MANDARIN ALMOND SALAD



Mandarin Almond Salad image

Another Mandarin Almond Salad. Only slightly different from the one Inez posted. Can't go wrong with either one. This is good stuff!

1 head romaine lettuce, chopped,washed,and dried
2 (11 ounce) cans mandarin oranges, drained
6 long stem green onions, finely chopped
1/2 cup sliced almonds
2 tablespoons sugar
1/4 cup red wine vinegar
1/2 cup olive oil
1 tablespoon sugar
1/8 teaspoon red pepper flakes
fresh ground black pepper

Steps:

  • In a large bowl, combine the Romaine, drained oranges, and chopped onions.
  • Heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.
  • Turn onto plate and cool for 10 minutes.
  • Combine remaining ingredients in a jar with a tight fitting lid; shake vigorously.
  • Pour salad dressing over lettuce mixture; toss.
  • Sprinkle with sugared almonds.

¾ cup vegetable oil
1 tablespoon honey
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped green onion
1 large head romaine lettuce, torn into bite-size pieces
3 oranges, peeled and thinly sliced

Steps:

  • In a small container with a tight-fitting lid, combine the vinegar, oil, honey, salt, pepper and green onion. Close the lid, and shake vigorously to blend.
  • Place the romaine lettuce into a large serving bowl. Sprinkle with dressing and toss to coat. Add orange slices and toss gently. Serve immediately.

2 tablespoons sugar
1/2 cup sliced almonds
4 cups torn iceberg lettuce
4 cups torn romaine
1 can (11 ounces) mandarin oranges, drained
1 large ripe avocado, peeled and cubed
1/2 cup diced celery
2 green onions, sliced
DRESSING:
1/4 cup canola oil
2 tablespoons sugar
2 tablespoons cider vinegar
2 teaspoons minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small skillet over medium-low heat, cook sugar, without stirring for 12-14 minutes or until melted. Add almonds; stir quickly to coat. Remove from the heat; pour onto waxed paper to cool., In a large serving bowl, combine the lettuce, romaine, oranges, avocado, celery, onions and almonds. In a small bowl, whisk the dressing ingredients. Pour over salad; toss gently to coat.

This is a pretty simple salad. Dressing keeps forever and makes enough for 3 or 4 large salads. I keep toasted almonds on hand for this now. Prep time does not include chill time for dressing. If I do not have any onhand, I try to make it the night before.

1/4 cup white vinegar
1/2 cup white sugar
1 cup olive oil or 1 cup canola oil (I use an olive/canola mix)
2 tablespoons water
1 teaspoon salt

1/2 small red onion, minced
2 heads romaine lettuce, cut into 1 inch pieces
1/2 small red onion, sliced and separated into rings
2 oranges or 2 -3 clementines, peeled and sectioned or cut into slices (See *)
3/4 cup slivered toasted almond

Steps:

  • Combine vinegar, sugar, water, oil, salt, mustard and minced onion in a screw top jar and shake to combine.
  • Refrigerate to meld flavours.
  • Combine romaine, onion rings and oranges.
  • Lightly toss with just enough dressing to coat.
  • Garnish with toasted almonds.

6 slices bacon
⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil
1 teaspoon poppy seeds
10 cups torn romaine lettuce leaves
1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  • To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

2 green onions, chopped
1 head romaine lettuce
1 cup mandarin orange, drained
1 tablespoon sugar
1/2 teaspoon tarragon, dried
1/3 cup vegetable oil
1/8 teaspoon Tabasco sauce
1/4 cup white vinegar
1 egg yolk

Steps:

  • Shaking constantly, toast almonds in skillet over low heat until golden brown (about 5 minutes).
  • Wash and dry lettuce.
  • Tear into bite size pieces.
  • Place with green onions and mandarin oranges in large salad bowl.
  • Dressing: Combine all ingredients but egg and vinegar.
  • Add in thin stream and process till well blended.
  • Serves 6.
  • MAKES: 1 cup dressing.
  • Just before serving, toss well.
  • Leftover dressing keeps up to 1 week in fridge.
