5 cups of raw nuts
4 tablespoons butter
4 tablespoons real maple syrup
2 tablespoons crushed dried rosemary
1/4-1/2 teaspoon cayenne pepper (depending on how spicy you like things)
2 teaspoons crunchy salt

Steps:

  • In a large skillet or Dutch oven, toast the nuts over medium heat, stirring frequently so that they don't burn.
  • In a small saucepan, melt butter and maple syrup together. Once melted, add rosemary and cayenne.
  • When the nuts are toasted (when the vast majority have darkened spots), pour the butter mixture over the nuts and toss to coat.
  • Spread the glazed nuts out on a silpat or parchment lined cookie sheet (makes for far easier clean up) and roast in a 350 degree oven for 15 to 20 minutes, depending on your desired level of roast.
  • When you take the nuts out of the oven, sprinkle the salt over the top, so that it adheres to the still sticky nuts.

Vegetable oil
3 cups whole roasted unsalted cashews (14 ounces)
2 cups whole walnut halves (7 ounces)
2 cups whole pecan halves (7 ounces)
1/2 cup whole almonds (3 ounces)
1/3 cup pure maple syrup
1/4 cup light brown sugar, lightly packed
3 tablespoons freshly squeezed orange juice
2 teaspoons ground chipotle powder
4 tablespoons minced fresh rosemary leaves, divided
Kosher salt

Steps:

  • Preheat the oven to 350 degrees. Brush a sheet pan generously with vegetable oil. Combine the cashews, walnuts, pecans, almonds, 2 tablespoons of vegetable oil, the maple syrup, brown sugar, orange juice, and chipotle powder on the sheet pan. Toss to coat the nuts evenly. Add 2 tablespoons of the rosemary and 2 teaspoons of salt and toss again.
  • Spread the nuts in one layer. Roast the nuts for 25 minutes, stirring twice with a large metal spatula, until the nuts are glazed and golden brown. Remove from the oven and sprinkle with 2 more teaspoons of salt and the remaining 2 tablespoons of rosemary. Toss well and set aside at room temperature, stirring occasionally to prevent sticking as they cool. Taste for seasoning. Serve warm or cool completely and store in airtight containers at room temperature.

1 rotisserie chicken, whole
1/2 cup pure maple syrup
2 tablespoons pure apple juice
1 tablespoon butter
1 small shallot, finely chopped (about 1 tablespoon)
1/4 teaspoon dried rosemary, crumbled between the fingers

Steps:

  • To make Maple Apple Chicken: Cut 2 large apples into 8 chunks each. Place the chunks around the chicken, Brush the hot glaze over the chicken and drizzle it over the apples. Bake as directed below.
  • Preheat the oven to 350 degrees F. Lightly coat a 13 by 9-inch pan with nonstick cooking spray. Place the chicken in the pan. Stir the maple syrup, apple juice, butter, shallot, and rosemary together in small saucepan and place over high heat. Bring to a boil, then lower the heat to maintain a gentle boil. Boil for 8 to 10 minutes, stirring frequently. The mixture will thicken.
  • Brush the hot mixture over the chicken. Bake until the chicken is hot and the glaze is bubbly, about 20 minutes, basting 2 or 3 times.
