Love warm blueberry muffins and the sweet taste of homemade blueberry pie? This recipe is the perfect harmony of both - a muffin bursting with both blueberry pie filling and fresh blueberries.

2/3 cup blueberry pie filling (from 21-oz can)
1/3 cup fresh blueberries
1/2 cup old-fashioned or quick-cooking oats
1/4 cup Gold Medal™ all-purpose flour
1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons cold butter, cut into small pieces
3/4 cup milk
1/4 cup vegetable oil
1 egg
1 tablespoon grated lemon peel
2 cups Gold Medal™ all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400°F.Place paper baking cup in each of 12 regular-size muffin cups or grease with shortening or cooking spray.
  • In small bowl, mix filling ingredients; set aside. In medium bowl, mix all streusel ingredients with fork until crumbly; set aside.
  • In large bowl, beat milk, oil, egg and lemon peel with fork or whisk until blended. Stir in remaining muffin ingredients all at once just until flour is moistened (batter will be lumpy).
  • Spoon about 1 tablespoon batter in bottom of each muffin cup (spread, if necessary, to cover most of bottom of cup). Alternately drop rounded 1/2 teaspoon blueberry mixture and 1 teaspoon remaining muffin batter in different areas in each muffin cup, layering as necessary. (Cups will be three-fourths full.)
  • Sprinkle streusel evenly over batter and blueberry mixture in each cup.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan to cooling rack. Serve warm if desired.

1 box white cake mix
1 tsp butter extract
3 tsp blueberry extract
6 oz fresh blueberries
FROSTING
1 c butter, softened
3 c powdered sugar
2 Tbsp half & half
1 tsp clear vanilla extract
2-3 tsp blueberry extract
1/2 tsp butter flavor extract
1/8 tsp salt
1/4 tsp cream of tartar
GARNISH (OPTIONAL)
blueberry pie filling
fresh blueberry

Steps:

  • 1. Prepare cake as directed. Mix in butter and blueberry extracts. Add fresh blueberries, and mix by hand gently.
  • 2. Fill lined cupcake liners 3/4 full with blueberry cake batter. Bake as directed. Allow to cool completely.
  • 3. Add all of the frosting ingredients to a large bowl and mix until fluffy. I recommend you adding the extracts a little at a time, to achieve your desired flavor preference.
  • 4. Frost cupcakes. Dab the pie filling on top and finish with a fresh blueberry.

1 pound fresh blueberries
1 ½ cups sifted all-purpose flour
1 teaspoon baking powder
⅛ teaspoon salt
½ cup unsalted butter, softened
1 cup white sugar
2 eggs
4 tablespoons whole milk
1 teaspoon vanilla extract
½ cup unsalted butter, softened
½ (8 ounce) package cream cheese, softened
½ teaspoon vanilla extract
3 cups powdered sugar, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a cupcake pan with 12 paper liners.
  • Place blueberries into a pot and let simmer over medium heat until most of the water has evaporated from the fruit, stirring every few minutes, about 30 minutes total. Remove from heat and let cool, 20 to 30 minutes. Transfer to a blender or food processor and puree.
  • Sift flour, baking powder, and salt together in a bowl.
  • Cream butter in the bowl of an electric stand mixer and add sugar. Beat until light and fluffy. Add eggs, one at a time, until completely mixed. Scrape down the bowl. Mix in 6 tablespoons of blueberry puree, milk, and vanilla extract. Add dry ingredients and mix on low speed until incorporated. Scrape down the bowl and mix on low speed for 1 minute more.
  • Fill the prepared cupcake tin evenly with batter using an ice cream scoop.
  • Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 20 to 25 minutes. Remove from the oven and place on a wire rack to cool completely.
  • Beat butter, cream cheese, and vanilla extract together with an electric mixer. Add powdered sugar and mix in 1/4 cup blueberry puree, 1 tablespoon at a time, until frosting is smooth and spreadable. Frost cooled cupcakes.

1 1/4 cups packed brown sugar
1/2 teaspoon salt
3 eggs, at room temperature
1 1/2 cups cake flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
3/4 cup milk, at room temperature
1/2 cup pureed sweet potatoes
1/4 cup orange juice
1 teaspoon vanilla
About 36 frozen blueberries
2 tablespoons raw sugar
2 cups frozen blueberries
2 tablespoons sifted cornstarch
2 tablespoons granulated sugar
1 tablespoon raw sugar
1/8 teaspoon cinnamon
1 orange, zested
4 cups heavy whipping cream
1/4 cup confectioners' sugar
2 vanilla beans, split and seeds scraped out

Steps:

  • For the cake batter: Preheat the oven to 350 degrees F; line a cupcake pan with 12 cupcake liners.
  • Put the butter in the bowl of a stand mixer with a paddle attachment and beat slowly until it is smooth and creamy. Add the brown sugar and salt, and cream at moderate speed until the mixture is light and fluffy, 8 to 10 minutes.
  • Add the eggs one at a time, beating after each addition before adding the next. Mix until light and fluffy, scraping down the sides of the bowl to insure even mixing, about 5 minutes.
  • Sift together the cake flour, baking powder, baking soda and cinnamon in a medium bowl and set aside. Mix together the milk, sweet potatoes, orange juice and vanilla in a separate bowl. Add one-quarter of the flour mixture to the butter and egg mixture and beat just until blended in. Add one-third of the milk mixture and beat just until blended in. Repeat with the remaining ingredients, alternating the flour with the milk, until all the ingredients are used. Scrape down the sides of the bowl occasionally for even mixing.
  • Toss the blueberries together with the raw sugar in a small bowl.
  • Scoop up the batter into the cupcake liners and lay 2 to 3 sugared blueberries on each cupcake. Bake until an inserted toothpick comes out clean, about 22 minutes. Let cool completely before frosting.
  • For the blueberry filling: Put the blueberries, cornstarch, granulated sugar, raw sugar, cinnamon, orange zest and 2 tablespoons water into a saucepan and set over medium heat. Bring to a boil and simmer until reduced to a jam-like consistency, about 10 minutes.
  • For the chantilly cream: Using an electric mixer, whip the cream on high in a cold bowl; add the confectioners' sugar and vanilla bean seeds and whip until fluffy.
  • Use a corer to remove the center of each cupcake and insert some blueberry filling. Cover each cupcake with the chantilly cream.

1 teaspoon cinnamon
1 2/3 cups cake flour (not self-rising)
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup sour cream
6 ounces blueberries (1 1/4 cups)
1 1/4 sticks unsalted butter, softened
8 ounces cream cheese, room temperature
1/2 teaspoon pure vanilla extract
2 2/3 cups confectioners' sugar, sifted
1/4 cup high-quality blueberry jam, such as Hero, strained (3 tablespoons)

Steps:

  • Make the topping: Mix together granulated and brown sugars and cinnamon.
  • Make the cupcakes: Preheat oven to 375 degrees with rack in upper third of oven. Line cups of a standard muffin tin with baking cups. Sift together flour, baking soda, baking powder, and salt. Beat together butter and granulated sugar with a mixer on medium-high speed until pale and fluffy, 2 to 3 minutes. Beat in eggs, 1 at a time, then beat in vanilla, scraping down sides of bowl. Reduce speed to low, and beat in flour mixture in 3 additions, alternating with sour cream and beginning and ending with flour. Fold in blueberries.
  • Divide batter among baking cups. Add topping, pressing to adhere to batter. Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 20 to 21 minutes. Remove cupcakes from tin, and let cool completely on a wire rack.
  • Make the icing: Beat together butter and cream cheese with a mixer on medium-high speed until pale and fluffy, about 2 minutes. Reduce speed to low, and gradually beat in vanilla and confectioners' sugar. Raise speed to medium-high, and beat 1 minute. Spoon jam on top of icing, and without stirring, spoon icing into a disposable pastry bag. Snip off a 3/4-inch opening in tip, and pipe swirled mounds of icing on top of each cupcake. Although best if eaten immediately, cupcakes can be refrigerated up to 6 hours and brought to room temperature 45 minutes before serving.
