Turkey Tenderloins with Pesto and Provolone Cheese image

4 turkey tenderloins (about 2 1/4 pounds)
8 tablespoons purchased pesto
3 ounces thinly sliced provolone cheese, cut into 1/2-inch-wide strips
Fresh basil sprigs (optional)

Steps:

  • Preheat oven to 375°F. Cut each tenderloin lengthwise almost in half. Sprinkle inside and out with salt and pepper. Spread 1 tablespoon pesto inside each. Then insert cheese strips, dividing equally. Using toothpicks, skewer tenderloins closed. Brush each all over with 1 tablespoon pesto. Arrange tenderloins on rimmed baking sheet.
  • Bake tenderloins until thermometer inserted near center registers 160°F., about 20 minutes. Slice tenderloins crosswise into 3/4-inch-thick rounds; arrange on serving platter. Whisk any juices and browned bits on baking sheet to blend; spoon over turkey. Garnish with basil sprigs, if desired, and serve.

1 tablespoon soy sauce

1/4 to 1/2 teaspoon rubbed sage
1/4 teaspoon salt, optional
1/8 teaspoon pepper
1 boneless skinless turkey breast half (2 pounds)

Steps:

  • In a small saucepan, combine the first nine ingredients. Bring to a boil; remove from the heat and set aside to cool. , Place turkey breast on a rack in a greased shallow roasting pan. Spoon some of the butter mixture over the top. Cover and bake at 325° for 1-1/4 to 1-3/4 hours or until a thermometer inserted in turkey reads 165°, basting occasionally with butter mixture. , Let stand 10-15 minutes before slicing.

8 skinless, boneless turkey breast halves, slightly flattened
Flour, for dredging
1/4 cup vegetable oil
1 tablespoon olive oil
1 onion, chopped
4 tablespoons, unsalted butter
1/2 cup white wine
1 green pepper, diced
1 zucchini, cored and sliced in half moon
1 cup peas
1 cup chicken stock
Salt and pepper

Steps:

  • Lightly flour turkey breasts, shaking off the excess. In a large heavy skillet, heat the vegetable oil over moderately high flame. Add turkey breasts in 2 batches and saute, turning once, until brown. Remove from the skillet and keep warm.
  • Wipe skillet clean and add 1 tablespoon olive oil. Add the onion and saute until onion is translucent. Add the butter, wine, peppers, zucchini and peas and saute for 2 minutes, then add chicken stock and bring to a boil. Reduce the heat and simmer sauce until well blended and thickened, for about 5 minutes.
  • Return the turkey to the skillet and cook for and additional 5 minutes. Season with salt and pepper. Arrange 2 pieces of turkey on each plate and spoon the sauce and vegetables over them.

1 small lemon, thinly sliced
10 fresh basil leaves
Olive or vegetable oil
1/2 teaspoon lemon-pepper seasoning

Steps:

  • If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat. Loosen skin on turkey in 4 or 5 places. Carefully place lemon slices and basil leaves under skin. Rub turkey skin with oil; sprinkle with lemon-pepper seasoning. Insert barbecue meat thermometer so tip is in thickest part of turkey.
  • Cover and grill turkey, skin side down, over drip pan or over unheated side of gas grill and 4 to 6 inches from medium heat 20 minutes; turn. Cover and grill 35 to 45 minutes longer or until thermometer reads 170°F and juice of turkey is clear when center is cut.
  • Remove turkey from grill; cover with foil tent and let stand 10 minutes. Slice turkey.

5 teaspoons lemon juice
1 tablespoon olive oil

1 teaspoon garlic salt
1 medium onion, cut into wedges
1 celery rib, cut into 2-inch pieces
1/2 cup white wine or chicken broth

Steps:

  • Preheat oven to 325°.With fingers, carefully loosen the skin from both sides of turkey breast. Combine lemon juice and oil; brush under the skin. One 10- to 12-pound turkey
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, at room temperature
2 tablespoons minced fresh basil leaves
1 1/2 teaspoons freshly squeezed lemon juice
1 shallot, minced
3 parsley sprigs
2 lemons, quartered

Steps:

  • Let the turkey sit at room temperature for about 1 hour.
  • Preheat the oven to 400 degrees F.
  • Remove the packet of neck and giblets from the turkey and set aside. Cut away any fatty pieces near the cavity or neck and discard. Pat the turkey dry inside and out with paper towels and sprinkle liberally with salt and pepper inside and out.
  • Combine the butter, basil, lemon juice, shallot, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl with a rubber spatula. Loosen the skin over the turkey breast and push half of the butter mixture under the skin and over the breast meat. Rub the skin with the rest of the butter mixture. Stuff the cavity with the parsley and lemons. Tie the legs together with twine. Tuck the wings under the body and put the turkey breast-side up on a rack in a roasting pan.
  • Roast until the turkey begins to turn golden, about 25 minutes. Loosely tent the breast with foil, then reduce the oven temperature to 325 degrees F. Continue roasting, basting with pan drippings every 30 minutes, until an instant-read thermometer inserted in the thigh joint reaches about 155 degrees F. Remove the foil and continue roasting until it reaches 165 degrees F, about 30 minutes longer. Transfer the turkey and rack to a cutting board and let rest about 30 minutes.
  • Discard the parsley and lemons from the cavity before carving.

1/3 cup shredded Swiss cheese

  • Make a lengthwise slit down the center of the turkey breast to within 1/2 in. of bottom. Open meat so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic; set aside., In a large skillet, cook two bacon strips until crisp. Drain, reserving drippings. Crumble bacon; set aside. In the drippings, saute onion until tender. Stir in the flour, tarragon, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat., Refrigerate 1/2 cup sauce. Add the spinach, mushrooms and crumbled bacon to the remaining sauce; spread over turkey breast. Starting at a short end, roll up and tuck in ends; tie with kitchen string.
