CHOCOLATE COCONUT ALMOND BALLS RECIPE BY TASTY

Steps:
- In a large bowl mix together coconut, sugar, salt, vanilla, and condensed milk. If the mixture is too dry add additional milk until it all just comes together.
- Roll the mixture into 1-inch (2.5 cm) balls and place on a wax paper lined baking sheet. Freeze for 15 minutes.
- Break apart chocolate bars and add to a microwave safe bowl. Microwave chocolate for 75 seconds, stopping every 30 seconds to check and stir.
- Remove the coconut balls from the freezer and individually roll in melted chocolate to coat. Place back on a wax paper lined tray and sprinkle with additional coconut and top with an almond (optional).
- Enjoy!

Steps:
- In a large bowl combine confectioners sugar with coconut and condensed milk.
- Shape the mixture into 1-inch balls and place onto a pan lined with wax paper. Place in refrigerator until firm.
- In a microwave-safe glass bowl, melt the chocolate chips with shortening, removing to stir once or twice until smooth.
- Dip each ball into the chocolate allowing the excess chocolate to drip off. Place the chocolate balls onto the waxed paper; let stand until set. Store in refrigerator.

Steps:
- In a food processor mix the first 5 ingredients.
- Chill.
- Over medium heat reduce the coconut milk stirring often until reduce to a 1/4 left. It`ll take about 30 minutes. It will separate. Remove 1 tablespoon of the oil and use as you wish. (body lotion, add to your coffee -- ).
- Add chips to the coconut off heat and mix till melted.
- Roll coconut mixture into 30 balls.
- Chill.
- Dip balls into melted chocolate. You will have leftover dip.
- Top with toasted almond.

These do not look like Mounds or Almond Joys, but the taste is very similar. I make these every Christmas along with my cookies and they are very easy and quick to make. They are very pretty on a tray when placed in decorated mini muffin liners.

Steps:
- Combine melted butter, sugar and coconut and mix well.
- Shape rounded teaspoonfuls into balls and place on cookie or baking sheet lined with waxed paper.
- Flatten each ball slightly by making an indentation in the center with thumb or finger.
- Fill centers with melted chocolate.
- Place an almond half or sliver on top, if desired.
- Chill until firm and store in refrigerator.

- Soak the pitted dates in a small bowl in hot water for 15 minutes if needed, then drain well. If you have moist dates on hand, you can skip this step.
- Add the dates along with all of the other ingredients to your food processor. Pulse a few times, then blend until a sticky texture forms.
- This might take 1-2 minutes. If your mixture is still crumbly at this point, add some more coconut milk or a splash of water.
- Using wetted hands, grab little chunks of the almond coconut mixture and roll them into little balls. Depending on your preferred size, you may end up with more or fewer bliss balls.

- Place the coconut in a food processor and pulse until it reaches a course flour-like consistency. Add the agave, stevia, 6 tablespoons of coconut oil and vanilla. Pulse again until all the ingredients are combined.
- The mixture will be sticky. Create 12-15 balls and place them on the waxed paper. Press one raw almond into the top of each. Place this pan in the fridge for about 10 minutes to allow the coconut oil to firm up.
- In the meantime, place the chocolate and 1 teaspoon of coconut oil in a microwave-safe bowl. Stir for a bit to ensure all the chocolate is coated with the oil. Heat for about 30 seconds and remove and stir. If necessary, repeat this in 10-second increments until the chocolate is melted. Be careful not to burn it.
