in your hand and have it stay together but be a bit crumbly. Shape dough into a flat disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Stir brown sugar, 1 tablespoon flour, and cinnamon together in a bowl. Add apples and toss to coat. Let sit for flavors to blend, about 10 minutes.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Roll dough out into a large, rough circle on a baking stone or baking sheet. Pour apple mixture into the center of the dough, leaving a 2-inch uncovered border, and dot apples with 1 tablespoon butter.
  • Fold edges of dough up over the apples, leaving an opening in the center. Dot dough with remaining 1 tablespoon butter and sprinkle coarse sugar over the dough.
  • Bake in the preheated oven until the crust is crisp and golden and apples are tender and caramelized, 40 to 45 minutes.

Just roll the dough; pile on fruit; fold the edges over in a lovely, rustic manner; and put it in the oven. In about an hour, you'll have a warming dessert to slice and top with vanilla ice cream.

1 recipe Test Kitchen's Favorite Pate Brisee
4 teaspoons unbleached all-purpose flour, plus more for dusting
2 pounds apples (see cooks note), peeled, cored, and cut into 1/2-inch wedges (6 cups total)
1/2 cup granulated sugar
1 tablespoon fresh lemon juice
3/4 teaspoon kosher salt (we use Diamond crystal)
1/4 teaspoon ground cinnamon
1 large egg, lightly beaten
Coarse or fine sanding sugar, for sprinkling

Steps:

  • Preheat oven to 375°F. Remove chilled dough from refrigerator, unwrap, and place on a lightly floured work surface. Let stand about 10 minutes (to soften slightly). Bang on dough with a rolling pin (to begin flattening and soften a bit more).
  • Dust top and pin with flour, position pin on center of disk, and begin rolling dough away from you. Give disk a quarter-turn and roll again. Continue turning and rolling in this manner until you have a 13-inch round with an even 1/8-inch thickness. Transfer to a parchment-lined rimmed baking sheet. Refrigerate while making filling.
  • In a large bowl, combine apples, granulated sugar, flour, lemon juice, salt, and cinnamon. Spread filling evenly over dough, leaving a 1 1/2-inch border. Fold edges of dough up and over apples, leaving most of fruit exposed and overlapping dough as needed. Brush dough with beaten egg; sprinkle with sanding sugar. Refrigerate 15 minutes.
  • Bake until crust is golden, apples are tender, and juices are bubbling in center, 1 hour to 1 hour and 5 minutes. Using a pastry brush, spread some of juices from center of galette over apples. Transfer sheet to a wire rack; let cool 10 minutes. Using a large spatula, loosen galette from parchment and move away from any released juices (so it doesn't stick to parchment as it cools). Slide galette (still on parchment) onto rack and let cool. Serve warm or room temperature.

2 sheets frozen puff pastry, thawed in the refrigerator
6 Granny Smith apples
3/4 cup sugar
6 tablespoons (3/4 stick) cold unsalted butter, small-diced
3/4 cup apricot jelly or warm sieved apricot jam
3 tablespoons Calvados, rum, or water

Steps:

  • Preheat the oven to 400 degrees F. Line 2 sheet pans with parchment paper.
  • Unfold the sheets of puff pastry and cut each sheet into quarters. Place the pastry pieces on the prepared sheet pans and refrigerate while you prepare the apples.
  • Peel the apples and cut them in half through the stems. Remove the stems and cores with a sharp knife and a melon baler. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across each piece of pastry and place a slice of apple on each side. Sprinkle the full 3/4 cup of sugar over all the pastry pieces and dot with the butter.
  • Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the galettes will be fine! When the galettes are done, heat the apricot jelly together with the Calvados and brush the apples and pastry completely with the jelly mixture. Loosen the galettes with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.

This is a combination of at least 3 recipes. I was feeling motivate to make an apple pie, then a crostata and got lazy. I didn't feel like making a pastry crust. So I searched and searched and found that puff pastry was an option, so here ya go! Enjoy! Prep times includes thaw time for the puff pastry sheet.

1 puff pastry sheet, thawed
1 egg, for egg wash
1/2 teaspoon water for egg wash
4 granny smith apples, medium, peeled, cored, sliced thin
1/2 cup sugar

1/8 teaspoon cinnamon
2 tablespoons butter, cold and diced
1 teaspoon sugar, Sugar in the raw, for sprinkling on crust (optional)
1/4 cup apricot preserves
1 tablespoon calvados, substitute water

Steps:

  • Preheat oven to 400°F.
  • Thaw 1 sheet of puff pastry, about 30-40 minutes. Once thawed, unfold. If it cracks, press the seams together with wet fingers.
  • Place on a baking sheet lined with parchment paper. *a four sided baking sheet works best in case of drips.
  • Halve apples, core>with melon-baller, peel apples. Slice into thin half moons. Place into a bowl. NOTE: *It is important to slice them thin or the pastry sheet will be done before the apple bake tender.
  • Combine sugar and spices. Pour over the apples and toss to coat.
  • You will make 3 rows of apples, leaving almost an inch of pastry exposed, all the way around.
  • Overlap the apple slices one on top the other covering the apple by 2/3 because the apples will shrink while baking. Dot apple slices with butter.
  • Make egg wash (mix egg and water together) and brush over the exposed pastry crust.
  • Bake for about 15 minutes. Rotate once during baking. If the crust is puffed up and golden brown and apples tender, it's done.
  • Meanwhile -- In a glass bowl add the calvados to the apricot preserve. Warm in the microwave for 20-30 seconds and stir. Warm a bit longer if necessary to thin.
  • While the galette still hot, brush with apricot & calvados mixture.
  • Serve warm with a small scoop of vanilla ice cream.

½ teaspoon salt
½ teaspoon baking powder
1 tablespoon sugar

Steps:

  • Peel and cut apples into thin slices. Place into a medium bowl with two tablespoons apple juice or lemon juice to prevent them from browning. Add in sugar and cinnamon, making sure each apple has been coated.
  • Preheat oven to 350 degrees F.
  • On a floured surface, roll out pie crust into a circle, the dough should be 1/4 inch thick. Transfer dough to a parchment lined baking sheet.
  • Place apples onto dough, you can layer each slice into a circle to make a design or just pile them on, leaving enough room to fold over the edges of dough. Once your apples are placed in the center of the dough, fold over the excess dough covering the outer edge of the apples.
  • Cut two tablespoons of butter into pieces and place sporadically on apples.
  • Whisk the egg and 1 tablespoon water together until combined.
  • With a pastry brush, brush egg wash over the edge of the dough and sprinkle with sugar. Place into oven and bake until crust is golden brown, approximately 35 to 45 minutes.
  • Let cool, cut into slices and serve! Add a scoop of vanilla ice cream if desired.

1 ½ lb granny smith apple, or Fuji apple, peeled, cored and sliced
1 tablespoon lemon juice

Steps:

  • Make the pie dough: In a medium bowl, combine the flour, sugar, and salt. Mix with fork.

In honor of "National Pie Day" this year, I decided to make my family an Apple Galette. A galette is basically a pie without a pan. You simply pile the filling in the center, and fold the crust over. It is very easy, and very good.

1 cup flour, plus 2 tablespoons flour
1/2 cup cold unsalted butter
1/2 teaspoon salt
1/4 cup cold water
1/4 cup brown sugar
1/4 cup white sugar
1/8 teaspoon salt
1 tablespoon flour
1/4 teaspoon cinnamon
1 tablespoon lemon zest
1 tablespoon lemon juice
2 apples, cored & sliced, no need to peel
2 tablespoons cold butter, cut into cubes

Steps:

  • For the crust: Pulse the flour and salt together in a food processor, just to combine. Then cut the cold butter into cubes. Add to the flour and pulse in the processor until the bits are smaller than peas. Turn on the processor, and slowly pour the water into it. As it mixes, the dough will start to stick together. Done.
  • If you do not have a food processor, cut the butter in with a pastry blender.
  • Form your dough into a disk, wrap it in plastic wrap, and stick it in the fridge. Let it chill while you prepare the filling.
  • For the filling: Preheat oven to 375 degrees.
  • In a small bowl, combine sugars, salt, flour & cinnamon.
  • Set aside.
  • Put the apple slices in a bowl, add the lemon juice and give it a stir.
  • Add the dry mixture and stir to coat.
  • Add in the lemon zest, and another quick stir.
  • Set aside.
  • Roll out your pie crust.
  • Lay rolled pie crust dough onto a bar pan or cookie sheet with an edge, lined with parchment paper.
  • Pile your apples in the center.
  • Simply begin folding the edges of the dough over the apples, gently pressing them into place.
  • Dot the apples with the butter pieces.
  • Bake the galette for 35-45 minutes, or until golden and bubbly.
  • Allow it to rest and cool for 10 minutes or more before serving.
  • The inside will ooze when you cut it, that's normal.
  • Serve with ice cream or whipped cream.
  • Enjoy!

1 teaspoon fresh lemon juice
1/4 teaspoon cinnamon
1 teaspoon apple brandy
1/4 teaspoon grated lemon rind
4 Granny Smith apples, peeled, cored, and cut in thin slices
1/2 cup sugar
4 tablespoons butter
Pizza wheel

Steps:

  • Thaw the puff pastry in the refrigerator overnight. The next day, roll it out slightly to make it more flat, even and square. Using a 10-inch pan lid as your guide, cut out the largest disk possible with a pizza wheel and place it on a parchment-lined sheet pan. Chill it while you make the filling.
  • Place the applesauce in a saucepan with the lemon juice, cinnamon, brandy, and lemon rind. Stir and bring to a simmer, then cook down to 3/4 cup. Spread it on a sheet pan to cool it to room temperature.
  • Preheat oven to 375 degrees F.
  • Take out the puff pastry and spread the reduced applesauce on it to cover the surface of the pastry, leaving a 1/2-inch edge. Fan the apple slices in concentric circles over the applesauce decoratively. Sprinkle all over evenly and lightly with sugar then dot it with butter. Bake for 25 to 35 minutes until the apples are tender and the edges are golden brown.

1 large egg

Pinch of salt
3 medium apples (such as Golden Delicious)
1 tablespoon packed light brown sugar
1 tablespoon granulated sugar
1 teaspoon fresh lemon juice
1/4 teaspoon apple pie spice
1 large egg, lightly beaten
Demerara or other coarse sugar, for sprinkling

Steps:

A fancy yet simple version of apple pie. This version was conceived in a Montreal hotel room (with a full kitchen, nonetheless) after being inspired by all the apples at the Marche Jean-Talon. If I'm going to make a fruit tart or pie, it is most often a galette-a thin, free-form open-face tart. The pastry is easy to make and roll out, and is crisp and light when baked. The dough is not sweet and can be used for savory tarts as well as dessert. This recipe makes enough dough for 2 tarts. The dough will keep in the refrigerator for 2 days or in the freezer for several months.

2 cups unbleached all-purpose flour
1/2 teaspoon salt (omit if using salted butter)
12 tablespoons (1 1/2 sticks) cold unsalted butter
1/3 to 1/2 cup ice-cold water
4 or 5 medium apples (Sierra Beauty, Gravenstein, or any flavorful variety)
Sugar
1 egg
Whipped cream (optional)

Steps:

  • Measure the flour and salt (if including) into a bowl. The butter should be cold and firm, but not hard. Cut it into 1/4- to 1/2-inch cubes and put about half of it into the bowl. Work it into the flour with your fingertips, lightly rubbing and breaking the flour-coated pieces of butter into small bits, until the mixture is roughly the texture of oatmeal or cornmeal. Add the rest of the butter and work it quickly into the dough until the pieces of butter are about half their original size. Dribble the water into the dough while tossing the mixture with a fork. Keep adding water only until the dough begins to clump and hold together when you squeeze a handful. You may not need the full 1/2 cup. Divide the dough in two and gather each part into a ball. Wrap each ball in plastic and flatten it into a disk. Let the dough rest, refrigerated, for an hour or so. You may want to freeze the second disk of dough for future use.
  • When ready to make the tart, let the dough warm up at room temperature for 15 minutes or so and preheat the oven to 400°F. Roll out the dough on a lightly floured surface into a rough circle about 12 inches in diameter and about 1/8 inch thick. Transfer the pastry to a baking sheet lined with parchment paper and refrigerate while preparing the apples.
  • Peel, core, and slice the apples and toss with 1 to 2 tablespoons of sugar. Arrange the apples on the pastry, in overlapping concentric circles or freely piled on top, however you like, but leaving a 1 1/2-inch border of dough around the whole circumference. Fold the dough up over the apples, and brush the rim of dough lightly with beaten egg. Sprinkle sugar over the dough and apples; use more or less, depending on the tartness of the apples. Bake in the lower part of the oven for 45 to 50 minutes, until the fruit is tender and the pastry is golden brown and slightly caramelized at the edges. Slide the tart off the pan to cool on a rack. Serve warm or at room temperature-with softly whipped cream, if you like.
  • Juicy stone fruits such as peaches, nectarines, apricots, and plums make wonderful galettes. To help absorb the juices and keep the pastry bottom crisp, sprinkle a mixture of 2 tablespoons sugar, 1 tablespoon flour, and 1 tablespoon ground almonds on the pastry before topping with fruit.
  • Apple galette is delicious when you spread the rolled-out dough with homemade apricot jam before arranging the apples on top. After baking, brush the apples with warm apricot jam for a beautiful glaze.

Steps:

  • Preheat the oven to 400. First roll out the dough on a large baking sheet greased.
  • Make the frangipane: mix butter with sugar. Add the egg, flour, almond extract and almond flour. Spread this mixture over the puff pastry. Slice the apples about 1/8 inches think and arrange them in a circle. Fold over the dough that it covers at least 2 inches. Brunch the galette with agave and sprinkle cinnamon. Bake for 20min.
