Romanian Sour Cherry Cake image

This recipe is best with fresh sour cherries, but you can use canned sour cherries as well. It combines very nicely the sour flavor with the cake's sweetness. It is a very popular recipe in Romania.

5 eggs, separated
1 ¼ cups superfine sugar
5 tablespoons sunflower seed oil
2 cups all-purpose flour
1 lemon, zested
½ teaspoon vanilla extract, or more to taste
2 ¼ cups pitted sour cherries

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 8x16-inch cake pan.
  • Beat egg whites in a bowl until foamy. Add sugar little by little while continuing to beat.
  • Blend the yolks and oil together in a bowl.
  • Add the yolk mixture to the bowl with the egg whites. Add lemon zest and vanilla extract. Mix for 3 more minutes. Gently blend in flour using a tablespoon. Pour batter into the prepared pan and spread cherries on top.
  • Bake in the preheated oven until crust is golden brown, 40 to 60 minutes. Turn off the oven, leaving cake inside with the door closed for 30 minutes. Allow to cool before serving.

Very easy and delicious. Sort of like black forest cake, but more elegant. From "Crowning Elegance", a cookbook published by Arie Crown Hebrew Day School in suburban Chicago, IL. Tastes best on the day of baking. It might get soggy if covered.

2 eggs
1 cup sugar
1/2 cup margarine, melted
1/2 teaspoon vanilla
2 tablespoons cocoa
3/4 cup flour
1/2 teaspoon baking powder
1 (15 ounce) can sour cherries, well drained

Steps:

  • Preheat oven to 350°F.
  • Grease an 8"x8" square pan.
  • In bowl of a mixer fitted with a whisk, beat together the eggs and sugar until light yellow and fluffy.
  • Add margarine and vanilla, stir to combine.
  • Mix in cocoa, flour, and baking powder.
  • Pour batter into prepared pan.
  • Press cherries into the top of the batter.
  • Bake for 45 minutes or until set.

The newspaper clipping from my grandmother's recipe box said that this recipe is from the Hotel Esplanade Praha, Prague, Czech Republic. Ludlat Dort is a sour cherry cake that is spiked with rum. Made for a Tag Game. If you like German Chocolate Cake, you will love this one!!

1 cup sour cherry, from can drained
rum (to cover cherries)
1/4 cup butter
1 cup powdered sugar
8 egg yolks
1/2 cup cocoa powder
1 cup flour
8 egg whites
1/2 pint whipping cream
2 semi-sweet chocolate baking squares
1 bittersweet chocolate square
chocolate frosting

Steps:

  • Cover the cherries with rum and allow to soak overnight.
  • Beat butter, sugar and egg yolks until light and fluffy. Add cocoa powder and mix well. Add flour gradually. Beat egg whites stiff and fold into cocoa mixture.
  • Pour into two layer pans and bake in 300F oven for 45 minutes. Remove from pans and cool on rack.
  • In double boiler, bring cream and chocolate squares to melting point stirring continuously. When chocolate is melted, remove from heat and allow to cool completely. It will beat better if you refrigerate it for a time. Beat until very smooth and thick.
  • Spread one cake layer with thin layer of chocolate frosting and top with drained cherries. Place second layer atop first layer and cover rest of cake with remaining chocolate frosting.
