ROGALIKI (POLISH JAM-FILLED CRESCENTS)
Similar to Russian rugelach, rogaliki are a traditional Polish sweet, a mixture between a pastry and a cookie. You'll love the soft texture and jam filling. Try using different jams in the same batch to get a variety of flavors.

- Stir milk and yeast together in a bowl until smooth. Set aside until foamy, about 10 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine flour, butter, sour cream, sugar, eggs, and egg yolks in a large bowl. Stir in yeast mixture. Mix well using an electric mixer at first, then using your hands.
- Turn out dough onto a floured work surface and knead until smooth, adding more flour, 1 tablespoon at a time, if dough is sticking to your hands. Form dough into a long log and cut into 1 1/2-inch rounds. Cover rounds with a cloth.
- Roll each round of dough into a thin circle. Cut the circle into six triangles, as you would a pizza. Place 1 teaspoon jam at the wider end of each triangle, then roll up like a croissant. Place on the prepared baking sheet. Repeat until all the dough is used up.
- Bake in the preheated oven until rogaliki have risen and are golden brown, about 20 minutes. Remove from oven and cool completely, about 30 minutes.
- Place confectioners' sugar in a bowl and stir in water, 1 tablespoon at a time, until a drizzling consistency is reached. Drizzle icing over cooled rogaliki.

This is a Polish cookie my aunt used to make as a Thanksgiving holiday treat. Although I'm not Polish, I make them too, and serve them on a cold winter's night with hot coffee or tea.

- Preheat oven to 350 degrees F (175 degrees C).
- Cream together the butter and sugar until light and fluffy. Add the egg, vanilla, and almonds; mix a few seconds until well incorporated. Stir in the flour until a dough forms.
- Roll the dough into a rope 3/4-inch thick. Cut the rope into 3-inch long pieces. Shape the cookies by rolling each piece back and forth while pressing down gently with two fingers on each end until the piece is about 5-inches long. The dough piece should be plump in the center, and thinner on it's ends. Repeat with remaining cookies.
- Place the cookies onto a cookie sheet, bending the ends toward each other to form a crescent 'C' shape. Bake in preheated oven until the edges have turned golden brown, about 20 minutes. Dust immediately with powdered sugar, then cool completely on a wire rack.

- In a medium bowl mix egg yolks, philly cheese and baking powder using a hand held mixer. Carefully start adding the flour. When the mixture will not be mixing well, and will look like wood chips, put away the blending mixer and using your hands knead the dough.
- Create a roll and cover in foil and freeze for 15 minutes. At this time preheat the oven to 375.
- Take the dough out and separate into two. Roll and cut out 3 inch trangles.
- Make as many as you can and on centre of each put a small spoon of jam. Roll them into a croissant shape.
- Place the croissants onto a greased cookie sheet, and bake for 10-12 minutes or until golden.
- Repeat with the rest of the dough.
- When you take them out, put aside and sprinkle with powdered sugar on top.
- This makes about 3 batches of 20 cookies each.
- Total count about 60 cookies.

- In a bowl stir together the jam with the almond flour and set aside. To prepare the pastry combine the flour with the yeast and salt, stir thoroughly and place in the food processor bowl (use the pastry blade) along with the rest of the ingredients. Pulse until a dough forms. This should only take a minute or so.
- Place the dough on top of your work surface, knead in any remaining crumbs and form a log. Cut the dough into 3 equal parts then roll out one part (keeping the round shape) to a thickness of about 2-3 mm. Using a knife cut into 8 equal triangles and place approx. half a teaspoon of the jam mixture in the wider part of every triangle.
- To form the crescents fold the pastry over the filling (from the wide end) and enclose it by gently sticking together the edges of the pastry around the filling and then continue rolling (not too tight) until a crescent forms. Make sure the end is tucked under each crescent. Curl the 2 ends slightly forward.
- Dip the top of each crescent first in the egg whites mixture and then sugar. Arrange on top of your baking sheet lined with parchment, not too close together, and set aside for 30 minutes. In the meantime preheat the oven to 190 C/gas mark 5.

- Pour milk into a bowl, heat it in the microwave for 45 seconds. Stir milk with spoon and then sprinkle yeast over the milk. Mix the milk and yeast together and let the yeast dissolve. Stir it from time to time. Set aside until ready for it.
- Place softened butter and sugar into a mixer bowl; beat it on high for a minute. Scrape the sides of a bowl and beat it again for 30 seconds. Add eggs, pure vanilla extract, sea salt and sour cream. Mix it well on high mixing speed for couple of minutes. Scrape the sides of mixer bowl and mix it again for a minute. Add milk and yeast mixture.
- Mix the milk and butter mixture on medium for a minute. Scrape the sides of mixer bowl and mix it for a minute again. Add flour one cut at a time. After adding about half of the flour and reached pretty thick consistency, switch to a dough hook mixer attachment.
- After switching the mixing attachment to a dough hook, add ½ cup of flour at a time. You will need all 8 cups (960 g) of flour. The final product should be very smooth, not sticking to the mixer bowl or your hands. Transfer the dough to a dusted with flour working surface (I use large cutting board).

- Add sour cream and melted butter to the flour. I put the butter in a microwave for 40 sec for melting. Add a pinch of vanilla or vanilla extract to your taste. Mix well, the dough should be soft and shouldn’t stick to your hands.
- Divide the dough into 3 even balls. Cover them with a plastic wrap to prevent drying. You can put the balls into the fridge for at least 20-30 minutes. It will be easier to use it afterwards. I omitted this step to cut the cooking time and it went well.
- Prepare the filling by mixing the milled walnut (not too small so that to keep them crunchy), icing sugar and warm milk.

- Preheat the oven to a 350°F. Line a parchment paper with 2-3 baking sheets. Set aside. In a small bowl, combine and whisk 1 egg and 1 tbsp water – this will be your sealer to keep the cookie ends from unrolling. Set aside.
- In a large bowl, combine 1 cup sour cream and 1 tbsp instant yeast. Let it stand for 5 mins. Then add 2 sticks unsalted butter (sliced), 1/4 tsp salt and 3 cups flour (1 cup at a time; might need more). Using your hands, rub the butter with flour and mix all ingredients to turn into dough. Turn the dough onto lightly floured surface.
- Knead the dough until smooth, but not sticky. On a lightly floured surface, roll a portion of the dough out to about 2mm thick. Using pizza cutter, slice dough like you would slice baklava. Very diagonally, about 1 1/2” wide and 2” in length. (I use Wilton icing spatula to help me cut these equally). Remove dough scraps and save for next rolling. (Refrigerate the dough while you fill these). Place little amount of preserves in center of each cookie dough. Fold and gently press one side over the preserves. Tap egg wash at the other corner of the dough and roll that corner over the folded part. Gently press to seal underneath the cookie. (make sure the ends are underneath the cookie to prevent from opening during baking).
- Transfer cookies onto prepared baking sheet, 1” apart. Bake for 18-20 mins until lightly golden. Once baked, let the cookies rest for 5 minutes, then transfer them into big bowl with powdered sugar, removing any excess amount of preserves, if any (preserves will peel off easy). With a large spoon, gently stir cookies to coat with powdered sugar and transfer to a clean bowl or platter. Repeat steps for remaining dough until no dough is left. These stay delicious for up to a week, but they will be gone in hours!
