Once you try making a whole chicken in the slow cooker, you'll never want to roast it the old way again. In the slow cooker you'll get the moistest, most fool-proof, and hands-off whole chicken that you'll ever make. This recipe uses generous amounts of rosemary and garlic that not only infuse into the chicken, but also season the potatoes that cook underneath the chicken for a savory one-pot meal.

1 ½ pounds potatoes, peeled and cubed
1 medium onion, chopped
1 (4 to 6 pound) whole roasting chicken
6 cloves garlic, halved lengthwise
2 tablespoons rosemary
freshly cracked salt and pepper to taste

Steps:

  • Place potatoes in the bottom of a slow cooker. Add onion over the top of the potatoes.
  • Remove the chicken parts inside the cavity and pat the outside of the chicken dry. Slice deep, garlic clove-width slits into your chicken with a knife. Make 4 cuts on each side of the chicken, and 1 in each of the drumsticks. Stick a sliver of garlic deep into each cut. Place the remaining chunks of garlic into the cavity.
  • Starting on the back of the chicken, season generously with about 1/2 of the rosemary and cracked salt and pepper. Add some seasoning inside the chicken's cavity as well. Flip the chicken and place it breast side up in the slow cooker on top of the potatoes and onions. Season the top of the chicken generously with the remaining rosemary and more cracked salt and pepper.
  • Cook on Low until the chicken is cooked through completely and the juices run clear when the chicken is cut, 8 to 10 hours, depending on the size. Serve with the potatoes and onions from the pot.

5 lbs bone-in chicken thighs
2 tablespoons butter
1 cup butter (melted)
1 tablespoon garlic powder
2 teaspoons garlic salt
1 teaspoon onion powder
1 teaspoon parsley flakes
1 teaspoon dried cilantro leaves
1/2 teaspoon pepper
1/4 teaspoon ground red pepper

Steps:

  • Melt 2 tablespoons of butter in a skillet over medium/high heat.
  • Brown all of your chicken thighs, about 3 minutes on each side.
  • Place your browned chicken thighs in a 6-quart crock pot, pouring the remaining butter/cooking juices over top.
  • Whisk together your melted butter and spices and immediately pour evenly over your chicken.
  • Cover and cook on low for 4 hours.
  • If you would like to brown up your chicken, place the thighs on a cookie sheet with a large, wide, slotted spoon and place in your oven on broil (Hi if you have the option of Hi/Lo) for 60-90 seconds, watching it closely.

5 pound roasting chicken
3 pounds baby red potatoes (cut into quarters)
10 cloves garlic (peeled)
2 large rosemary or 6 to 8 small sprigs
2 small onions (cut in quarters)
1/2 cup chicken stock
1/2 cup white cooking wine
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Rinse and cut the potatoes into quarters.
  • Place them in the bottom of the crock pot.
  • Place 3/4 of the onion quarters, 6 garlic cloves and 1 or 2 sprigs of rosemary (depends on how large the sprigs are) arranged over the potatoes in the crock pot.
  • Sprinkle with salt and pepper.
  • Pour the chicken stock and the cooking wine into the crock pot.
  • Clean the chicken by removing the neck and gizzards from the cavity of the chicken and discard. Rinse the whole chicken and pat dry with paper towels.
  • Sprinkle the bird with paprika and rub over the entire chicken. Wash hands well with soap and hot water after touching uncooked poultry!
  • Put the remaining onions quarters and rosemary sprigs into the cavity of the chicken.
  • Place the chicken in the crock pot on top of the potatoes.
  • Place the lid on the crock pot and cook on high for 4 to 4 1/2 hours or until the internal temperature of the chicken has reached 165 F. or higher.
  • Carefully transfer the chicken and vegetables to a roasting pan. Preheat the oven on the broiler setting to 475 F. degrees.
  • Place the roasting pan in the oven and brown the chicken for about 5 minutes. Turn the roasting pan and brown for another 5 minutes or until the chicken skin is a golden brown.
  • Carefully remove the roasting pan from the oven. Carve the chicken and serve right from the roasting pan.
  • Makes 4 to 6 servings.

Steps:

  • In a small bowl, combine the paprika, smoked paprika, salt, onion powder, dried thyme, garlic powder, cayenne and black pepper. Set aside.
  • Place the onion pieces in the bottom of your slow cooker.
  • Remove any giblets from the chicken and stuff it with rosemary, garlic and lemon wedges (or whatever herbs and aromatics you like).
  • Rub the outside of the chicken with the spice mixture. If you like you can also rub some of the spices on the inside of the cavity and beneath the skin covering the breasts.
  • Place the spice rubbed chicken, breast side down, on top of the onion pieces and cover the slow cooker. You won't need to add any extra liquid.
  • Cook on high for 4 hours or on low for 7 hours, or until the chicken is tender and falling off the bone.

This recipe is inspired from the Lemon Garlic Chicken recipe from the Chicken Dump Cookbook by Sharla Kostelyk. The idea is to quickly assemble several meals to use, freeze, or gift. The ingredients below will make one large family meal using a 2.5-3 pound bag of chicken. You can easily divide this into smaller bags for smaller families, singles, or couples.

6-8 chicken breasts or 8-10 boneless, skinless chicken thighs
4-6 cloves of garlic, minced
2 tablespoons chopped fresh parsley
⅓ cup olive oil
1½ lemons, juiced
½ teaspoon pepper

Steps:

  • Label your gallon zippy bag with the recipe name and cooking instructions.
  • Fold down top of bag so that it will stand upright while you fill it.
  • Add all ingredients to bag.
  • Press out air and seal.
  • Refrigerate for up to 2 days, or freeze flat. Cooking Instructions
  • Thaw bag in the fridge. I like to place it in a casserole dish to prevent leaking.
  • Dump bag into crock pot, and cook on low for 4-6 hours.

5 lb whole chicken
salt and pepper
5 clove garlic ; mashed smooth
paprika
1/4 lb butter
1/2 c canned chicken broth

Steps:

  • 1. Wash the chicken with cold water.
  • 2. Pat dry with a paper towel.
  • 3. Cut off any of the excess fat on the chicken and discard.
  • 4. Peel and Chop the garlic up.
  • 5. You can use a garlic press if you have one , if not just chop up fine.
  • 6. Using a knife press the garlic into a paste , adding a little salt to the garlic helps it turn into a paste quicker.
  • 7. Spread half the garlic in side the cavity and rub the other half all over the out side of the chicken.
  • 8. Sprinkle the chicken inside and out with paprika , salt & pepper.
  • 9. Place the chicken in the crock pot and place a few pats of the butter on the breasts of the chicken ; Pour the broth around the chicken and add the remaining butter around in the broth.
  • 10. Cover and Cook on LOW setting for 6-8 hours ; depending on the hotness of your crockpot. ( DO NOT RAISE LID DURING COOKING TIME.)
  • 11. Serve the HOT garlic butter sauce over the chicken.

Steps:

  • Slice the red potatoes in half.
  • Lay the potatoes and half of the onion in the bottom of the slow cooker.
  • Cut onion in half and save for later.
  • In a bowl, mix butter, rosemary, thyme, salt, pepper, and garlic until well-combined.
  • Stuff the chicken with the other half of the onion and lemon wedge.
  • Rub the herb butter mixture all over the outside of the chicken.
  • Place the chicken on top of the potatoes and onions in the slow cooker and place a sprig of thyme and rosemary on top. Cover and cook for 4 hours on high.
