CHOCOLATE ROCKY ROAD COOKIES
A chocolate cookie with the flavors of rocky road ice cream. These are great to eat with a big bowl of vanilla ice cream!

- Preheat oven to 400 degrees F (200 degrees C). In a small sauce melt together the butter and 1/2 cup of the chocolate chips, stirring frequently. Remove from heat and set aside to cool.
- In a medium bowl, stir together the melted chocolate mixture with the sugar, eggs and vanilla. Sift together the flour, baking powder and salt, stir into the chocolate mixture. Finally, stir in the chopped nuts and remaining chocolate chips.
- Drop dough by rounded teaspoonfuls onto unprepared cookie sheets. Press a miniature marshmallow into the center of each cookie. Bake for 7 to 8 minutes in the preheated oven. Remove from baking sheets immediately to cool on wire racks.

ROCKY ROAD COOKIES
Rocky Road Cookies are chocolate cookies loaded with semi-sweet chocolate chunks and almonds, topped with mini marshmallows.

Steps:
- Preheat oven to 325°F. Line two cookie sheets with parchment paper.
- In a medium microwave-safe bowl, add 1 cup of the chocolate morsels and the butter. Heat in the microwave for 15 seconds. Stir and then heat for another 15 seconds. Stir. If the chocolate is mostly melted do not heat again. (If the chocolate seizes or hardens a bit it is okay.) Set aside.
- While the chocolate is cooling, add sugar, eggs, milk, and vanilla to a large bowl. Whisk well until they are completely incorporated, light, and airy.
- Add the slightly warm chocolate to the egg mixture and whisk continuously until fully combined and smooth.
- Add the flour, cocoa powder, baking powder, and salt. Stir well to incorporate, but don't over mix. The mixture should be very loose, just like a brownie mix.
- Stir in the remaining 1½ cups of the chocolate chunks and the almonds, reserving a little of each to press into the tops of the cookies, if desired.
- Set the cookie dough in the freezer for 15 minutes.
- When ready, using a 3 tablespoon scoop, scoop the cookie dough and place each cookie 2 inches apart on the lined baking sheets.
- Top with reserved chocolate chunks, almonds, and mini marshmallows, pressing down slightly. This will give the cookies that 'rocky road' look. (Note: When adding the marshmallows, try to keep them in the middle of the cookie dough ball.)
- Bake for 13-15 minutes. Let cool on the cookie sheet before serving. Store leftovers in an airtight container.

- Preheat oven to 350°. Shape dough into 1-1/4-in. balls; press evenly onto bottom and up sides of 24 greased mini-muffin cups., Bake until edges are golden, 10-12 minutes. Using the back of a measuring teaspoon, make an indentation in each cup. Immediately place 3 marshmallows and 1/4 teaspoon chocolate chips in each cup; sprinkle with almonds. EASY ROCKY ROAD

- Grease and line an 18cm square brownie tin with baking paper.
- Place 200g digestive biscuits in a freezer bag and bash with a rolling pin or just the side of your fist until they're broken into a mixture of everything between dust and 50p-sized lumps. Set aside.
- In a large saucepan melt 135g butter or margarine, 200g dark chocolate and 2-3 tbsp golden syrup over a gentle heat stirring constantly until there are no or almost no more lumps of chocolate visible, then remove from the heat. Leave to cool.
- Take the biscuits, 100g mini marshmallows and up to 100g of additional ingredients (dried fruit, nuts, popcorn, honeycomb), if you like, and stir into the chocolate mixture until everything is completely covered.
- Tip the mixture into the lined baking tin, and spread it out to the corners. Chill for at least 2 hrs then dust with icing sugar and cut into 12 fingers.

- Preheat oven to 350°. Line cookie sheets with foil (NOT parchment).
- In a small glass bowl, microwave the 1 1/3 cups of chocolate chips and 3/4 cup butter for 1 minute. Stir and then microwave for 30 more seconds. Stir until smooth. If necessary, microwave for another 15 seconds and stir again. Set aside.
- In a separate bowl, beat the eggs, sugar, hot chocolate mix and vanilla for 2-3 minutes. Add the chocolate/butter mixture and mix just until well combined.
- In a small bowl, mix together the salt, baking powder and flour. Add flour mixture to the chocolate mixture and mix just until combined.
- Mix in the cup of chocolate chips and almonds. Use a large cookie/muffin scoop (about 1/4 cup) to scoop cookies onto foil lined cookie sheets. Bake for 10 minutes and then remove from the oven to press about 8-10 marshmallows gently onto the top of each cookie. Return to the oven for about 2-3 minutes. The marshmallows should be slightly toasted but not melted. Place the foil on a wire rack and then when the cookies are completely cooled, use a spatula to get the cookies off of the foil.

My 4-year old daughter actually had the idea for this little twist on an old favorite. We were making regular no bake cookies and she said "Mommy, I want some marshmallows in it." Next time I make them I am going to substitute graham cracker crumbs for the oats to make S'more cookies!

- Beat together butter, sugar and vanilla until creamy. Stir in flour and 1/2 cup of chopped nuts.

CHEF JOHN'S ROCKY ROAD
I thought I was gonna show you how to make a famous candy, based on a famous ice cream, but as it turns out, it's actually the other way around. The ice cream flavor was inspired by an Australian candy that goes by the same name, which used the same signature ingredients--chocolate, marshmallows, and nuts. Regardless, this is super easy to make, and would be an absolutely wonderful edible gift for the upcoming holidays. Keep unused portions in the fridge.

- Combine dark chocolate chips, butter, and maple syrup in a heat-safe bowl and place over a saucepan filled with about 1 inch of hot water set over the lowest heat setting on the stovetop. Allow mixture to melt; do not stir.
- While mixture melts, line an 8x8-inch baking pan with plastic wrap.
- Slowly stir melted chocolate mixture together with a spatula until shiny and smooth. Remove from heat and stir in marshmallows and almonds until combined.
- Quickly transfer mixture into the prepared baking pan. Distribute evenly but do not smooth or press down the top--try to preserve a rough texture on the top. Let cool to room temperature, about 30 minutes. Wrap in plastic wrap and refrigerate until well chilled and firm, about 2 hours.
- Sift cocoa over the top and cut into 16 squares.
