Plain pumpkin seeds get a kick from chili powder, making them a delightfully crunchy and addictive appetizer for your Día de Muertos celebration.

8 ounces pepitas (pumpkin seeds) (hulled)
1 teaspoon ancho chile powder
1 teaspoon ground paprika
1/8 teaspoon garlic powder
1/2 teaspoon kosher salt
1 tablespoon olive oil
2 teaspoons lime juice

Steps:

  • Preheat an oven to 350 degrees F.
  • Add the hulled pepitas to a large bowl along the spices and drizzle with olive oil and toss.
  • Line a large baking tray with parchment paper. Spread the pumpkin seeds out onto the tray and roast until the seeds are lightly toasted, about 12 minutes, stirring halfway through.

MAPLE CHAI SPICED PEPITAS

Number Of Ingredients 9

1 cup pepitas
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground nutmeg
2 tablespoons light brown sugar
2 teaspoons maple syrup

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Add the pepitas to a large skillet and toast over medium-low heat, stirring frequently, until golden brown and fragrant, 6 to 8 minutes.
  • Meanwhile, combine the cinnamon, allspice, ginger, salt, pepper and nutmeg in a small bowl. Set aside.
  • Remove the pepitas from the pan and return the pan to the stovetop. Add the brown sugar, maple syrup and 1 teaspoon water and cook, stirring constantly, until the mixture is combined and the sugar dissolves, 1 to 2 minutes. Stir in the spices, then turn off the heat. Add the toasted pepitas and toss until the seeds are evenly coated. Pour over the lined baking sheet and spread to cool completely.
  • Break up slightly, then store at room temperature in an airtight container for up to two weeks.

  • Preheat the oven to 375 degrees. Toss all of the ingredients together in a bowl. Spread on a baking sheet and bake 5 minutes, or until lightly browned, shaking the pan once or twice. Serve.

2 large egg whites
1 tablespoon water
1/2 cup lightly packed light brown sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
Pinch of cayenne pepper
2 cups raw pepitas (shelled pumpkin seeds)
2 cups shelled pecan halves

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, beat the egg whites and water until frothy. In a small bowl, combine the sugar, cinnamon, allspice, cumin, salt and cayenne. Stir the sugar mixture into the egg whites, then add the pepitas and pecans. Toss until the nuts are completely coated.
  • Evenly spread the nuts on the prepared baking sheet. Bake 20 to 30 minutes, until crispy. Let cool completely. Store in an airtight container.

Roasted Root Vegetables with Spicy Pepitas and Horseradish Creme Fraiche image

1 bunch medium red beets (about 4 beets)
1 bunch baby carrots (about 8 carrots)
1 pound gold fingerling potatoes, washed and dried
2 heads garlic, cut through the equator
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 teaspoon lemon juice
1 teaspoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
Kosher salt and freshly cracked black pepper
1/2 cup raw, shelled pepitas
1 cup creme fraiche
1/4 cup prepared horseradish
Kosher salt and freshly cracked black pepper

Steps:

  • For the vegetables: Preheat the oven to 425 degrees F.
  • Trim the stems off the beets and lightly scrub with a vegetable brush - this will remove the tough outer layer. Quarter the beets and set aside. Trim the carrots (leaving a little of the stem on), and then cut in half crosswise. Add all the vegetables and the potatoes to a roasting pan along with the garlic head halves. Drizzle with the olive oil and season well with salt and pepper. Roast in the oven until golden brown and tender, about 45 minutes (the tip of a paring knife should pierce a potato and go through with little resistance).
  • For the spicy pepitas: In a large mixing bowl, combine the lemon juice, olive oil, chili powder, cumin and some salt and pepper. Add the pepitas and mix well so they are evenly coated. Toast in the oven until the pepitas are lightly browned, 7 to 10 minutes.
  • For the horseradish creme fraiche: Stir together the creme fraiche and horseradish and season with salt and pepper. Refrigerate until ready to serve.
  • To serve, place the roasted root vegetables on a large platter. Drizzle with the horseradish creme fraiche and garnish with spicy pepitas.

Steps:

  • Preheat oven to 350°F. Spray baking sheet with nonstick spray. Mix pepitas and next 6 ingredients in medium bowl. Stir in 1/4 teaspoon to 1/2 teaspoon cayenne pepper, depending on spiciness desired. Spread pepitas in single layer on baking sheet.
  • Bake until pepitas are golden and dry, stirring occasionally, about 15 minutes. Remove from oven. Seperate petpitas with fork while still warm. Cool.
