SALSA CHICKEN CASSEROLE
Tender chicken and rice in a zesty cheesy casserole.

Steps:
- Preheat oven to 375°F and lightly grease an 11"x7" casserole dish with butter. Set aside.
- Place a large skillet over medium-high heat and cook onions and peppers in olive oil until tender (about 3-5 minutes). Add garlic and butter and cook until fragrant and butter is melted.
- Add water, ZATARAIN'S® Spanish Rice and ½ cup of salsa. Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer, stirring occasionally, for 20 minutes or until rice is tender.
- Add black beans, and corn and stir well. Transfer to prepared casserole dish and spread rice mixture in even layer into dish.
- Evenly spread shredded chicken over the top of the rice mixture. Top evenly with remaining 1 cup salsa and cover with cheddar cheese.
- Cover dish with foil and transfer to 375°F oven and bake for 10-15 minutes or until cheese is melted.
- Serve, top with sour cream, cilantro, and corn chips, if desired.

This recipe was found in Raley's Extra Magazine, a grocery store chain in Northern California. We usually use a Lemon Rotisserie Chicken, but I've made it with other kinds and it's always turned out really good.

Steps:
- Remove skin and bones from chicken and discard.
- Tear chicken into bite-sized pieces.
- Place in a medium skillet with salsa verde and seasoning.
- Cook over medium heat for 5 minutes or until warmed.
- Spoon chicken into heated tortillas and top with beans and cheese.
- Serve with additional toppings if desired. (sour cream, cilantro, tomato, guacamole).

- In medium bowl, place watermelon, strawberries, onion, jalapeno and mint.
- Stir to combine.
- Pour olive oil and lime juice over mixture.
- Sprinkle on sugar.
- Cover bowl and refrigerate until serving.
- Slice chicken into serving pieces.
- Spoon salsa over or next to chicken.
- Place remaining salsa in bowl and serve at table.

- Add the quinoa, water, and garlic to a pot. Bring to a boil and stir. Cover and reduce heat to low. Cook for 15 minutes and turn off the heat. Let sit covered for 5 minutes. Open and fluff and a fork. Stir in the cilantro and lime juice. Season with salt and pepper.
- Meanwhile, add the water, peppers, red onion, mushrooms, and taco seasoning to a small pan. Cook over medium high heat for 6-10 minutes until tender and cooked to your liking. If desired, you could add the chicken during this step as well and some extra taco seasoning to kick up the flavor of the chicken as well.
- Assemble the bowls by starting with the quinoa. Add the black beans, chicken, veggies, tomatoes, and guacamole. Drizzle salsa over top if desired. If prepping these ahead of time for lunches, pack the guacamole separately if you are planning on eating it warm.
