2 pounds sweet potatoes or yams, scrubbed
2 tablespoons unsalted butter
2 tablespoons dark amber maple syrup, grade A or B
1/2 teaspoon grated orange zest
1/2 teaspoon balsamic vinegar
3/4 teaspoon kosher salt, plus more as needed
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
  • In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.

Easy Creamy Mashed Sweet Potatoes image

These easy mashed sweet potatoes are on the savory side, but you can add a few extra ingredients for a sweeter version. See our tips in the notes section below for our suggestions. You can simmer, bake, microwave, or use a pressure cooker to cook the sweet potatoes. Our preferred method is to simmer the potatoes since this takes a similar amount of time when using a pressure cooker and when microwaving them and less time than when using an oven. We have included the steps for cooking sweet potatoes in the oven, microwave, and pressure cooker in the article above.

3 pounds sweet potatoes, scrubbed clean (5 to 6 small-to-medium)
1 1/2 teaspoons fine sea salt, plus more to taste
1 bay leaf, optional or a substitute fresh thyme or rosemary sprig
3 tablespoons butter
1/8 teaspoon ground cinnamon or more to taste
3 tablespoons sour cream, heavy cream, milk or half-and-half, optional
Fine herbs and fresh ground black pepper, to taste

Steps:

  • Peel and cut sweet potatoes into 1-inch cubes. Add to a large pot and add enough water so that they are covered by about one inch of water. Add the salt and bay leaf.
  • Bring the water to a boil, reduce the heat to a simmer and cook until the potatoes are easily pierced with a fork, 10 to 12 minutes. Drain well, and then return the potatoes to the pot. Or if you plan to use a food processor, add them directly to the processor bowl. (A food processor makes extra silky mashed sweet potatoes.)
  • Add the butter, cinnamon, black pepper, and a pinch of salt. Mash the sweet potatoes with a potato masher until your desired consistency. If using a food processor, pulse until your desired consistency.
  • For extra creamy sweet potatoes, stir in sour cream or a splash of heavy cream, milk, or half-and-half. Serve with extra butter and chopped fresh herbs (optional) on top.

6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

  • Place sweet potatoes on baking sheet and bake in preheated oven 40 minutes*. Turn to opposite side and continue to bake until a knife easily glides through potatoes, about 30 - 50 minutes longer.
  • Near the end of potatoes baking, place butter in a light colored medium skillet or saucepan. Heat over medium heat, and let cook, stirring occasionally until butter has browned (brown flecks should just start to bubble up into foam if using a saucepan it's harder to tell). Pour into a dish so it doesn't continue to cook and burn.

  • Put the potatoes right on the oven rack. No foil. No baking sheet. This will allow the oven heat to circulate more freely around the potatoes as they cook. Put a layer of foil on the floor of the oven to avoid messy cleanup. Roast until the potatoes are completely yielding in the center when pierced with the tip of a knife, 1 hour to 1 hour 30 minutes, depending on their size. Remove from the oven and lower the oven temperature to 300 degrees F.
  • Use a sharp knife to cut lengthwise down the middle of each sweet potato. Scoop out the flesh with a tablespoon, leaving the skin behind. Transfer the flesh to a food processor and pulse to blend until smooth. Do not overblend or it will make the potatoes gummy. Put the potato in a medium ovenproof dish. Spread it out in an even layer.
  • Once the oven registers 300 degrees F, bake the sweet potatoes for 10 minutes and then give the flesh a stir again. Bake for an additional 10 minutes. Remove from the oven. Transfer the sweet potato flesh to a medium bowl and season with salt. Stir in some of the orange juice, the sherry vinegar, and butter, if using. Taste for seasoning. Add more orange juice if needed.
