ROTINI WITH SPICY TOMATO SAUCE
This recipe is pretty versatile. You can switch anything here with whatever you have in your fridge. That's kinda what I did and here's what I came up with! It's a good recipe when you don't want to waste some left over meat/chicken from the fridge or even from the night before.

Steps:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook until al dente and drain the pasta.
- In large skillet, heat the olive oil over medium heat.
- Add in the minced garlic and chopped onion. Cook until fragrant.
- Add in the tomato sauce, red pepper flakes, ground black pepper, olives and hot sauce. Stir continuously.
- Add in the salt, sugar, dried italian herbs, lemon juice, cherry tomatoes and meat/chicken. Taste and adjust the seasonings.
- Put in all the pasta in the skillet together with the sauce.
- Stir them together over low heat.
- Serve hot and sprinkle the finely chopped parsley as garnishing.
- Eat up and enjoy!

- In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 5-10 minutes; crumble beef; drain. Add garlic and seasonings; cook 1 minute longer. Add the stock and tomatoes; bring to a boil. Add pasta and peas; reduce heat. Simmer, covered, until pasta is tender, 10-12 minutes. , Gradually stir in cream and cheese; heat through (do not allow to boil).

- Preheat oven to 350F.
- Lightly spray a 9x13" pan with cooking spray and set aside.
- Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 8-10 minutes or until al dente; drain.
- Melt butter in a saucepan over medium heat.
- Add flour a tablespoon at a time and stir until smooth.
- Gradually stir in milk.
- Bring to a low boil, and cook for one minute, stirring constantly.
- Remove from heat and stir in cheddar cheese until melted.
- Stir in cream cheese and until melted.
- Add wine, and season with mustard, nutmeg and salt.
- Pour cooked noodles in pan.
- Layer chicken pieces over the noodles.
- Pour sauce over the chicken.
- In a small bowl, mix the cracker crumbs, parmesan cheese and butter, and sprinkle over the sauce.
- Bake in preheated oven for 30 minutes, or until edges of casserole are bubbling.
- Remove from oven, and stir to thoroughly coat pasta and chicken and to keep top of casserole from hardening.
- Allow to cool slightly before serving.

ITALIAN CHICKEN AND SPICY TOMATO SAUCE
A wonderful quick and easy meal. I came up with this because I always have a ton of canned tomatoes on hand and a bunch of chicken. I wanted something different and low calorie. Once I snuck a bunch of broccoli VERY chopped up in here. I had to cook it forever so the husband couldn't tell it was in the dish, but it work like a charm! He still loved it!! Enjoy! (Pasta is included in the nutritional information, so cut back on that if you are watching your weight.)

Steps:
- Cut raw chicken into small cubed pieces.
- Place into skillet with Tbsp of olive oil.
- Cook until the chicken is almost done.
- Then add the chopped garlic and onion and continue to cook until the meat is completely cooked.
- Add tomatoes, Italian spices, red pepper flakes and salt and pepper to taste.
- Continue to cook for about 3-7 minutes more.
- Then add in the tomato paste.
- Cook about 5-7 minutes more to complete.
- Meanwhile, heat the pasta according to the package directions.
- After cooking the pasta, drain but do not rinse.
- Serve the sauce over the pasta and enjoy!

Steps:
- season chicken well with blackening seasoning.
- in heavy skillet heat to med- high. add 1 T of butter and 1 T olive oil.
- cook chicken until just done about 6-8 minutes and remove to a plate.
- add mushrooms to skillet and 1 T butter.
- cook mushrooms until they start to brown, add garlic and cook no more than 2 minutes being careful not to scorch the garlic.
- add tomatoes, basil, blackening season and red pepper flakes.
- let cook for 5-6 minutes until most of the tomato liquid is gone.
- add cream and turn down the heat to medium and let cook for 5-6 minutes. taste and adjust seasonings if needed.
- sprinkle parmesan over and stir until well combined, add green onions.
- return chicken to mixture and let cook 5 more minutes.
- add pasta and spinach and stir to coat cook 2 minutes or until pasta is heated through.
- serve.

- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.

- Cook pasta according to package directions. Meanwhile, in a nonstick skillet, saute onion, celery and garlic in oil until tender. - Bake chicken: Preheat oven to 400 degrees and spray baking sheet with nonstick cooking spray. Place chicken breasts in medium bowl and add olive oil, salt, garlic, basil, and parsley; massage chicken with herbs. Place on baking sheet and bake for 15-20 minutes or until juices run clear and chicken is no longer pink. Allow chicken to cook for a few minutes then transfer to cutting board and chop chicken into small cubes; set aside.
- To make the sauce: Heat olive oil in a large oven-proof skillet over medium-high heat. Add the garlic; cook until fragrant and golden. Add in tomatoes, parsley, basil, oregano, garlic salt, and some fresh black pepper. Cook over medium heat until tomatoes break down and become a little like sauce; about 5-8 minutes. Transfer to a food processor or blender and puree until smooth. Taste sauce and add more herbs or salt if necessary.
- Return the sauce to the pan, add 1 1/4 cups of water, and stir in uncooked pasta. Bring back to a boil, cover, then reduce heat to medium-low. Cook pasta for 8-10 minutes or until al dente.
- Once pasta is al dente, reduce heat to low and stir in mozzarella and parmesan cheeses and chopped chicken. Place burrata on top of pasta and place under broiler until burrata melts and is slightly golden. Garnish with basil leaves and extra parmesan, if desired. Serves 4-6.
