1-1/4 cups finely crushed coconut bar cookies
1/4 cup (1/2 stick) butter or margarine, melted
3 Tbsp. sugar
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 can (14 oz.) sweetened condensed milk
1/2 tsp. lime zest
1/3 cup lime juice

Steps:

  • Heat oven to 350°F. Mix crumbs, butter and sugar; press onto bottom and up side of 9-inch pie plate. Bake 10 min.; cool.
  • Beat cream cheese and milk with mixer until blended. Add zest and juice; mix well. Pour into crust.
  • Refrigerate 8 hours.

I have a good friend that loves Key Lime Pie. I saw this in the current issue of "Bon Appetit" and immediately baked one up for her. She was not dissapointed. She said this version was one of the best she's ever tasted! I agree.

3/4 cup granola cereal (without raisins or other dried fruit)
3/4 cup graham cracker crumbs (from 6 whole graham crackers)
1/4 cup unsalted butter, melted
3 tablespoons sugar
1 (14 ounce) can sweetened condensed milk
1/2 cup fresh lime juice
3 large egg yolks
1 (8 ounce) package cream cheese, softened to room temperature
1/2 cup sweetened condensed milk
1/4 cup fresh lime juice
2 tablespoons sugar
1 teaspoon vanilla extract
sweetened whipped cream or Cool Whip (to garnish)

Steps:

  • Preheat oven to 350.
  • Using on/off turns, blend granola in a food processor until coarsely ground.
  • Transfer granola into a mixing bowl.
  • Add cracker crumbs, melted butter, and sugar.
  • Press the mixture into a 9-inch diameter deep dish glass pie plate.
  • Bake for 8 minutes, or until crust is golden brown.
  • Remove from oven and let cool completely.
  • Turn the oven down to 300.
  • Meanwhile, whisk condensed milk, lime juice and egg yolks in a bowl to blend.
  • Pour into the pie crust.
  • Bake about 25 minutes, or until the mixture is set.
  • Cool to room temperature.
  • With an electric mixer, beat cream cheese, condensed milk, lime juice, sugar and vanilla in a large mixing bowl.
  • Pour over the cooled baked layer.
  • With a butter knife, spread evenly and smooth out the top.
  • Cover and refrigerate until firm, at least 4 hours.
  • Top with sweetened whipped cream or Cool Whip, if desired.

We've taken several Key Lime pie recipe's, and adapted them to fit our tastes, it's less tart, but still tangy. Does not include 4 hr chill time. You can use regular sugar and regular sweetened condensed milk if you like.

1 cup granola cereal (no dried fruit in it)
1/2 cup sliced almonds
1 cup graham cracker crumbs (about 10 crackers)
6 tablespoons butter, melted
4 tablespoons Splenda sugar substitute
8 ounces reduced calorie cream cheese
14 ounces fat-free sweetened condensed milk
1/2 cup lime juice
3 large egg yolks
14 ounces fat-free sweetened condensed milk
1/3 cup lime juice
2 teaspoons vanilla extract

Steps:

  • CRUST: Preheat oven to 350°F Blend granola and almonds in a food processor until coarsely ground. Add graham cracker crumbs, melted butter, and sugar. Mix to blend well. Press the mixture (save 1/4 cup of crumbs for a deco topping, if desired) into a 9x13 baking dish. Bake for 10 minutes, until crust is golden brown. Remove from oven and let cool.
  • BOTTOM LAYER: Mix well (using a blender, food processor, or hand mixer) all bottom layer ingredients to blend. Pour into the pie crust. Bake 20-25 minutes, or until mixture sets. Cool to room temperature.
  • TOP LAYER: Mix top layer ingredients in a mixing bowl. Pour over the cooled baked layer spreading out evenly and smooth over the top. Cover and refrigerate, at least 4 hours. If you saved some graham cracker/granola topping, sprinkle over top just before serving.

I found this recipe on the internet and have to say it is divine. I use Nellie & Joe's Key Lime Juice to save time and I like to add a little more zest than what is called for in the recipe. Sometimes a crack will develop and I really don't know what to do to prevent it. I've tried every suggestion and sometimes it just cracks, but at least the flavor won't be affected. The cooking time includes chilling.

1 1/2 cups graham cracker crumbs, about 10 whole crackers
3 tablespoons sugar
1/8 teaspoon cinnamon
1/3 cup butter, melted
1 1/2 lbs cream cheese
1 cup sugar
3 tablespoons all-purpose flour
1/8 teaspoon salt
1/4 teaspoon vanilla
1 tablespoon key lime zest, grated
1 (14 ounce) can sweetened condensed milk
1 cup sour cream
1/2 cup key lime juice, seeds removed (about 8-9 limes)
4 large eggs

Steps:

  • Crust:.
  • Mix all ingredients and press into bottom of a 9" spring form pan.
  • Double wrap pan with heavy duty aluminum foil.
  • Filling:.
  • Have all ingredients at room temperature.
  • Using an electric mixer, on low speed, beat the cream cheese just until softened.
  • Add sugar and beat on low just until mixed.
  • Add the flour, salt, vanilla, zest and beat on low just until mixed.
  • Add the sweetened condensed milk and sour cream beating just until mixed.
  • With mixer running on low speed, add the lime juice in a slow stream, beating just until mixed.
  • Add the eggs, one at a time, mixing each in before adding the next egg. Beat last egg in just until mixed.
  • Pour the filling into the prepared crust.
  • Place the foil-wrapped pan into a large roasting pan.
  • Place pans in oven and fill roasting pan with hot water until water is half way up the cheesecake pan.
  • Bake for 1 hour, or until filling is set, but center is still a bit jiggly.
  • Remove roasting pan from oven carefully.
  • Remove cheesecake pan from roaster water bath and place on wire rack. Run a sharp small knife around the sides of the pan to loosen and keep the cheesecake from cracking as it cools.
  • Cool at room temperature.
  • When cool, remove foil wrapping, wrap in plastic and refrigerate 8 hours or overnight.
