Enchiladas Rojas is one of those dishes that are cooked differently in every home. Each cook has his/her own recipe, so this is my own version based on my mom's way of cooking them. In my hometown, it is common to have enchiladas for breakfast or brunch.

4 guajillo peppers (seeds removed.)
4 ancho peppers (seeds removed.)
2 garlic cloves chopped
1/4 teaspoon Mexican oregano
Salt and pepper to taste
12 corn tortillas
2 cups of shredded beef (pork or chicken (optional))
1 1/2 cup of fresh cheese crumble
1/2 cup of white onion finely chopped
1/3 cup of vegetable oil
2 cups of pre-cooked diced potatoes and 2 cups of pre-cook diced carrots.
Finely shredded lettuce or cabbage and radishes

Steps:

  • Let's start first with the enchilada sauce. Slightly roast the peppers in a hot griddle, pressing them flat with the help of a spatula. Make sure NOT to burn them. This step takes a few seconds on each side of the peppers.
  • Once roasted, place them in a saucepan with water and turn the heat to medium and simmer for about 15 minutes or when they look soft.
  • Remove saucepan from stove and let them cool for another 10-15 minutes. The pepper skins should look soft.
  • After the resting period, drain the peppers and place in the blender along with the garlic cloves. Add 1/2 cup of clean water and blend until you have a smooth sauce. If necessary, strain the sauce into a large bowl using a fine strainer. Season with the oregano, salt, and pepper, and set aside.
  • Preheat your oven to 350 degrees, just to keep the red enchiladas warm while you finish assembling them. Add the 2 tablespoons of vegetable oil in a large skillet over medium heat. Add oil little by little as needed. To much oil will get a soggy tortilla.
  • Dip the tortilla into the enchilada sauce to lightly coat each side.
  • Place it in the Frying Comal-pan or skillet and briefly fry a few seconds on both sides. Add more vegetable oil to the skillet as needed. Place fried tortillas in a dish while you make the rest of the tortillas to keep warm in the oven.
  • To assemble the red enchiladas, first, place the filling in the center of the tortilla and fold it. Sometimes I place a meat filling into the center of the tortilla and then roll it, like in the pictures above.
  • Sprinkle the enchiladas with the cheese and onion. Add the garnish of your choice and enjoy!
  • If you decide to add the potatoes and carrots as a garnish: Peel potatoes and carrots, cut into cubes and boil until almost tender but still firm. Then drain and cool.
  • Use the same frying pan where you fried the red enchiladas to lightly fry the potatoes, adding a little more oil. The potatoes and carrots will be coated with some of the sauce sticking to the frying pan. Season with salt and garnish with cheese.

Don't get all hung up on the exact array of dried red chiles here. The weight is more important, and even that doesn't have to be exact. And as with all enchiladas, any meat will work here, or if you are a vegetarian, mushrooms are a good choice.

½ pound dried red chiles ((New Mexican, ancho, guajillo, etc))
3 tablespoons lard or cooking oil
1 large white onion, (cut in quarters)
4 garlic cloves, (whole and unpeeled)
2 teaspoons cumin
2 teaspoons oregano, (Mexican if possible)
1 quart stock, (preferably homemade)
Salt, (smoked salt if you have it)
Black pepper to taste
1 pound diced meat
Salt, (smoked salt if you have it)
About 1/2 cup red chile sauce ((see above))
2 tablespoons chopped fresh sage
12 ounces shredded Monterey Jack and/or cheddar cheese ((5 ounces for the filling, the rest as topping))
1 cup minced white onion
Fifteen 6-inch tortillas

Steps:

  • Prep the chile sauce. Start by taking the stems off and opening the chiles to shake out the seeds. Flatten them as best you can. Heat a cast iron skillet or better yet, a Mexican comal over high heat. When it is blazing hot, toast the chiles. Press them down with a spatula for just a couple seconds: When they blister, flip them and do the other side. Remove to a bowl.
  • When all the chiles have been toasted, char the quartered onion and the garlic cloves on the comal or skillet. You want some blackening. The garlic cloves will blacken first, so watch them.
  • Now that you have everything smoky and charred, tear the chiles in pieces. Chop the onion. Peel the garlic. Heat the lard or vegetable oil in a pot over medium-high heat. Add the chiles, onions and garlic and saute for a minute or two. Pour in the stock, add the cumin and oregano and bring to a simmer. Add salt to taste and simmer gently until the chiles are soft, about 20 minutes.
  • Puree the sauce in a blender. This sauce can be made up to a week in advance and stored in the fridge.
  • Make the filling. Cut the meat into pieces about the size of your fingernail. Salt well. Mix with about 1/4 cup of the red chile sauce, the chopped sage as well as about 5 ounces of cheese and the minced white onion.
  • Prep the tortillas. Heat the tortillas on a comal or other heavy skillet until they blacken a little. Then put them in a tortilla warmer, or stack on a plate and put a bowl over them. Let them steam a few minutes before building the enchiladas.
  • Build the enchiladas. Pour a little red chile sauce into a casserole dish. Dip a tortilla in the red chile sauce briefly and shake off the excess. Fill a tortilla with a little of the filling and roll it up. Place seam-side down on the casserole. Repeat until you're done. You should get about 15 tortillas.
  • Pour more red chile sauce over the enchiladas and top with lots of the shredded cheese. Bake at 350°F for 25 minutes and serve.

This is the tastiest red enchilada sauce I have ever had! I could literally just eat it with a spoon. The secret is cocoa powder, do not miss that step! I found it on the Texas Monthly cooking forum. A lot of times I double the recipe since its so good. Serve it over enchiladas, burritos, or grab a straw! Its scrumptious!!

3 tablespoons flour
1 tablespoon chicken bouillon
1 teaspoon cocoa powder
1/2 teaspoon garlic salt

Steps:

  • Combine all dry ingredients in a small bowl.
  • Stirring constantly, slowly add enough of the water to make a thin paste.
  • Pour into pan and add rest of water.
  • Cook over medium heat, stirring constantly, until mixture thickens.
  • Stir in tomato sauce.
  • Use in your favorite enchilada recipe.
  • The amounts on the ingredients are very flexible.
  • For instance, if I am feeding my kids who do not like"spicy", I will halve the chili powder and double the tomato sauce.
  • Experiment to suit your taste, but don't leave out the cocoa.

Recipe for an easy red enchilada sauce, also known as salsa roja or mole rojo, prepared with dried ancho and pasilla chiles. Use it as a base for Pozole too.

8 ancho chiles (mild fruity dried chili pods)
4 pasilla chiles (mild fruity dried chili pods)
1 medium onion quartered
2 plum tomatoes
3 cloves garlic
1/2 teaspoon Mexican oregano
1/2 teaspoon marjoram
2 tablespoons cooking oil
salt to taste

Steps:

  • Toast the chiles in a hot pan until fragrant. (about 10 to 15 seconds per side)
  • Allow chiles to cool and then remove stems, seeds, and veins.
  • Char the onion, tomatoes, and garlic in a hot pan.
  • Place the chiles, onion, tomatoes, garlic oregano and marjoram in a pot with just enough water until the ingredients are almost covered.
  • Bring to a boil and then reduce the heat to low.
  • Simmer for 15 minutes to reconstitute the chiles and soften the veggies.
  • Blend the chiles, onion, tomatoes, garlic, oregano marjoram, and the soaking water until smooth. It usually takes about a minute.
  • Add water little by little if necessary to blend. You may have to blend in two batches
  • Strain the mixture.
  • Add two tablespoons of cooking oil to a hot pan add the strained sauce to fry it.
  • Reduce the heat and simmer for 30 minutes until the sauce has thickened.
  • Add salt to taste.
  • Allow the sauce to sit for at least 2 hours so that the flavors meld.
  • Warm the sauce before serving.

These Enchiladas Rojas are an authentic recipe made with lightly fried corn tortillas dipped in a delicious red sauce. Add your favorite filling, garnish with cheese, crema, onion and lettuce for the final touch.

8 guajillo or new mexico peppers
1 ancho chile
¼ of a large yellow or red onion
1 large garlic clove
1 teaspoon kosher salt
½ teaspoon fresh ground black pepper
2 cups stock (vegetable, beef, or chicken). Or use water plus 1 bullion cube (vegetable, beef or chicken).
1 tablespoon vegetable oil
1 8 oz can tomato sauce
3 cups enchilada sauce
14 corn tortillas
oil for frying the tortillas
2 to 3 cups queso fresco, or shredded beef or chicken
2 cups Shredded lettuce (romaine or iceberg)
1 cup queso fresco
sliced radishes

Steps:

  • Remove all seeds and stem from the peppers then rinse under cold water to remove any dust.
  • In a medium pot, add the chiles, onions and garlic clove. Add enough water to cover the chiles.
  • Cover and cook on medium heat for about 20 minutes or until very soft and pliable. Rest chiles in the water for another 10 to 15 minutes to cool off and finish hydrating the chiles.
  • Transfer chiles to a blender or food processor and add 2 cups broth. Puree for about 1 minute. Note: you can do this in two different batches if the blender isn't big enough for all the ingredients at once.
  • Strain the pureed chiles to remove the remaining seeds and skins (tip: push the chile mix with a spoon to get the most out of them).
  • In a large saucepan, heat the 1 tablespoon of oil. Add the pureed chiles and tomato sauce. Cook, stirring often for about 10 minutes. Season with salt and pepper according to taste.
  • Add about ¼ cup of oil to a small or medium skillet. Heat on medium-high heat. When the oil is very hot (but not smoky), add one tortilla at the time and cook each side for about 4 to 5 seconds or until tortilla is lightly fried (See notes section)
  • As you fry each tortilla, drain any excess oil by tapping it into the pan then place on a plate with a paper towel. Repeat with remaining tortillas and add more oil if necessary.
  • To assemble the enchiladas rojas, dip each tortilla into the warm sauce and place on the serving plates.
  • Fill with your favorite filling. In this case we're using crumbled queso fresco but you can use shredded chicken, beef, beans or your favorite cooked vegetables.
  • Either fold the tortilla like a taco or roll them as pictured below. I like to add a little more sauce on top for extra flavor.
  • Sprinkle with queso fresco and other toppings you choose. I like to squeeze some lime juice to balance all of the flavors.

•1 tablespoon unsalted butter or lard
•2 tablespoons all-purpose flour
•¼ cup ground pure mild red New Mexican chile powder
•2 cups broth (beef, chicken, or vegetable)
•1 clove garlic, minced
•Pinch each of ground or dried Mexican oregano and freshly ground cumin
•Salt (optional)

Steps:

  • In a heavy saucepan, melt the butter. Add the flour and cook, stirring, until the mixture turns slightly golden. Remove the pan from the cooking heat and stir in the chile powders. Stir in the stock. Continue stirring until the mixture becomes smooth. Add the garlic, oregano, and cumin and simmer for about 10 minutes. Taste and adjust the seasonings, adding salt, if desired. Notes Variation: Ground chuck, roast beef, pork, or poached chicken or turkey can be added when making enchiladas.

IRMA'S RED ENCHILADA SAUCE (SALSA DE CHILE ROJO)

I got this one from my friend, Rick Ramirez's Mom, Irma when I lived in Yuma in the early 1960's. I usually make a double batch and freeze the excess, 2 cups at a time in Sandwich size ziplock freezer bags. Cooking time includes steeping time for the chiles.

5 dried pasilla peppers
5 dried ancho chiles or 5 dried New Mexico chiles
2 cups boiling water
2 cups tomato sauce (My Crock Pot Italian Tomato Sauce)
2 garlic cloves, minced
1/4 cup oil
3/4 teaspoon kosher salt
1 teaspoon crumbled Mexican oregano
1/2 teaspoon whole cumin seed, grind fresh with oregano

Steps:

  • Preheat oven to 375°F.
  • Place chiles on a wire cooling rack on a baking sheet.
  • Roast 4-5 minutes, NO MORE THEY"LL TURN BITTER!
  • Let them cool to touch.
  • Cut tops off, split in two with a sharp knife.
  • Remove seeds and veins, the soft part that holds the seeds.
  • Cover with boiling water, let steep an hour.
  • Remove each half to a platter and scrape the pulp with the edge of a spoon. After handling chiles wash your hands with warm water and baking soda to nutralize the chile juice. It's an acid. You can safely wash your eyes too.
  • Combine all ingredients including the water in a sauce pan.
  • Bring to a simmer, simmer for 15 minutes.
  • Stirring occasionly.

When you go out for Mexican food at your favorite little place, and your food's covered with that delicious red sauce, and you wish you could make it at home? Now you can! This is so simple to make! I found this recipe in one of my gazillion cookbooks. I decided to give it a try. I'd been using the same red sauce for years, and loved it, so I'm not sure why I even tried this one. But am I glad I did!!! lol This recipe is mild, so should you want yours more spicy, then you'll want to use the hotter dried chiles. Either way, I'm sure you will love it. Don't be afraid of the dried chiles if this is your first attempt. It really is simple to do, and the end result will be so worth it. Where I buy my dried chiles, actually it's Albertson's, there's a rack in the specialty aisle, and there are cellophane bags hanging up. Usually, the bags have the type of chile and how spicy hot it is. So, that should help you out some. If you can't find any, zmail me and I'll help you. This freezes well.

8 ancho chilies, dried
3 1/2 cups warm water
1 medium onion, chopped
2 garlic cloves, chopped
1/4 cup vegetable oil
1 (8 ounce) can tomato sauce
1 tablespoon dried Mexican oregano (regular will do)
1 tablespoon cumin seed
1 teaspoon salt

Steps:

  • Soak chiles in warm water until softened, about 30 minutes. Drain; strain and reserve liquid. Remove stems and seeds and membranes from the chiles. Cook and stir onion and garlic in oil in a 2-qt. saucepan until onion is tender. Add chiles and 2 cups of the reserved liquid , the tomato sauce, oregano, cumin and salt. Simmer uncovered 20 minutes. Cool.
  • Transfer to blender container; cover and blend on low speed until smooth. Strain. Refrigerate sauce no longer than 10 days.
  • Note: I strain mine in a mesh strainer or colander. It takes a few minutes, but keep thinking of how great this is going to taste!

ENCHILADA ROJA SAUCE

1 (15 ounce) can tomato sauce
2 cups stock
1 T ground cumin
2 tsp garlic powder

  • 1. Heat oil, then add flour and chili powder and stir about 2 min. 2. Add remaining ingredients. Bring to boil, then reduce heat to low and simmer for 15 min.

3 lbs pork shoulder
12 cups water
2 cups chicken broth
1 tablespoon kosher salt
3 -5 garlic cloves, chopped
1 teaspoon dried Mexican oregano

2 -3 cups enchilada sauce, depending on how spicy you want it
2 (29 ounce) cans white hominy, drained and rinsed
1 medium onion, chopped (optional)
1 bunch cilantro, chopped (optional)
1 small cabbage, shredded (optional)
1 bunch radish, thinly sliced (optional)
2 -4 limes, cut into wedges (optional)
tostadas (optional)

Steps:

  • In a large pot combine pork shoulder, salt, garlic, and water. Bring to a boil, skim surface, and add oregano and chicken broth.
  • Reduce heat, cover and simmer until pork is tender, about 2 hours.
  • Meanwhile chop, shred, slice, and wedge limes, onion, cilantro, radish, and cabbage. Store in containers in fridge until time to serve.
  • When pork is tender remove from pot and let sit until cool enough to shred or just chop it into bite sized pieces.
  • Add rinsed hominy and bring to a boil.
  • Return shredded pork to pot,
  • Add enchilada sauce.
  • Adjust salt to taste.
  • Bring to a boil, reduce heat and simmer covered for 30 minutes.
  • Garnish with cabbage, cilantro, onions, radishes, toastadas, and fresh squeezed lime juice.
  • Enjoy!

10 dried pasilla, ancho or mexican chilies
1 c beef broth
1-2 tsp cumin
1-2 Tbsp cayenne pepper
1 Tbsp salt
1/2 medium white onions
2 clove garlic
1/2 tsp oregano, dried

Steps:

  • 1. Cut ends off of dried chilies, de-seed (if desired)
  • 2. Cut chilies into chucks and place in sauce pan with water just above the chilies. Slowly cook until chilies are very soft.
  • 3. Place chilies in blender, blend until smooth. (sauce will be thick) Put blended chilies in pan with remaining water and add the broth.
  • 4. Season to taste adding salt, and cayenne pepper to desired heat level. Simmer for about 1/2-1 hour.
  • 5. Once sauce is put together; place 2 tbsp oil in pan. Heat to very hot, slowly poor sauce into pan and fry it...Yes fry it,. Simmer for about 1/2 on low and let rest for 2 hours before serving to allow all ingredients to mess together.

MENUDO ROJO (RED MENUDO)

3 gallons water, divided
2 ½ pounds beef tripe, cut into 1-inch pieces
6 cloves garlic, finely chopped
1 large white onion, finely chopped
1 ½ tablespoons salt
1 tablespoon ground black pepper
1 ½ tablespoons dried oregano
2 tablespoons ground red pepper
5 de arbol chile peppers
6 japones chile peppers, seeds removed
6 cups canned white or yellow hominy, drained
½ white onion, chopped
¼ cup chopped fresh cilantro
2 limes, juiced

Steps:

  • In a large pot, bring 1 gallon water to a boil. Place tripe in the pot, reduce heat, and simmer 2 hours. Periodically skim off fat with a spoon. Drain water, reduce heat, and pour in a fresh gallon of water. Continue to simmer tripe for 2 hours; drain.
  • Pour remaining 1 gallon water into the pot with tripe, and bring to a boil. Stir in garlic and 1 white onion. Season with salt, pepper, oregano, and red pepper. Reduce heat, and simmer 1 hour.
  • Preheat the broiler.
  • Arrange the de arbol chile peppers on a baking sheet, and broil about 2 minutes, just until they begin to scorch. Remove from heat, slit lengthwise, and remove seeds. In a blender or food processor, blend the de arbol chile peppers and japones chile peppers until very finely chopped. Mix into the pot, and continue cooking 2 hours over low heat.
  • Mix the hominy into the pot. Continue cooking 1 hour. Serve with remaining onion, cilantro, and lime juice.
