1/2 cup diced pineapple, frozen
2 ounces pineapple juice
2 ounces Coco Lopez coconut cream
1 1/2 ounces white rum
1 ounce dark rum
Pineapple slices

Steps:

  • Put the ice, frozen pineapple, juice, coconut cream, and the white and dark rums into a blender. Blend until smooth and frosty. Pour the drink into 2 glasses and garnish the rim with pineapple slices.

6 ounces pineapple juice
6 ounces cream of coconut
6 ounces Malibu rum
2 -3 ice cubes
2 dashes grenadine
2 pineapple slices (to garnish)
2 maraschino cherries (to garnish)

Steps:

  • Place all ingredients in blender and blend until ice crushed.
  • Pour into glasses and add a dash of grenadine to each.
  • Garnish with pineapple slices and marischino cherries.
  • Add more ice if you prefer a more icy slushy drink.
  • NOTE: To make ahead, blend all ingredients and place in freezer. When ready to serve, just quickly blend again.

4 ounces golden rum
4 ounces pineapple juice
4 ounces Coco Lopez cream of coconut
3 cups ice
Pineapple slices, for garnish
Maraschino cherries, for garnish

Steps:

  • Add rum, pineapple juice, cream of coconut and ice to blender. Blend until smooth and frosty; add more ice as necessary. Pour into tall glasses and garnish with pineapple slices and maraschino cherries (and paper umbrellas, if you have them).

This recipe is a far cry from the syrupy, blended versions of piña coladas most people are familiar with. Steeping the rum with aromatics for a few days before making the drink adds an extra layer of flavor. Be sure to save the steeped vanilla bean for your next batch of pudding or ice cream.

3 cups white rum
1 vanilla bean, halved crosswise, split open
1 tablespoon allspice berries
1 tablespoon black peppercorns
3 cups pineapple juice
2 tablespoons fresh lime juice, plus lime slices for garnish
1 cup well-shaken canned unsweetened coconut milk
1 cup well-stirred cream of coconut
1/2 teaspoon Angostura bitters

Steps:

  • Combine the rum, vanilla bean, allspice and peppercorns in a 64-ounce jar. Shake well and store out of the sunlight for 3 days, shaking once a day if possible.
  • Strain the rum, discarding the peppercorns and allspice (the vanilla bean can be saved and reused). Return the spiced rum to the jar and add the pineapple juice and lime juice. Put the coconut milk and cream of coconut in a blender and blend until smooth and thick. Pour into the jar and add the bitters. Stir or shake well to combine. Refrigerate until cold, at least 3 hours or up to 3 days.
  • To serve, shake the jar again (the drink will naturally separate). Pour into glasses filled with ice and garnish with lime slices.

150ml pineapple juice
50ml coconut milk
25ml lime juice
ice
cherry , to garnish
100g dark brown muscovado sugar
1 pineapple , a few strips of skin, plus leaves to garnish
5 black peppercorns
5 cloves
1 cinnamon stick

Steps:

  • To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days.
  • Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.

  • Combine frozen pineapple, coconut milk, rums, sugar, lime juice, and vanilla bean paste in a blender; process until smooth and creamy, about 2 minutes. Place blender pitcher in refrigerator, and let piña colada mixture rest until flavors meld, about 30 minutes. Return pitcher to blender base; add ice cubes, and process until thick and smooth, about 30 seconds. Divide among tulip wine glasses or hurricane glasses.
