A simple, low-calorie, grain-free meal with roasted cauliflower, punchy feta and sweet pomegranate seeds that can be prepared in advance - ideal for supper and packed lunch the next day

1 large cauliflower (about 650g/1lb 7oz trimmed weight)
1 tsp allspice
1 tsp ground cinnamon
2 tbsp olive oil
25g flaked almonds , toasted
1 red onion , finely chopped
200g pack feta , crumbled
110g tub pomegranate seeds
juice 1 lemon
½ small pack parsley , finely chopped
½ small pack mint , finely chopped, plus a few leaves to garnish

Steps:

  • Heat oven to 200C/180C fan/gas 6. Remove the outer leaves from the cauliflower and the hard inner core, then roughly chop up the florets (don't worry about how they look, they are going to be blitzed). Put the cauliflower in the large bowl of a food processor, blitz for 30 secs until it resembles couscous grains, then tip into a large bowl.
  • Mix the spices and olive oil into the cauliflower and season to taste. Spread the cauliflower 'couscous' out on a large baking tray in an even, thin layer. Roast for 12 mins, mixing halfway through so that it is evenly toasted, then set aside to cool slightly.
  • Once at room temperature, stir through the remaining ingredients and season to taste, then sprinkle over the mint leaves.

3 pints cherry or grape tomatoes
1/4 cup extra-virgin olive oil, divided
Salt and pepper
1 cup coarse bulgur
1 medium red onion, cut crosswise into thin slices
1 can (15.5 ounces) chickpeas, rinsed and drained
2 bunches parsley, roughly chopped (1 1/2 to 2 cups)
Lemon juice, plus wedges for serving

Steps:

  • Preheat oven to 450 degrees with racks in middle and lower thirds. On a rimmed baking sheet, toss tomatoes with 5 teaspoons olive oil, season with salt and pepper, and roast on bottom rack of oven until soft and skins have blistered and burst, about 30 minutes. On a separate, small baking sheet, spread bulgur in an even layer and toast on top rack of oven until fragrant and deep golden, stirring halfway through, 15 minutes. Transfer bulgur to a large bowl.
  • Add onion to the tomatoes, stir to combine, and season with salt and pepper. Roast until onion is soft and golden, flipping halfway through, about 15 minutes.
  • Meanwhile, cook bulgur according to package instructions. Transfer to the large bowl, season with salt and pepper, stir in chickpeas; let cool if still warm. Stir in parsley, tomatoes, onions, 1 tablespoon olive oil, and lemon juice to taste and transfer to serving platter. Serve warm or at room temperature with lemon wedges.

1 small chile pepper, finely chopped
1 small zucchini, seeded and chopped
1 1/2 cups bulgur wheat
1 bulb fennel, trimmed and chopped
1 small red bell pepper, seeded and chopped
1 small to medium butternut squash, peeled and diced in bite-size pieces
1/2 cup EVOO, plus some for drizzling
Salt and freshly ground black pepper
Freshly grated nutmeg
3 lemons, juiced
3 cloves garlic, grated or pasted
1 pomegranate
1 packed cup fresh parsley leaves, chopped
1/2 cup fresh mint leaves, finely chopped
1 red onion, finely chopped
1/2 cup Greek yogurt
1/4 cup tahini paste
1/2 teaspoon ground cumin
6 naan or pita
Shredded romaine
1/4 cup toasted pistachio nuts
1/4 cup toasted pine nuts
Giardiniera (hot pickled vegetables), drained and chopped, optional garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Boil 1 1/2 cups water and pour over the bulgur in a mixing bowl. Cover and let stand to cool to room temp, 30 minutes.
  • Meanwhile, arrange the fennel, red bell pepper, chile pepper and zuchhini on a baking sheet and dress with EVOO and salt and pepper. Arrange the butternut squash on a larger baking sheet, dress with EVOO and season with salt and pepper and a little freshly grated nutmeg. Roast until the vegetables and squash are tender and brown at the edges, 17 to 20 minutes.
  • In a large mixing bowl, whisk up two-thirds of the lemon juice, about 1/2 cup EVOO, and some salt and pepper with 2 cloves garlic. Working in a large bowl of water, separate the pomegranate seeds and add to the mixing bowl, along with the parsley, mint, onions and bulgur; toss to combine.
  • In a small bowl, whisk up the yogurt, 1/4 cup water, tahini, the remaining lemon juice, the remaining clove garlic, cumin and some salt and pepper. Pour into a container and refrigerate.
  • Cool the roasted vegetables and combine with the tabbouleh. Store, covered, in the fridge for a make-ahead salad supper.
  • To serve, heat a griddle pan and douse with a splash of water. Add the naan and blister 30 seconds on each side. Fill each naan with shredded lettuce and tabbouleh salad and top with the dressing, nuts and optional chopped hot pickled vegetables.

1 1/4 cups water
4 cups loosely packed, roughly chopped flat-leaf parsley, about 3 bunches
1 1/2 cups peeled and diced tomatoes, about 3 to 5 Roma tomatoes,
1/4 cup green onions chopped, white and some of the green, about 2 green onions
1/4 cup green onions chopped, white and some of the green, about 2 green onions
1/4 to 1/2 cup loosely packed, roughly chopped mint leaves
1/4 cup freshly squeezed lemon juice
1/4 teaspoon minced garlic
Pinch kosher salt
1 tablespoon extra-virgin olive oil

Steps:

  • Bring water to a boil, pour in bulgur, stir, cover, and turn off heat. Let stand 20 to 25 minutes or until most of the liquid is absorbed and bulgur is fluffy and tender. Pour off any remaining liquid. To prepare dressing, in a small non-reactive bowl, whisk together lemon juice, garlic, salt and oil. Taste and adjust seasonings. In a large salad bowl, toss together parsley, tomatoes, green onions and mint. Add bulgur. Pour dressing over salad, toss to combine. Taste and adjust seasonings.
  • Morph 1: Add more diced tomatoes, diced cucumbers, and diced raw zucchini to the tabbouleh.
  • Morph 2: Add rinsed and drained canned chickpeas, and rinsed and drained canned lentils
  • Morph 3: Grill some boneless, skinless chicken breast, dice, toss with the tabbouleh and wrap it up in fresh pita. Morph 4: Serve as a small side salad with fish.

1 cup bulgur wheat
1/4 cup freshly squeezed lemon juice (2 lemons)
Olive oil
Kosher salt
1 whole (2 split) chicken breast, bone in, skin on
Freshly ground black pepper
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (2 bunches)
1 cup chopped fresh flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, halved lengthwise, seeded, and medium-diced
2 cups halved cherry tomatoes

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heat-proof bowl, pour the boiling water over the bulgur wheat. Add the lemon juice, 1/4 cup olive oil, and 1 1/2 teaspoons of salt. Stir. Cover the bowl with plastic wrap and allow the bulgur to stand at room temperature for about 1 hour.
  • Place the chicken breast on a baking sheet and rub it with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until just cooked. Set aside until cool enough to handle.
  • Remove the chicken meat from the bones and discard the skin. Cut the chicken into medium dice and add to the tabbouleh. Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and 1 teaspoon pepper. Season, to taste, and serve immediately or cover and refrigerate. The flavors will improve as it sits.

ASIAN (CHINESE) TABBOULEH



Asian (Chinese) Tabbouleh image

Tabbouleh was introduced to me by my best friend in the 70's and I loved it. However, I decided to give it my own twist, so I made an Asian style Tabbouleh which I love even more. You can serve this as a side dish in place of a salad or roll several tbsp in Napa cabbage leaves to serve along with your favorite Asian main dish. Yum, scrumptious! By most standards this would not be considered tabbouleh because it does not include mint but I believe we can make tabbouleh using any of the ingredients we prefer.

1 cup Bulgar wheat
2 cups boiling water
1 (8 ounce) can water chestnuts, chopped
1 (16 ounce) can bean sprouts, drained
1 (4 1/2 ounce) can sliced mushrooms, drained
8 green onions, chopped
1 large carrot, grated
2 garlic cloves, chopped
2 tablespoons fresh gingerroot, grated
4 tablespoons soy sauce, natural
4 tablespoons sesame oil, roasted
2 tablespoons fresh lime juice
napa cabbage leaf (Chinese) (optional)

Steps:

  • Rinse bulgar wheat several times, then pour boiling water over it, stir and put in the refrigerator for 30 minutes. The bulgar will soak up most of the water after 30 minutes but if it doesn't, drain it to make sure there is no longer any water present.
  • Add all of the other ingredients into the soaked bulgar wheat.
  • Put the tabbouleh into the refrigerator for an hour or so tossing every now and then.
  • Serve in place of a salad or use to make Asian (Chinese) tabbouleh cabbage rolls (no frying or cooking) in place of egg rolls.
  • As always, if you prefer fresh mushrooms or fresh bean sprouts (mung) please use those.

4 tablespoons extra virgin olive oil
3 cups vegetable stock, boiling
1/2 cup scallion, chopped
3 garlic cloves, minced
3 cups flat leaf parsley, chopped
3/4 cup mint leaf, chopped
4 tomatoes, diced
1 seedless European cucumber, diced
1/4 cup lemon juice
salt & pepper, to taste

Steps:

  • Mix bulgar wheat and 1 tbsp olive oil in a bowl.
  • Pour boiling stock over, cover and let stand for 15-20 minutes, or until tender.
  • Drain well in a strainer.
  • Toss rehydrated bulgar with remaining ingredients and remaining oile oil.
  • Add salt and pepper to taste, and refrigerate until ready to serve.

1 cup bulgur wheat
1 cup boiling water
1 cup loosely packed fresh basil leaves, finely chopped, plus whole leaves for garnish
1 cup loosely packed fresh mint leaves, finely chopped, plus whole leaves for garnish
1 cup loosely packed fresh flat-leaf parsley leaves, coarsely chopped, plus whole leaves for garnish
4 plum tomatoes (10 ounces total), cut into wedges
1 garlic clove, minced
2 tablespoons sherry vinegar
1 tablespoon extra-virgin olive oil
2 scallions, white and pale-green parts only, thinly sliced
Juice of 1 lemon
1 1/2 teaspoons coarse salt
Freshly ground pepper, to taste

Steps:

  • Preheat oven to 425 degrees. Place bulgur in a heatproof bowl, add boiling water, and stir. Cover tightly, and refrigerate until liquid has been absorbed, about 1 hour.
  • Combine chopped herbs. Toss tomatoes with garlic, vinegar, 1 teaspoon oil, and 2 tablespoons chopped herbs on a rimmed baking sheet, and roast until tomatoes begin to soften, about 12 minutes. Let cool.
  • Add roasted-tomato mixture, remaining chopped herbs, scallions, lemon juice, salt, pepper, and remaining 2 teaspoons oil to bulgur, and gently toss. Garnish with whole herb leaves.

3 x 400g cans chickpeas , drained (or 250g dried chickpeas, soaked in 1 litre cold water overnight, then drained)
3 tsp ground cumin
2 tsp ground coriander
1 tsp cayenne pepper
1 red onion , quartered
3 garlic cloves
2 tbsp sesame seeds
1 ½ tsp baking powder (gluten-free, if you like)
2 small packs parsley , stalks and leaves separated, leaves chopped
4 tbsp olive oil
1 cauliflower , cut into large florets
1 small pack mint , leaves chopped and stalks discarded
1 lemon , juiced

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line two baking sheets with baking parchment. Tip the chickpeas, 2 tsp of the ground cumin, 1 tsp of the ground coriander, the cayenne pepper, onion, garlic, sesame seeds, baking powder, parsley stalks and 1 tbsp water into a food processor. Blitz until combined but not smooth (you want the falafel to have some texture, rather than being the consistency of hummus). Season to taste, then roll into 18 evenly sized balls. Flatten each ball into a disc shape and arrange on the baking sheets, then brush the tops with 1 tbsp of the oil. Bake for 20 mins until golden and crisp, turning halfway through cooking.
  • Meanwhile, clean out the food processor, then tip in the cauliflower and briefly pulse until it resembles couscous. Mix the cauliflower couscous with the remaining ground spices and olive oil, then add some seasoning. Tip onto a roasting tray and roast for 10-12 mins until lightly toasted, stirring occasionally.
  • Remove from the oven and leave to cool, then mix through the parsley leaves, mint leaves and lemon juice. Season to taste. Will keep for three days in the fridge. Serve the baked falafel with the cauliflower tabbouleh and some salad, if you like.
