Cool off on a warm day with this refreshing Citrus Spritzer. Fresh lemon and rosemary are the perfect pairing in this tasty Citrus Spritzer recipe.

2 cups water
6 sprigs fresh rosemary, cut into 4-inch lengths
4 strips lemon peel (3 inch)
1 pkt. (2.5 oz.) CRYSTAL LIGHT Classic Orange Flavor Drink Mix*
1 qt. (4 cups) lemon lime-flavored seltzer

Steps:

  • Bring water, rosemary and lemon peel to boil in saucepan; cook 1 min. Remove from heat. Let stand 10 min.
  • Use slotted spoon to remove rosemary and lemon peel from pan; discard rosemary and lemon peel. Cool infused water to room temperature.
  • Add infused water to drink mix in 2-qt. glass or plastic pitcher; stir until dissolved.
  • Stir in seltzer just before serving over ice.

1 pound rhubarb, cleaned, cut crosswise into 1/2-inch slices
2 cups water
1 1/2 cups sugar
3 Tbsp chopped fresh rosemary leaves
1/2 cup lemon juice
Soda water or carbonated water

Steps:

  • Simmer rhubarb, water, sugar, rosemary: Put rhubarb pieces, water, sugar, and rosemary leaves into a medium saucepan. Bring to a boil. Reduce heat to a simmer and cook for about 15 minutes. Rhubarb pieces will disintegrate.
  • Strain, add lemon juice, chill: Remove from heat. Strain out the solids with a fine mesh strainer. Add lemon juice. If too sweet for taste, add a little more lemon juice. Chill until ready to serve.

MEYER LEMON-ROSEMARY SPRITZER

1/2 cup sugar
6 Meyer lemons, thinly sliced
2 rosemary sprigs
4 1/2 cups sparkling water, chilled

Steps:

  • Bring water and sugar to a boil in a large saucepan, stirring until sugar dissolves. Add lemons and rosemary. Reduce heat, and simmer for 10 minutes. Remove from heat. Let stand for 20 minutes. Strain. Return to pan, and boil until reduced by half, about 5 minutes. Let cool completely. Fill each of 6 glasses with 3/4 cup sparkling water. Stir 1/4 cup syrup into each.

LEMON-ROSEMARY SCONES

3 cups all-purpose flour, plus more for flouring
2/3 cup granulated sugar
1 tablespoon plus 1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) cold unsalted butter, cut into pieces
1 cup heavy cream
1 egg
2 lemons
Leaves from 2 rosemary sprigs (or 4 if they're small sprigs), finely minced
5 cups powdered sugar
1/2 cup whole milk, plus more if needed for thinning

Steps:

  • Preheat the oven to 350 degree F. Line 2 baking sheets with parchment paper or silicone liners.
  • Place the flour, granulated sugar, baking powder and salt into a sifter or fine-mesh strainer, then sift the mixture into a large bowl until it's all combined. Throw the butter pieces into the bowl and use a pastry cutter to cut the butter into the dry ingredients.
  • Measure the cream in a spouted measuring cup and crack in an egg. Zest one of the lemons and add the zest to the cream. Add half of the rosemary to the mixture. Whisk together, then drizzle it into the flour-butter mixture, stirring gently with a fork until combined and a dough forms.
  • Turn the dough onto a floured surface and lightly press it together until it forms a rough rectangle. Use a rolling pin to roll into a rectangle about 1/2 inch to 3/4 inch thick. Use your hands to help with the forming if necessary. The final rectangle should be about 18 inches by about 10 inches.
  • Use a knife to trim the dough into a symmetrical rectangle, then cut the rectangle into 12 symmetrical square/rectangular pieces. Next, cut each piece in half diagonally to form smaller triangles. Transfer the triangles to the prepared baking sheets. Bake until just barely golden brown, about 18 minutes, then allow to cool completely.
  • While the scones are cooling, make the glaze: Combine the powdered sugar and milk in a large bowl. Add the juice of the lemon you zested and whisk the mixture together. Zest the second lemon and add the zest to the bowl. Add the rest of the rosemary and whisk it until it's all combined. Add a little extra milk if it needs thinning.
  • Position a cooling rack over a baking sheet. When the scones are completely cooled, drop them one by one into the glaze. Flip them over to coat. Transfer them to the cooling rack to allow the excess glaze to drip off. Allow the glaze to set completely before serving.
  • The scones will last for several days in an airtight container.

4 tablespoons pink lemonade mix, (Recommended: Country Time)
1 1/2 cups pineapple juice
1 (12-ounce) can lemon-lime flavored carbonated beverage
Garnish: pink sanding sugar

Steps:

  • In a large pitcher, combine vodka and lemonade mix, stirring well. Add pineapple juice, stirring well. Add lemon and lime beverage, stirring well.
  • In a shallow dish, add a small amount of water or lemonade spritzer. In another small shallow dish, add desired amount of sanding sugar.
  • Dip rims of glasses into liquid mixture and then into sanding sugar to garnish, if desired.
  • Divide ice between 6 glasses. Pour lemonade over top. Serve immediately.
