PORK BROTH
1 family pack of bone-in pork chops (6 chops in mine)
1 onion, coarsly chopped
1 stalk of celery, coarsly chopped
2 qt water, more as needed if it evaporates too much
1 Tbsp mexican oregano
1 tsp salt
3 bay leaves
2 clove garlic, roughly chopped
2 30 oz cans of hominy
1 Tbsp lime or lemon juice
PEPPER SAUCE
1 pkg dried guajillo chiles (commonly sold in markets in the southwest)
4 clove garlic, whole
2-3 c water
pinch salt
TOPPING OPTIONS
sliced avocado
chopped cilantro
crushed lime flavored tortilla chips

Steps:

  • 1. Pork and broth: put pork chops in a large pan and cover with water. toss in the onion, celery, garlic, boulion cubes, oregano and bay leaves and simmer for a few hours until they are tender enough to pull off the bone. remove the chops and cool on a plate. While the chops cool, pour the broth through a mesh strainer to remove and discard all the pieces of onion, celery and bay leaves, then return broth to the same pot. Remove the pork from the bones when cool and shred the meat by hand, returning to the pot. Drain and add 2 30 oz cans of hominy to the pot. Place on a low simmer.
  • 2. Chile Sauce: Guajillo chiles are NOT spicy at all, but bring a wonderful and earthy flavor to this soup when added in this way. To make this sauce, bring garlic, 1 tsp salt, and the whole bag of chiles to a boil and reduce to a simmer. Let simmer for about an hour. If the water boils down too much, add more water as necessary to keep the peppers covered. then turn off the heat to cool a little. When slightly cooled, put the peppers, garlic and about half of the sauce in a food processor and puree. After you add the pork back to the pork broth, put a strainer over the pot and pour the pureed chile mix into the strainer and push it through with a rubber spatula. You are removing the bits of skin and seeds that remain, and the puree of chile will drop through into the soup. If there is additional liquid from the boiled chiles pour this through as well so that the flavors are not lost ... this is filled with wonderful flavor that should not be lost!
  • 3. after the chile sauce is added, simmer the soup for about a half hour. 5 minutes before serving, add a tablespoon of lemon or lime juice to the pot, taste for seasoning and add salt if necessary.
  • 4. Spoon into a bowl and serve. Put the toppings in bowls/plates on the table, and let your guests use the toppings as they please.

1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
1 cup honey
¼ cup brown sugar
¼ cup soy sauce
2 teaspoons chopped garlic
2 tablespoons butter
¼ teaspoon ground ginger
1 dash cayenne pepper, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Season pork chops with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat. Brown pork chops 3 to 4 minutes per side. Transfer to the prepared baking dish.
  • Whisk honey, brown sugar, soy sauce, garlic, and butter together in a bowl and pour over the pork chops in the baking dish.

1/4 cup KRAFT Real Mayo Mayonnaise
20 round buttery crackers, crushed
1 tsp. chipotle chile pepper powder, divided
6 boneless pork chops (1-1/2 lb.)
2 Tbsp. KRAFT Zesty Italian Dressing
1 can (29 oz.) hominy, drained
1 cup grape tomatoes, cut in half
2 green onions, chopped, divided
juice from 1 lime

Steps:

  • Mix mayo, cracker crumbs and 1/2 tsp. of the chile powder; set aside.
  • Spray large skillet with cooking spray. Heat on medium-high heat. Add chops; cook 3 to 4 min. on each side or until browned on both sides and cooked through (160ºF). Meanwhile, heat dressing in medium skillet on medium heat. Add hominy; cook 5 min., stirring constantly. Add tomatoes and remaining 1/2 tsp. chile powder; cook 2 min. or until heated through, stirring occasionally. Remove from heat. Stir in half of the onions and the lime juice.
  • Spread chops with mayo mixture; sprinkle with remaining onions. Serve with the hominy mixture.

The original recipe was from cooks.com. Posted in response to a request in the forums. I rewrote the recipe to clarify the instructions. I would omit the salt as the soup and hominy should provide enough.

3 tablespoons butter
4 pork chops
3 tablespoons minced onions
3 tablespoons minced green peppers
1 (29 ounce) can hominy, drained
1 (10 3/4 ounce) can cream of mushroom soup
1/3 cup milk
1/4 teaspoon salt (to taste)

Steps:

  • Place butter in large, oven-safe skillet and heat until melted. Add the chops and brown them quickly. Remove to a platter.
  • Add the onion and green pepper to the skillet and saute until they start to brown.
  • Blend together remaining ingredients in skillet with the drippings and veggies.
  • Return the chops and any accumulated juices to the skillet, placing on top of the veggies mix.
  • Bake covered at 350 degrees for 1 hour.
  • Remove cover and bake 15 minutes longer.

7 cloves garlic (1 finely grated, 6 smashed)
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
4 bone-in, center-cut pork chops (3/4 to 1 inch thick; 10 ounces each)
Kosher salt and freshly ground pepper
1 15-ounce can white hominy, drained
1 10-ounce bag trimmed green beans, halved crosswise
1 4-ounce jar chopped or sliced pimientos, drained
1/2 cup low-sodium chicken broth
2 tablespoons unsalted butter, cut into pieces
1 tablespoon sherry vinegar

Steps:

  • Preheat the broiler. Mix 1 tablespoon olive oil with the grated garlic, oregano and paprika in a small bowl. Rub all over the pork chops on a rimmed baking sheet; season with salt and pepper.
  • Toss the hominy, green beans, pimientos and smashed garlic with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Scatter around the pork chops. Pour the chicken broth over the hominy mixture, then dot with the butter.
  • Transfer the baking sheet to the broiler and cook, rotating the pan and stirring the hominy mixture halfway through, until a thermometer inserted into the pork registers 145˚ F, 9 to 12 minutes. Remove the pork chops to plates.
  • Stir the hominy mixture and return to the broiler until some of the liquid is reduced and the green beans are charred, 1 to 2 more minutes. Stir in the vinegar, season with salt and add to the plates.

1 cup white wine
3 1/2 cups water
1 cup white cornmeal, plus 1 cup for dredging the croutons

3 cups canola oil
1 cup grated Parmesan cheese
1 cup grated Asiago cheese
1 tablespoon flour
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
Salt and freshly ground pepper
1 teaspoon pureed canned chipotles
Few dashes Worcestershire
Few drops hot pepper sauce
1/4 cup red wine vinegar
1 teaspoon capers
4 anchovy fillets
8 cloves garlic, roasted
3/4 cups olive oil
5 cups romaine lettuce, torn into bite sized pieces
4 (1 1/2-inch) thick center-cut loin pork chops, with bone

Steps:

  • Hominy Croutons:
  • Heat oil in a small saute pan. Cook onions and garlic until soft. Add wine and reduce by half. Place the water in a medium saucepan and add 2 tablespoons of salt, bring to a boil. Slowly whisk in the cornmeal and cook for, 15 to 20 minutes. Season with salt and pepper and spread into a buttered 11 by 17 inch baking sheet. Chill in the refrigerator for at least 1 hour. Heat the oil in a cast iron skillet or a deep fry to 350 degrees F. Cut the polenta into 1/2-inch squares. Dredge lightly in cornmeal and fry in batches until golden brown.
  • Parmesan Crisps:
  • Heat a large saute pan over medium heat. Combine the cheese and flour in a medium bowl. Sprinkle 2 tablespoons of the cheese into the pan to form a 4-inch circle. Cook until the cheese is somewhat melted but not firm. Using a spatula, turn the cheese over and cook until firm. Drape the crisp over a large rolling pin until cool. Repeat.
  • Salad:
  • Put all ingredients except oil in a blender and blend until smooth. Slowly add the oil and season with salt and pepper. Place the romaine in a large bowl and toss with some of the dressing. Divide among 4 plates. Scatter croutons around and place a Parmesan crisp in the center of the salad.
  • Pork:
  • Season pork with salt and pepper on both sides. Heat a few tablespoons of oil in a large saute pan until almost smoking. Cook the pork for 3 to 4 minutes on 1 side or until golden brown, turn over, reduce heat to medium and continue cooking to medium doneness. Remove to a plate and keep warm. Pour off all but 2 tablespoons of the fat. Add the garlic and onions and cook until soft. Add the wine and cook until reduced by half. Add the stock and cook to a sauce consistency. Whisk in the mustards and thyme and season with salt and pepper to taste.

1 1/4 pounds boneless pork shoulder, trimmed and cut into 4-inch pieces
1 medium white onion, chopped
4 garlic cloves, minced
2 tablespoons chili powder
4 cups chicken broth, divided
2 cans (15 ounces) hominy, drained and rinsed
Diced avocado and lime wedges, for serving

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Season pork with salt and cook until pieces are browned on all sides, about 8 minutes. Transfer to a 5-to-6-quart slow cooker.
  • To the skillet, add remaining tablespoon oil, the onion, garlic, and chili powder and saute until soft, 4 minutes. Add 2 cups broth and cook, stirring and scraping up browned bits with a wooden spoon. Transfer to slow cooker. Add remaining 2 cups broth to slow cooker, cover, and cook on high until meat is very tender, 4 hours (or 8 hours on low).
  • Using two forks, shred pork. Stir in hominy. Season to taste with salt. Serve with avocado and lime.

1 (2 pound) pork roast, diced
1 tablespoon ground cumin
salt and pepper
1 tablespoon olive oil
2 (15.5 ounce) cans white hominy
20 dried chile de arbol peppers
water
1 ¼ cups finely chopped onion
1 teaspoon minced garlic
12 corn tortillas, warmed
2 limes, quartered
1 bunch fresh cilantro, chopped
1 ½ cups shredded cabbage

Steps:

  • Heat oil in a large skillet over medium heat; add diced pork, cumin, and salt and pepper to taste. Cook, stirring frequently, until evenly browned.
  • Transfer pork to a large pot. Stir in hominy and 3 cups water. Cook over medium heat for 1 hour.
  • While pork and hominy are cooking, place chiles in a small saucepan with 2 cups water. Boil for 45 minutes, covered. Drain, and remove stems. Place chiles in a blender with 1/4 cup water, onion, and garlic. Blend until smooth (you may still see seeds). Set aside.
  • Serve pork and hominy soup in bowls, garnished with lime juice, cilantro, cabbage. For spicy soup, stir one teaspoon of chile into each bowl of soup.
