This recipe is made to accompany my Recipe #373203 and my Recipe #373114. They complement each other so well. But this is good as is, and is pretty quick to make. A nice sweet side dish. Recipe originally came from Aaron McCargo.

canola oil, enough to coat the bottom of the pan
1 ripe plantain
4 ounces butter
1/4 cup scallion, finely chopped
1/4 cup honey
1/4 cup parsley, finely chopped

Steps:

  • Preheat a medium frying pan and coat with canola oil.
  • Slice plantains on the bias, then saute until brown.
  • Mix in butter and scallions until butter is melted and scallions are softened.
  • Remove from heat, and stir in honey and parsley.

Jerk Rib-Eye with Honey Glazed Plantains and Sauteed Collard Greens image

1 (12-ounce) rib-eye steak
Jerk seasoning, recipe follows
Plantains, recipe follows
Collard Greens, recipe follows
1 tablespoon allspice
1/4 teaspoon ground cinnamon
1/4 cup light brown sugar
1 teaspoon red pepper flakes
1/4 teaspoon ground cloves
1/4 teaspoon ground cumin
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons canola oil
Canola oil
1 ripe plantain
4 ounces butter
1/4 cup finely chopped fresh scallions
1/4 cup honey
1/4 cup finely chopped fresh parsley leaves
12 ounces fresh collard greens, coarsely chopped
1 tablespoon butter
1/4 cup finely diced onion
Crushed red pepper flakes
1/4 cup chicken stock
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat grill or grill pan on high heat.
  • Rub jerk seasoning on steak. Place steak in a plastic bag to marinate for 1 hour in the refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 10-12 minutes (4-6 minutes on each side). Remove from grill with tongs and let rest for 8 to 12 minutes. Serve with plantains and collard greens.
  • In a medium bowl, combine all ingredients with 2 tablespoons of canola oil.
  • Preheat a medium frying pan and coat with canola oil. Slice plantains on bias, then saute until brown. Mix in butter and scallions. Then remove from the heat. Stir in honey and parsley with a large spoon.
  • Wash collard greens thoroughly. In a medium stock pot, place collards in hot water for 3 minutes, remove and drain.
  • In a large saute pan, melt 1 tablespoon of butter, then add onions and crushed red pepper, saute. Then add collards and chicken stock to saute pan. Cook on high heat, stirring occasionally for 5 to 7 minutes. Season with salt and pepper, to taste.

4 very ripe plantains, peeled and sliced on the bias 1/2-inch thick
2 tablespoons vegetable oil
4 tablespoons light brown sugar
2 tablespoons fresh orange juice
1 tablespoon honey
2 tablespoons coarsely chopped cilantro
Salt and freshly ground pepper

Steps:

  • Preheat grill. Brush the plantains with the oil and grill until caramelized, about 2 minutes on each side. In a small bowl, combine the brown sugar, orange juice, honey and cilantro and brush on plantains. Season to taste with salt and pepper.

STUFFED PLANTAINS WITH PORK AND CHIPOTLE HONEY OIL



Stuffed Plantains with Pork and Chipotle Honey Oil image

3 tablespoons chipotle in adobo sauce
3 envelopes Sazon seasoning
1 tablespoon freshly ground black pepper
7 pounds bone-in pork shoulder
10 to 12 cloves garlic, smashed
1/2 cup chopped scallions
4 to 6 ripe plantains
1/4 cup canola oil
2 tablespoons chopped chipotle in adobo sauce
2 tablespoons honey
1/4 cup olive oil

Steps:

  • Preheat the oven to 275 degrees F.
  • In a small bowl mix adobo, Sazon, and pepper and set aside.
  • Using a paring knife, make 10 to 12 slits in the pork shoulder. Then peel back fat cap but leave attached. Lift fat cap and make slits under cap. Pull cap back down and score top skin with knife. Insert smashed garlic in slits. Rub the pork with the adobo mixture, wrap in aluminum foil and place in a roasting pan. Transfer the pan to the oven and roast for 5 hours.
  • Raise the oven temperature to 375 degrees F. Remove the aluminum foil and continue roasting for 30 minutes (or desired crispness on skin). Remove pork shoulder from oven and allow to rest for 20 minutes on a chopping board. Pull approximately 2 pounds of pork from the shoulder and chop into small to medium size pieces.
  • In a medium bowl, mix chopped pork and the scallions. Set pork and scallion mixture aside. Remove peel from the plantains but do not detach peel. Split plantain down middle making 2 slices so you can remove middle (make canoe), set cut piece aside. Take 1/2 cup of pork and scallion mixture and stuff plantains. Place cut piece of plantain back on top and pull up peel. Lightly oil the peel and wrap in aluminum foil. Repeat with remaining plantains and stuffing mixture. Grill,or bake for approximately 20 minutes or until thoroughly heated.
  • Remove plantains from grill or oven and remove foil and peel. Place plantains on a serving platter. In a small bowl, mix chopped chipotle, honey and olive oil. Drizzle over the plantains and serve.

CARAMELIZED PLANTAINS WITH BEANS, SCALLIONS AND LEMON



Caramelized Plantains With Beans, Scallions and Lemon image

Bright and earthy flavors complement each another in this easy dish in which cooked beans are tossed with lemon zest, olive oil and cayenne, and roasted sweet plantains are coated in a brown sugar, ginger and lemon glaze. Go with ripe plantains for this recipe, yellow and spotted with large black dots. You'll need your oven's broiler setting to help caramelize the sugary coating on the plantains, and to char the scallion garnish. This dish is the perfect breakfast topped with a jammy egg, a quick lunch over a bed of fresh greens, or a satisfying side to roast chicken.

2 1/4 pounds ripe plantains (about 4 medium), yellow and spotted with large black dots
6 tablespoons olive oil, plus more for drizzling
2 tablespoons dark brown sugar
1 tablespoon grated fresh ginger
1 lemon, zested and juiced, plus more as needed
1 3/4 cups or 1 (15-ounce) can drained cooked beans, such as navy, cannellini, black-eyed peas or butter beans
1/4 cup minced red onion
1/2 teaspoon ground cayenne
2 bunches scallions (about 10 to 12 scallions), trimmed
Kosher salt
1/4 cup fresh dill fronds
1/4 cup fresh cilantro, leaves and tender stems

Steps:

  • Heat the oven to 350 degrees. Leaving the plantain skin on, cut each plantain in half, lengthwise down the middle. Place the plantains cut-side up on a baking sheet. Drizzle with 1 tablespoon olive oil and bake until tender, and a skewer or knife inserted goes all the way through, about 40 minutes. Remove the plantains and set the broiler to high with a rack 6 to 8 inches from the heat source.
  • While the plantains are baking, in a small bowl, combine the brown sugar, ginger and 2 tablespoons of lemon juice. Whisk to dissolve the brown sugar, then stir in 2 tablespoons of olive oil.
  • In a large bowl, combine the beans, minced onion and cayenne with 2 tablespoons olive oil, 2 tablespoons lemon juice and 1 tablespoon lemon zest. Toss and set aside.
  • Once cool enough to handle, about 5 minutes, remove the plantain skins and discard. Break each plantain into pieces, about 2 to 3 inches long, and place back on the baking sheet. Drizzle the plantains with the brown sugar mixture and toss to coat. Move the plantains to one side of the baking sheet. Lay the trimmed scallions on the empty side of the sheet and drizzle with the remaining 1 tablespoon of olive oil. Rub the oil into the scallions to coat evenly. Season the entire sheet with salt.
  • Broil the plantains and scallions until the glaze is set and deeply caramelized in spots, and the scallions are charred along the length of each, about 5 to 12 minutes, rotating halfway through. If the plantains are at risk of burning, pull the plantains from the oven before the scallions have finished.
  • Move the scallions to a board, chop and add to the bowl with the beans. Season the beans with salt, toss to combine and transfer to a serving platter.
  • Top the beans with the glazed plantains. Garnish with fresh dill, cilantro and a drizzle of olive oil. Serve over a bed of greens, as a vegetarian side, or topped with a jammy egg.

This recipe is from Alton Brown. A little more work than usual for plantains, but well worth the effort. My friends love these!

2 cups water
3 garlic cloves, smashed
2 teaspoons kosher salt
1 1/2 cups canola oil
2 green plantains

Steps:

  • Combine water, garlic, and salt in a medium size bowl and set aside.
  • In a large saute pan, heat oil to 325°F.
  • Peel plantains and slice into 1-inch pieces. Carefully add plantains to oil and fry until golden yellow in color, about 1 to 1 1/2 minutes per side.
  • With a slotted spoon, remove the plantains from the pan and place them on a cookie sheet lined with parchment paper. With the back of a wide, wooden spatula or spoon, press each piece of plantain down to half its original size.
  • Place the plantains in the garlic water and let soak for 1 minute. Remove and pat dry with a tea towel to remove excess water.
  • Bring oil back up to 325°F and return plantains to pan and cook until golden brown, approximately 2 to 4 minutes per side.
  • Remove to dish lined with paper towels and sprinkle with salt. Serve immediately.
