1 butternut squash (about 2.5 pounds)
4 tablespoons coconut oil (melted)
0.5 med yellow onion (diced, about 2/3 cup)
1 small shallot (diced)
3 large carrots (diced)
1 teaspoon sea salt
1 teaspoon white pepper (or black pepper, which will leave black flecks)
0.25 teaspoon nutmeg
0.5 teaspoon cinnamon
1 teaspoon curry powder
0.5 teaspoon ground ginger
0.5 teaspoon chili powder ((optional))
3 cups chicken stock
0.25 cup heavy cream (plus more for garnish)
Sliced almonds (for garnish)

Steps:

  • Heat oven to 375°F. Halve butternut squash and scoop out the seeded cavity with a spoon. Use a fork to poke holes in the open face of the squash. Slather with 2 tbsp coconut oil - leave a small pool of oil where the seeds used to be. Line a rimmed baking sheet with foil or parchment and place squash face side up on baking sheet. Depending on the size of the squash, let it roast for 1 hour to 1 hour 20 mins. About 45 mins in, I like to take it out and brush the pooled coconut oil over the whole face of the squash. It's done when you can easily stick a fork in the flesh. Remove from the oven and let it cool.
  • While waiting for the squash to cool, heat 2 tablespoons coconut oil over med-high heat in a 6-quart pot. Saute the onion, shallot, carrots, spices, salt, and pepper; saute 6-8 minutes until tender. You can test this with a fork. The carrots may take a bit longer than the onions and it's going to smell REALLY good.
  • Once cooled enough to handle, scoop the butternut squash out of its skin and add it to the carrot and onion mixture. Cook for another 5 minutes, stirring occasionally, before adding the stock. Add the stock, bring to a boil, and then reduce heat to simmer for 10 minutes to integrate all those lovely spices.
  • Carefully transfer the soup to a heat-safe blender or food processor to puree the soup, or use a hand blender to blend the soup right in the pot. Puree the soup until completely smooth and then pour it back into the pot.
  • Stir in the cream and taste. Season with any additional salt, pepper or spice adjustments you may want--sometimes I add more curry powder or chili powder for a kick.
  • Ladle into bowls and garnish with an extra swirl of cream and sliced almonds.

  • In 3 qt saucepan, cover squash with water and cook until tender.
  • Place in blender and puree.
  • In the saucepan, melt butter, add onion and garlic.

  • Heat to boiling; reduce heat and simmer 5 minutes.
  • Add milk, heat through, stirring.

3 tablespoons butter
1 large onion, diced
1 teaspoon kosher salt, plus more to taste, divided
1 (2 pound) butternut squash
2 tablespoons tomato paste
1 quart chicken broth
1 pinch cayenne pepper
½ cup heavy cream or creme fraiche, plus more to garnish
2 tablespoons maple syrup, or to taste
Chopped fresh chives for garnish
Pomegranate seeds for garnish

Steps:

  • Melt butter in a pot over medium-low heat. Add onions and a large pinch of salt. Cook and stir until onions have softened but not taken on any color, about 10 or 15 minutes.
  • Cut off ends of squash. Carefully cut squash in half lengthwise and remove the seeds. Peel the squash with a vegetable peeler. Cut into chunks.
  • Raise heat under pot to medium-high. Stir in tomato paste; cook and stir until mixture begins to caramelize and turn brown, about 2 minutes. Add squash, chicken broth, 1 teaspoon salt, and cayenne pepper. Bring to a simmer; reduce heat to medium-low and simmer until squash is very tender, 15 to 25 minutes. Reduce heat to low. Blend with an immersion blender until very smooth. Stir in cream and maple syrup; add more salt if needed.
  • Ladle into serving bowls. Garnish with a swirl of cream, and a sprinkle of chives and pomegranate seeds.

1 tablespoon unsalted butter
½ cup diced onion
¾ cup diced carrots

3 cups vegetable stock

I tried out for the show 'Master Chef' this past October in New York City. One of my fellow contestants made a pumpkin soup with applewood bacon. He made it to the next round, but sadly I did not. This is my rendition of his soup. I made it my own by using butternut squash and sweet potato and made it richer by turning this into a bisque. I hope you enjoy it as much as I did. Please share your comments. For less-fat option substitute half-and-half with milk or nonfat half-and-half.

1 (2 pound) butternut squash - peeled, seeded, and cubed
1 pound sweet potatoes, peeled and cubed
2 tablespoons olive oil
salt and ground black pepper to taste
8 slices applewood-smoked bacon
1 tablespoon butter
1 large onion, chopped
2 cloves garlic, chopped
½ cup white wine
1 ½ quarts chicken stock
1 ½ cups half-and-half
1 teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine squash, sweet potatoes, olive oil, salt, and pepper together in a bowl; toss to coat. Pour out onto a baking sheet.
  • Bake in the preheated oven, flipping the vegetables once, until slightly caramelized and tender, about 60 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly crisp, 7 to 10 minutes. Reserve 1 tablespoon bacon drippings. Drain the bacon slices on paper towels; crumble bacon.
  • Heat bacon drippings and butter together in Dutch oven over medium heat. Saute onion and butter in hot butter mixture until onion is translucent, 7 to 10 minutes.
  • Pour the white wine into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook until white wine is reduced by half, 3 to 5 minutes.
  • Stir roasted squash mixture into onion mixture; add stock and bring to a boil. Reduce heat to low and simmer until all vegetables are tender, about 10 minutes.
  • Pour vegetable mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to Dutch oven.
  • Stir half-and-half into pureed soup; cook and stir over medium-low heat until soup is warmed through, about 5 minutes. Stir nutmeg into soup; season with salt and pepper to taste. Ladle into bowls and top each with crumbled bacon.

What makes this soup so flavorful is that you roast the veggies in advance (squash, onions, apple). The roasting process concentrates and caramelizes the flavors. Then after roasting, it's a simple process to puree all the ingredients in a blender or processor. Just before serving, reheat and serve with croutons and a dollop of sour cream. We like this soup served the day after Thanksgiving with turkey sandwiches and a side dish of cranberry relish.

1 small butternut squash, peeled, diced (about 5 C.)
1 medium onion, large dice (1 cup)
1 tablespoon olive oil
1 apple, skinned, large dice (1 cup)
48 ounces chicken broth
1 cup half-and-half
2 tablespoons parsley, fresh, chopped
1 tablespoon thyme, fresh, chopped
crouton (optional)
sour cream (optional)

Steps:

  • ROASTING: preheat oven to 450. Peel and dice squash into 1/2 inch pieces (see tip at end). Dice onion into 1/2 inch pieces. Toss squash and onion with olive oil and spread pieces onto a large flat baking pan. Season with salt and pepper. Roast for 20 minutes - add diced apple - and continue roasting another 10-20 minutes (30-40 total roasting time).
  • Tip: while you are roasting, make some "cheese toasts". Put some shredded cheese on top of bread rounds (we like gruyere or parmesan). Bake 10-15 minutes until crispy. These cheese toasts are fantastic soup toppers!
  • Place roasted mixture into blender with about half the chicken broth; puree (keep hand on lid because hot liquids can cause the top to "explode" off with built up steam). Add remaining chicken broth, half-and-half, and herbs; puree.
  • Transfer mixture to saucepan; reheat gently.
  • Serve with a dollop of sour cream and croutons.
  • TIP: to prepare squash, first cut squash in half horizontally. Place flat end onto cutting board to stabilize squash and use a peeler to remove skin. Remove seeds. Then cut into lengths, and then into diced pieces.
  • NOTE: if you have leftover mashed potatoes from Thanksgiving, add about 1/2 cup, which will thicken the soup and add a nice smoothness.

1 teaspoon olive oil
1/4 cup (1/2 stick) butter
3 cups chopped onions
3/4 cup chopped carrots
1/2 cup chopped celery

6 cups canned low-salt chicken broth
3 tablespoons chopped fresh sage
1/2 cup plus 1 tablespoon whipping cream

Steps:

  • Preheat oven to 350°F. Rub cut surfaces of garlic with oil. Put halves back together to reassemble heads. Wrap each tightly in foil; bake until tender, about 40 minutes. Cool garlic in foil.
  • Melt butter in heavy large pot over medium heat. Add onions, carrots and celery; sauté until onions are beginning to soften, about 5 minutes. Add squash, broth and 2 tablespoons sage. Bring to boil. Reduce heat; simmer uncovered until squash is tender, about 25 minutes.
  • Meanwhile, unwrap garlic. Squeeze from skin into small bowl. Discard skin. Mash garlic with fork until smooth.
  • Stir garlic into soup. Working in batches, purée soup in blender until smooth. Return to pot. (Can be made 1 day ahead. Refrigerate uncovered until cold. Cover and keep refrigerated. Bring to simmer before continuing.) Stir in 1/2 cup cream. Season to taste with salt and pepper. Transfer soup to tureen. Drizzle with remaining 1 tablespoon cream.

4 cups roasted-squash compote
3 cups chicken broth
1 cup milk
1 1/2 teaspoons kosher salt

  • Heat oven to 400 degrees. Roast tomatoes for 25 to 30 minutes, until they begin to collapse. Combine compote, broth and milk and bring to a boil in a medium saucepan. Lower the heat and simmer for 5 minutes. Pass through the fine disk of a food mill. Season with salt.

1 to 2 butternut squash (about 4 pounds total)
1 tablespoon extra virgin olive oil
1 cup diced onions
1 cup diced leeks
1/2 teaspoon ground cumin
2 tablespoons chopped fresh garlic

2 tablespoons pure maple syrup
2 tablespoons soy sauce
1/4 cup bourbon
1/2 cup dry sherry
1/4 teaspoon grated nutmeg
5 cups chicken stock
3/4 cup evaporated skim milk
Salt and freshly ground pepper to taste
2 tablespoons cornstarch mixed with 2 tablespoons water

Steps:

  • Preheat oven to 375 degrees.
  • With a sharp knife, prick the squash in several places to allow steam to escape while it cooks
  • (otherwise it could burst). Place the squash in a baking dish lined with foil and roast for about 90 minutes, until the squash is soft when you push on it. Let cool for 30 minutes, so it=s easier to handle, then peel, seed, and remove strings. Cut the roasted squash into 1/2-inch pieces, or scoop meat out with a spoon.
  • In a heavy soup kettle, heat the olive oil and add the onions. Cook until light golden brown and add the leeks and cumin. Cook for 2 minutes and add the garlic and ginger. When the garlic is fragrant, add the maple syrup, soy sauce, bourbon, sherry and nutmeg. Add the squash and stock and bring to a boil. Lower the heat and cook gently for 15 minutes.
  • Using an immersion blender (or a regular blender), puree the soup until very smooth. Add the evaporated milk, salt, and pepper. Cook for 2 minutes; do not bring to a boil. Add the cornstarch mixture and stir until thickened, about 5 minutes. Serve in soup plates.
  • If you like, garnish this soup with garlic and Parmesan cheese croutons and a dollop of non fat sour cream.

½ cup light brown sugar
¼ cup butter
1 ½ teaspoons ground cinnamon
½ teaspoon Chinese five-spice powder
4 acorn squash, halved and seeded
¼ cup butter
1 cup minced yellow onion
1 cup minced celery
1 cup minced red bell pepper
1 tablespoon minced garlic
2 quarts seafood stock
1 cup heavy cream
1 cup thinly sliced fresh basil
1 teaspoon ground nutmeg
sea salt and white pepper to taste
2 (16 ounce) packages cooked and peeled whole crawfish tails

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Combine the brown sugar with 1/4 cup butter, cinnamon, and five spice powder in a microwave safe bowl. Cook in the microwave on High until the butter has completely melted. Place the acorn squash cut side up onto the aluminum foil; brush with the brown sugar mixture.
  • Bake in the preheated oven until the squash is tender and golden brown, about 1 1/2 hours. Remove from the oven, allow to cool, and scoop out and reserve the flesh.
  • Melt the remaining 1/4 cup of butter in a large pot over medium heat. Stir in the onion, celery, and bell pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the acorn squash, garlic, and seafood stock. Bring to a boil over high heat; reduce heat to medium-low and simmer 30 minutes.
  • Stir the cream and basil into the simmering soup; season with nutmeg, salt, and white pepper. Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot. Once pureed, add the crawfish tails, and simmer a few minutes until hot.

A delicious and creamy fall favorite. I came up with this recipe on my own, but it was definitely influenced by the plethora of delicious butternut squash soups I've tried before. Hope you enjoy!

2 medium butternut squash
2 tablespoons butter or 2 tablespoons margarine
1 large onion
4 celery ribs
2 -4 garlic cloves (depending on taste)
6 -8 medium carrots
2 quarts chicken or 2 quarts vegetable stock
1 lb boneless white chicken meat (either breasts or tenders)
salt and pepper
2 -4 tablespoons brown sugar (optional and to taste)
1/2 cup whipping cream (optional)

Steps:

  • Preheat oven to 350. Cut each squash in half length wise and remove seeds. Place squash flesh side down on a greased cookie sheet. Bake for 45-60 minutes or until skin side is brown and bubbly and flesh side is golden brown.
  • While squash is roasting, peel and cube onion, chop celery, peel and halve garlic cloves, and peel and chop carrots. (It doesn't really matter how big you make everything, because it gets blended later. The only thing to keep in mind is the bigger the pieces, the longer it takes to get cook.).
  • Melt the butter in a large stock pot. Add the onion, celery, and garlic. Cook until everything is beginning to get soft and has a little color. Add stock and bring to a boil. Add carrots. Reduce heat and simmer until carrots begin to soften.
  • At this point, you have 2 options. The chicken can be blended along with everything else (sounds a little weird, but I promise it is delicious), or you can add the chicken after blending. If you are going to blend the chicken: Cube it (again size isn't a huge issue for this option) and add it to the simmering pot. Simmer until the chicken is cooked through and the carrots are soft.
  • Take squash out of oven and let cool until you can handle it. Using a spoon, scoop the cooked flesh out of the skin. Add it to the simmering pot. Simmer until the squash has broken down. Remove from heat and let cool slightly.
  • In small batches, blend soup until smooth. (Because you are blending something hot, you will want to take the center out of the lid of your blender to vent it. Cover the hole by holding a folded up kitchen towel over it.) Once you've got all of it blended, put the blended soup back in the pot.
  • If you didn't blend the chicken, this is where you would cube it small and add it in, simmering until it's cooked through.
  • Add salt and pepper to taste. At this point, I add brown sugar, but you don't have to. Also, you can add whipping cream, but I find it's creamy enough without it and I don't miss it.

Savory Roasted Butternut Squash Bisque Soup image

This is a vitamin rich, naturally low calorie, high fiber, creamy indulgent bisque, that is guaranteed to warm you on these cold lingering days of Winter and Spring and just anytime you need some good comfort food. This recipe is easy to make, because you don't have to peel and dice the squash and sweet potatoes before roasting. You simply scrape the tender meat out of the skins. Panera Breads is where I had my first Butternut Squash Soup and I fell in love. I believe they use pumpkin in their recipe. I saw a recipe on the internet using sweet potatoes and I tweaked it to come up with this recipe.

2 whole medium sweet potatoes
1 whole medium white onion
2 cups onion soup, liquid from mix
1 (14 ounce) can sweetened condensed milk
4 tablespoons roasted cinnamon
1/4 teaspoon pepper
3 tablespoons applesauce
3 garlic cloves
1/4 cup sunflower oil

Steps:

  • Preheat oven to 400 degrees.
  • Cut the unpeeled squash and sweet potatoes length ways and remove seeds and membrane from the squash.
  • Peel and quarter the onion.
  • Peel the garlic cloves.
  • Rub the squash, sweet potatoes, onion and cloves with sunflower oil.
  • Place them on a foil lined roasting pan, suitable to catch drips.
  • Roast vegetables for 1 hour or until fork tender.
  • Check oven at 15 minute intervals to take out onions and garlic before they burn.
  • Add water to onion soup mix according to directions.
  • Remove vegetables and cool to touch.
  • Spoon the soft meat out of the skins of the sweet potatoes and squash and put in mixing bowl.
  • Mix the large vegetables with an Immersion blender and with the sweetened condensed milk. If the bisque is sweet enough with the milk, you can eliminate the applesauce in the next step.
  • Add the onion, smashed garlic cloves, pepper and apple sauce and 2 T. cinnamon to the mix and continue to blend.
  • Add 1/2 cup or more of the onion soup mix in increments to thin the bisque, until the desired consistency and taste is reached. If the needed amount of soup is too strong, substitute water as the remaining liquid needed for desired consistency. Blend until creamy.
  • Garnish, upon the request of each guest, with the remaining roasted cinnamon powder.

Steps:

  • Place squashes on a paper towel and microwave on high just until tender when pierced with the tip of a paring knife, 8 to 10 minutes. Remove from the microwave, and halve each squash lengthwise (to speed cooling). When cool enough to handle, scoop out and discard the seeds. Scrape out flesh into a bowl; discard skin. (To prepare in oven, preheat oven to 450 degrees. Halve squash lengthwise; scoop out and discard seeds. Place squash, cut side down, on a rimmed baking sheet; cover tightly with aluminum foil. Roast until almost tender when pierced wtih a knife, 15 to 25 minutes. When cool enough to handle, scrape out flesh, discard skin, and proceed with step 2).
  • In a large saucepan, heat butter over medium. Add onion; season with salt and pepper. Cook, stirring occasionally, until tender, 3 to 5 minutes. Add squash, thyme, broth, and 2 cups water. Bring to a boil over high heat; reduce to medium, and cook until squash is very tender, 10 to 12 minutes.
  • Working in batches, puree mixture in a blender until very smooth, about 1 minute. Return to pan; add half-and-half, and season generously with salt and pepper. Thin bisque, if needed, by adding more water. Serve garnished with thyme.

I found this recipe in Bon Appetit magazine and it sounds delicious. I love butternut squash and am looking forward to making this. Even though there are lots of steps, they sound simple enough and it can be made a day ahead.

2 heads garlic, halved
1 teaspoon olive oil
1/4 cup butter
3 cups onions, chopped
1/2 cup celery, chopped
3/4 cup carrot, chopped
4 lbs butternut squash, peeled, seeded, 1-inch pieces
6 cups chicken broth
3 tablespoons fresh sage, chopped
1/2 cup whipping cream
1 tablespoon whipping cream

Steps:

  • Preheat oven to 350°F
  • Rub cut surfaces of garlic with oil.
  • Put halves back together to reassemble heads.
  • Wrap each tightly in foil; bake until tender, about 40 minutes.
  • Cool garlic in foil.
  • Melt butter in heavy large pot over medium heat.
  • Add onions, carrots and celery; sauté until onions are beginning to soften, about 5 minutes.
  • Add squash, broth and 2 tablespoons sage.
  • Bring to boil.
  • Reduce heat; simmer uncovered until squash is tender, about 25 minutes.
  • Meanwhile, unwrap garlic.
  • Squeeze from skin into small bowl.
  • Discard skin.
  • Mash garlic with fork until smooth.
  • Stir garlic into soup.
  • Working in batches, purée soup in blender until smooth.
  • Return to pot.
  • (Can be made 1 day ahead. Refrigerate uncovered until cold. Cover and keep refrigerated. Bring to simmer before continuing.)
  • Stir in 1/2 cup cream.
  • Season to taste with salt and pepper.
  • Transfer soup to tureen.
  • Drizzle with remaining 1 tablespoon cream.
  • Sprinkle with remaining 1 tablespoon sage.
