2 cups Corn Chex
2 cups miniature pretzels
1 cup dry roasted peanuts
20 caramels, coarsely chopped
1 package (10 to 12 ounces) white baking chips

Steps:

  • In a large bowl, combine the first 4 ingredients. In a microwave, melt chips; stir until smooth. Pour over cereal mixture and toss to coat. , Immediately spread onto waxed paper-lined baking sheet; let stand until set, about 20 minutes. , Break into pieces. Store in an airtight container.

This recipe came from on of the summer help that Rogene worked with at the mine. This is also know as Rogene's Rave Reviews Coconut Cake.

18 3/4 ounces yellow cake mix
1 (3 ounce) package instant vanilla pudding
1 1/4 cups water
4 eggs
1/4 cup oil
2 cups coconut
1 cup chopped walnuts
4 tablespoons margarine
2 cups coconut
8 ounces cream cheese
2 teaspoons milk
3 1/2 cups powdered sugar
1/2 teaspoon vanilla

Steps:

  • Blend cake mix, pudding mix, water, eggs and oil in large bowl.
  • Beat for 4 minutes at medium speed.
  • Stir in coconut and nuts.
  • Pour into 3 greased and floured 9" cake pans.
  • Bake for 35 minutes at 350 degrees.
  • To make the frosting: Melt 2 tbsp butter in skillet, add coconut stirring constantly over low heat until golden brown.
  • Spread coconut on papertowels to cool.
  • Cream the other 2 tbsp butter with cream cheese, add milk, beat in powdered sugar, gradually.
  • Blend in vanilla.
  • Stir in 1 3/4 cup coconut.
  • Frost the cake and top with remaining coconut.

ROGENE'S BUTTERMILK PANCAKES

This are a breakfast staple in the Hill households ... so good. They make a nice thick pancake but if you want them a bit thinner just add more buttermilk. Basic instructions are included - I'm sure everyone knows how to cook a pancake - if not have toast with jelly. ;)

1 cup buttermilk
7/8 cup flour
1 egg
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
3 tablespoons oil

Steps:

  • Place all ingredients in a blender and whip.
  • Start with a medium hot frying pan. (Med hot means when you drop a few drops of water on griddle it should "dance" for a few seconds before evaporating.) Take pan off from heat source and spray with cooking spray, put back on heat, pour about a 1/4 to 1/2 cup of batter into pan. If the batter is thick just spread the top around to desired size and thickness with back of spoon. Cook until edges and/or top of pancake begins to look dry and flip. Cook on second side until golden brown.

1 (12 ounce) jar grape jelly
1 tablespoon lemon juice

Steps:

  • Combine hamburger with seasonings cornflakes and eggs.
  • Roll into small size balls.
  • Bake at 15 min on cookie sheets at 350*.
  • Combine ingredients for the sauce in chafing dish.
  • Add meatballs and simmer for 45 minute.

2 cups small pretzels, twists
1 cup dry roasted peanuts
20 caramels, coarsley chopped
2 cups white chocolate chips

Steps:

  • Spray a 13x9 inch baking pan with nonstick cooking spray.
  • Combine cereal, pretzels, peanuts and caramels in a large bowl.
  • Microwave morsels over med-high heat for 1 minute. Microwave additional 10-20 second intervals, stirring until smooth. Pour over cereal mixture, stir to coat evenly.
  • Spread the mixture into a prepared baking pan or on waxed paper. Let stand for 20-30 min or until firm. Break into bite size pieces.
