Time 4h25m

Yield 6

Number Of Ingredients 13

3 cups all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
2 tablespoons shortening
1 cup ice water
1 (4 pound) whole chicken, cut into 8 pieces
1 tablespoon seasoning salt, or to taste
3 ½ quarts water
½ small onion, chopped
2 stalks celery, chopped
¼ cup margarine
salt and pepper to taste
1 teaspoon poultry seasoning

Steps:

  • In a large bowl, sift flour, baking soda and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 2 hours or overnight.
  • Remove the skin from the breast, thigh and back of the chicken, but leave it on the legs and wings. Season chicken with seasoning salt, and place in a large stock pot. Pour in water. Add onion, celery and margarine. Bring to a boil, then reduce heat to simmer. Cook for about 1 1/2 hours, until chicken falls off the bone.
  • On a lightly floured surface, roll one ball of dough to about 1/8 inch thick. Cut into 2 inch squares. Drop into simmering broth, and let cook for about 2 minutes. Stir gently to prevent sticking; add more water if needed. Season broth while dumplings are cooking with salt, pepper and poultry seasoning. Simmer for about 15 minutes, or until dumplings are cooked through.

Time 1h50m

Yield 6

Number Of Ingredients 13

6 chicken breast halves
4 cups water, or as needed to cover
salt and ground black pepper to taste
1 teaspoon dried sage
1 cup chopped celery
1 teaspoon onion powder
1 teaspoon garlic powder
1 ¼ cups all-purpose flour, divided
1 cup whole wheat flour
½ teaspoon salt
2 ½ teaspoons baking powder
1 ¼ cups heavy cream
1 tablespoon chopped parsley

Steps:

  • Place the chicken breasts into a large soup pot, cover with water, and sprinkle in the salt, black pepper, and sage. Bring to a boil over medium heat, then reduce heat and simmer until the chicken is no longer pink inside, about 30 minutes. Remove the chicken to a bowl, and let cool; shred chicken when cooled.
  • While chicken is cooling, bring the chicken broth left in the pot back to a boil over medium heat, and stir in the celery, onion powder, and garlic powder. Reduce heat to a simmer, and cook until the celery is tender, about 20 minutes.
  • Meanwhile, whisk 1 cup of all-purpose flour, the whole wheat flour, salt, and baking powder together in a mixing bowl. Stir in the cream to make a dough. Sprinkle a work surface with the remaining 1/4 cup of flour, and roll the dough out about 1/4-inch thick. Using a pizza cutter, cut the dough into 1 1/2 inch squares. Toss the dumplings in the flour on the work surface.
  • Drop the dumplings, a few at a time, into the simmering broth. Stir frequently to keep them from sticking to the bottom; allow to simmer until the dumplings puff up and the broth thickens, about 30 minutes; stir in the cooked shredded chicken and parsley. Bring back to a boil, and serve hot in bowls.

CHICKEN AND DUMPLINGS (ROLLED DUMPLINGS)

Chicken and Dumplings (Rolled Dumplings) image

When my Grandma King was teaching me to make chicken and dumplings, I tried to write down the recipe. -- rolls eyes--. She never measured anything, I was trying to guestimate how much she was using, until we came to the eggs....... She says to use 3, 6, 9, or 12 eggs. I shook my head, and asked her "well which is it?", she says in her southern voice, "well it depends". pause.. "Well granny, how do you DECIDE how many eggs to use?" She looks at me and grinned, and says in a sweet southern voice, "Well, it depends on how many eggs I have"... So there you go.

Time 1h30m

Yield 6 Serves a Family, 6 serving(s)

Number Of Ingredients 10

1 whole chicken, cut into serving pieces
8 -10 cups water, as needed
1 teaspoon salt
2 teaspoons pepper (to taste)
3 tablespoons flour
1/4 cup hot water
2 1/2 cups flour
1 teaspoon salt
1 (12 ounce) can evaporated milk, divided
3 large eggs (3, 6,9 or 12 eggs)

Steps:

  • Add chicken, water, and salt to a 6 quart Dutch oven or stock pot , bring to a boil, then lower heat to medium-high and cook until chicken is well done. (about 40 minutes).
  • Remove chicken from pot, and let cool a few minutes. Remove skin and any excess fat and discard. Remove bones from breasts and chop meat into bite size pieces. Return chicken back to pot. Add pepper and more water if needed. Return to a boil.
  • While chicken is cooking, make dumplings.
  • Mix flour and salt in a large mixing bowl. Add eggs and 1/4 cup evaporated milk and mix dumpling ingredients just enough to form a stiff dough. Add more flour if necessary.
  • If using more than 3 eggs you will need to increase the flour and salt accordingly. Otherwise dough will be too wet to work with.
  • Pour out onto a floured surface. Knead dough 1 or 2 times, being careful not to overwork the dough. The dough becomes tough very quickly, so handle as little as possible. Dust dough and rolling pin with flour. Roll dough to about 1/8 inch thickness.
  • Cut into strips about 3/4 inch by 3 inches with a floured knife. Let rest until ready to add to boiling chicken. Add dumplings to boiling broth a few pieces at a time, so that dumplings don't stick to each other. Add remaining evaporated milk to pot.
  • Cook 15 minutes. If broth is too runny, dissolve 3 Tbsp flour into 1/4 cup hot water until there are no lumps. Add to dumplings and cook another 5 minutes. Serve.

ROLLED CHICKEN N DUMPLINS

Rolled Chicken N Dumplins image

This recipes calls for bacon grease as the fat in the dumplins, and are the best I've ever had. They are not doughy or sticky. It was passed to me by my mom and she got it from a friend. I use split chicken breasts, just because I prefer white meat. Roll out dumplings while the chicken is cooking. I use a 6 qt pressure cooker.

Categories     Stocks

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 11

2 -3 lbs chicken (cut up)
shortening or other fat
water
salt & pepper
2 -4 chicken bouillon cubes
2 cups flour
2 tablespoons baking powder
1 egg (slightly beaten)
1 teaspoon salt
2 tablespoons bacon grease
milk, as needed

Steps:

  • Brown chicken in preheated shortening in bottom of pressure cooker until it can be bumped loose (both sides).
  • Remove chicken and pour a little water into cooker and loosen any of the pieces of skin stuck to the bottom.
  • Replace chicken and cover with water up to about an inch or so from the rim of the pot and add salt & pepper and bouillon cubes.
  • Put lid & seal on pressure cooker and follow cooker's instructions.
  • Cook chicken 20-30 minutes (the chicken should be falling off the bone).
  • Prepare dumplings-mix flour, powder, salt, egg, and bacon grease-dough will need milk-add milk a tablespoon (or less) at a time until soft dough ball forms.
  • Splitting the dough in half makes it easier to manage.
  • Roll dough onto smooth flour covered surface (I use my kitchen table) as thin as you can before it starts splitting.
  • Cut the dough into whatever size you like-they will grown some (I make them about 1 x 2 inches & cut long rows first).
  • Place them on a plate to wait to be added to chicken stock.
  • Remove chicken and any skin or bones that might have fallen off from the stock.
  • Let chicken cool in a bowl until you can handle it safely and remove all the meat from the bones and tear it into small enough pieces to serve.
  • Bring chicken stock to a low steady boil.
  • Separate as you add dumplins in a few at a time to prevent from sticking together.
  • Stir dumplings a few times in between adding to prevent them from sticking.
  • Cook dumplings at least 10 minutes to your texture taste. I usually cook them longer so as not to have doughy dumplings.
  • Add chicken pieces and bring back to a boil, then remove from heat and serve.
  • There is no need to add flour to the stock, the flour from the dough thickens it perfectly.
