3 tablespoons extra-virgin olive oil
1 garlic clove, smashed and peeled
1 small celery stalk, chopped
Pinch of red-pepper flakes
2 heads romaine lettuce, trimmed and cut into 1-inch-wide strips (about 10 cups)
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a nonstick skillet over medium heat. Add garlic, celery, and red-pepper flakes; saute until celery is softened and golden, about 5 minutes.
  • Add lettuce, pressing it down to fit. Season with salt and pepper. Cover; cook, tossing occasionally, until lettuce is completely wilted and liquid has evaporated, 10 to 12 minutes.

3 plum tomatoes, seeded and chopped
1 cup (4 ounces) crumbled feta cheese
1 cup chopped seeded cucumber
1/2 cup Greek olives, chopped
2 tablespoons minced fresh parsley
2 tablespoons minced fresh cilantro
3 tablespoons lemon juice
2 tablespoons olive oil
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the first seven ingredients. In a small bowl, whisk the remaining ingredients. Drizzle over salad; toss to coat. Serve immediately.

1 large romaine lettuce (ragged outer leaves discarded)
1 cucumber, peeled, seeded and julienned (any type)
4 large celery ribs, trimmed and julienned
20 fresh cilantro stems, leaves only
1/2 cup olive oil
1/4 cup cider vinegar
1/2 small white onion, finely chopped
1 teaspoon salt (to taste)
fresh ground black pepper

Steps:

  • Have ready a large bowl of ice water.
  • Rinse the lettuce under cold running water, tear into bite-sized pieces, and let stand in the ice water to crisp for 10-15 minutes. Drain well and dry very thoroughly in a salad spinner.
  • In a salad bowl, combine the lettuce, cucumber, and celery.
  • In a blender, combine the cilantro and olive oil; process to a puree.
  • Add the remaining ingredients and blend until smooth.
  • Toss with the salad and serve.

This salad is one of those recipes that's so flexible, you can make it what you want. If you have extra veggies to grill, add them to this salad. Grill some chicken to make an awesome chicken Ceasar with grilled romaine!

2 medium heads romaine lettuce (, cut lengthwise into wedges)
olive oil ( for brushing the romaine lettuce)
1/2 cup crumbled or grated cheese ((choose your favorite!))
lemon wedges for serving and squeezing over salad
2 cloves garlic (, crushed or fine mince)
3 Tablespoons olive oil ( for the dressing)
Zest of 1 fresh lemon
2 Tablespoons fresh lemon juice
1 Tablespoon balsamic vinegar
1/2 teaspoon dijon mustard
1 teaspoon soy sauce ((use Tamari for Gluten Free))
1 teaspoon brown sugar
1/2 teaspoon paprika
1/2 teaspoon kosher salt (, or to taste)
black pepper ( , to taste)

Steps:

  • Make the Dressing: Combine dressing ingredients (garlic, olive oil, lemon zest, lemon juice, balsamic, mustard, soy sauce, brown sugar, paprika, salt and black pepper) in mason jar. Close the lid and shake ingredients together until well combined. Or combine all ingredients together in medium bowl and whisk until combined. Set aside.
  • Heat the grill or bbq to medium-high to high heat (depending on grill's heat intensity). Scrape the grill grates to make sure they are clean.
  • Grill Romaine: Lightly coat romaine lettuce head with oil. Grill the lettuce until they're individually cooked and slightly charred.
  • Allow lettuce to cool slightly. Lay romaine on large platter, drizzle dressing on top and sprinkle with cheese. Serve with lemon wedges and enjoy!

Rinse Romaine lettuce and spin to dry. Chop ingredients. Toss ingredients. Add Romaine lettuce, cucumber, tomatoes, kalamata olives, red onion and Feta cheese to a large bowl and toss. Add dressing. Drizzle dressing along the outer edge of the salad and toss lightly. Pouring dressing right over greens can weigh them down a bit.
