CHICKEN PASTA CASSEROLE

- Cook noodles according to package directions. Meanwhile, in a large bowl, combine the Parmesan cheese, egg, garlic powder and 1 teaspoon pepper; set aside. Drain noodles and rinse in cold water; add to egg mixture. Set aside., In a large skillet, cook the chicken, onion, celery and remaining pepper in butter over medium heat for 12-15 minutes or until chicken is no longer pink. Stir in 1/2 cup cream; heat through., In a greased 13x9-in. baking dish, layer half of the noodle mixture, chicken mixture and mozzarella cheese. Repeat layers. Combine the soup, wine, parsley and remaining cream; pour over top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 40 minutes. Bake, uncovered, for 15-20 minutes longer or until bubbly and cheese is melted., Or before refrigerating, cover and freeze casserole for up to 3 months., To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake according to directions.

A & L CHICKEN PASTA CASSEROLE
I just had the pleasure of having two guests for lunch all the way from Holland and dedicate this recipe to them - It is a do ahead casserole - just pop it in the oven 30 minutes before serving - Watch you don't leave it longer you don't want it to get too dry. This is a one dish meal, serve with a green salad & crusty roll lovely for lunch or dinner The 1 hour cooking time includes the time to brown & cook the chicken and precook the veggies. Everything in the casserole is precooked so you only have to heat it through before serving.

Steps:
- Salt & Pepper the chicken cubes and brown in a very lightly oiled skillet, turn heat to low and continue cooking until the chicken is no longer pink, remove from skillet and place in a large bowl.
- Add mushrooms, onions to the skillet cook until the onions are translucent, add to the chicken in the bowl.
- Lightly saute the peppers and carrot slices add to the bowl with the mushrooms & chicken.
- Add frozen peas, celery & waterchestnuts to the bowl.
- Mix the garlic powder, chili flakes to gether and sprinkle into the bowl.
- Add the un diluted soup and gently mix the ingredients.
- Add the pasta slowly incorporating it well with the sauce, chicken & veggies Pour into a 9" x 14" X3" lightly greased casserole dish or line the casserole with non stick foil.
- You may now cover it and hold in the fridge overnight or for a few hours or bake it right away,.
- Add cheese to the top just before putting it into the oven Bake uncovered.
- 375F oven for 30 minutes.
ROSALIE'S CHICKEN PASTA CASSEROLE - OAMC
Rosalie is my mother-in-law. We had this at her house recently and my picky eater step kids loved it! It's simple to make and can be frozen for OAMC.

Steps:
- Mix chicken, pasta, celery, milk, and mushroom soup together in 13 x 9 pan. Cover and let sit in refrigerator overnight.
- Before cooking, add mixed vegetables and cheese. Bake @ 350 degrees for one hour.
- For OAMC: mix ingredients as above. Put in 1 ziplock for 8 servings, 2 ziplocks for 4 servings. Label and freeze.
- Night before cooking, take out and defrost over night. Place in 13 x 9 pan (8x8 for 4 servings), add drained mixed vegetables and cheese, bake as above.

ROSALIE'S CORNMEAL CASSEROLE
This is a family favorite. Sometimes I substitute chickpeas or other beans for the kidney beans. I suppose if you like ground beef, you could substitute ground beef for the kidney beans as well. If you love cheese, by all means, use more ... if I've got enough I do!

Steps:
- Saute garlic, onion and green peppers in oil.
- Add cumin and chili. Cook for 2 minutues.
- Add flour. Cook for 1 minute.
- Add tomatoes and kidney beans. Add salt and pepper to taste. Simmer for 20 minutes or longer. (Sometimes I'll simmer it for longer. The flavour is better the longer you simmer it.).
- While the tomato mixture is simmering, make the cornbread mixture.
- Mix together the eggs, mild and oil.
- Add the cornmeal, salt and baking soda. Mix.
- Add the corn. Mix.
- Grease/spray 9 x 13 pan.
- Pour 2/3 cup cornmeal mixture into the bottom of the pan.
- Sprinkle 1 1/2 cups of cheddar cheese on top of the cornmeal mixture.
- Pour tomato mixture on top of cheese.
- Spoon the rest of the cornmeal mixture around the outer edges of the pan, on top of the tomato mixture.
- Sprinkle remaining cheese in the middle of the pan, on top of tomato mixture.
- Bake at 350°F for 45 minutes.
- Let rest for 10 minutes before serving.

ROTISSERIE CHICKEN SPAGHETTI CASSEROLE
This is one of those casseroles with many versions. What makes mine somewhat different is the use of rotisserie chicken, there are also no tomatoes, as well as some other slight differences. This is a kid pleaser and makes a nice potluck dish. If you can't find the chicken soup with herbs in it, just use regular Cream of Chicken and add a bit of dried herbs (perhaps 1 tsp of mixed dried green herbs). I used the reduced sodium versions of the soup because otherwise the sauce base can be too heavy and salty. If you dislike cream of mushroom, you may use a different flavor of "cream of..." soup however.

Steps:
- Remove skin and bones from your rotisserie chicken and dice up all of the meat.
- Melt 1 tsp margarine in a skillet and saute onions until they are very soft, about 5 minutes, seasoning to taste with a small amount of salt, pepper, and garlic powder.
- Place cooked onions in to a very large bowl, then melt the remaining 1 tsp margarine and saute the mushrooms until very soft, also seasoning to taste with salt, pepper and garlic powder, another 5 minutes; add the mushrooms to the bowl with the onions.
- Add the chicken meat, cooked & drained spaghetti,and diced velveeta to the large bowl and toss well to coat.
- Mix together the chicken broth, cream of mushroom and chicken soups and add to the bowl, combining well.
- Pour into a large oval casserole and bake covered in a preheated 350 F oven for 25 minutes.
- Remove cover, sprinkle Cheddar cheese on top and bake another 5 minutes.

EASY PIZZA PASTA CASSEROLE (OAMC)
This is a kid pleaser-very cheesy and topped with pepperoni. It makes 2 large (9x13) casseroles or 4 small ones; I often divide it in fourths and freeze 3. This originally came from TOH's Quick Cooking.

Steps:
- Brown ground beef, onion, garlic and seasoning in oil.
- Drain.
- While beef is browning, cook pasta according to the packaging
- Stir in pasta, spaghetti sauce and 3 cups cheese.
- Place mixture in 2 greased 9x13x2 inch baking pans or 4 square pans.
- Sprinkle with remaining mozzarella.
- Top with pepperoni.
- Cover and freeze up to 3 months.
- To cook now: Bake uncovered at 350 degrees for 25-30 minutes, until heated through.
- To bake frozen casserole: Thaw in refrigerator overnight and bake at 350 for 35-40 minutes, till hot.
CREAMY CHEESY CHICKEN PASTA CASSEROLE
I made this recipe up one night when I found a recipe calling for frozen pasta vegetable mix. This is much more economical and much tastier. Even my husband who does not like vegetables loves it.

Steps:
- Cook chicken breast (I use my George Foreman Grill cooks them fast and without any added fat).
- Chop chicken up into small bite-size pieces.
- Cook Rotini as directed on box.
- Cook vegetables until tender then drain.
- In large sauce pan blend together soup, milk and cheese stir until melted.
- Add in the chicken pasta and vegetables.
- Pour into Pam sprayed 9x13-inch baking pan.
- Cover with foil.
- Bake 35-45 minutes at 350°F.
