SAUSAGE AND SWEET POTATO TRAYBAKE
This Easy Sausage and Sweet Potato Traybake is the ultimate easy peasy midweek meal! Simply place sausages, sweet potatoes, peppers and onions in a baking tray, drizzle over some oil, add some seasoning and roast in the oven - that's it. Perfect for when life is super busy, but you still want to eat well.

Steps:
- Preheat your oven to 200C / 180C fan / gas mark 6 / 400F.
- Place all the ingredients in a large oven tray or roasting tin.
- Use your hands (or two large spoons) to turn everything in the oil, so it is well coated. Rearrange everything on the tray with the vegetables in one layer and the sausages on top (see Note 2).
- Place the tray in the oven for 25 minutes.
- After 25 minutes remove the tray from the oven, remove the sausages onto a plate and turn the vegetables. Replace the sausages on top with the least cooked side facing upwards (see Note 3).
- Return the traybake to the oven for a further 20 minutes, or until everything is done to your liking (45 minutes total cooking time).
- Serve just as it is, or with a simple side salad.

TWICE-BAKED SWEET POTATOES WITH SAUSAGE AND RICOTTA

- Preheat the oven to 375 degrees F.
- Pierce the sweet potatoes all over with a fork. Bake on a sheet tray until tender, about 1 hour to 1 hour and 20 minutes. Allow the sweet potatoes to cool slightly, then cut them in half and scoop the flesh into a bowl, keeping the skins intact. Set aside the skins on a sheet tray.
- Heat a medium saute pan over medium heat. Add the sausage and cook until browned, about 4 minutes, then add the shallots and allow to soften for about 1 minute. Add the pine nuts and stir to combine, allowing them to be coated in the fat. Stir in the raisins, sage and nutmeg, then remove from the heat. Transfer the mixture to the bowl with the sweet potato flesh and allow to cool completely in the refrigerator, about 1 hour.
- Meanwhile, place the ricotta in a strainer over a bowl and allow to strain for 15 minutes.
- Preheat the oven to 375 degrees F.
- Mix the egg, ricotta, Parmesan and pepper to taste into the filling mixture, being sure to keep the mixture chunky.
- Spoon the mixture into the skins. Bake until the tops are crispy and golden, 35 to 40 minutes. Garnish with fresh herbs if desired.
HEARTY SAUSAGE & SWEET POTATOES

- In a large microwave-safe bowl, combine potatoes, 1 tablespoon oil and salt. Microwave, covered, on high for 6-8 minutes or until tender, stirring every 2 minutes., Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; remove with a slotted spoon., In same skillet, heat remaining oil over medium-low heat. Add apple and carrot; cook, covered, 5-7 minutes or until carrot is just tender, stirring occasionally. Return sausage to pan. Stir in sweet potatoes and seasonings; cook, covered, 10-12 minutes or until carrot is tender.

- Fry the onion and celery in the oil over a low heat until it starts to soften and cook, about 5 mins, then spoon it into the slow cooker. Fry the carrots briefly and add them too.
- Brown the sausages all over in the same frying pan - make sure they get a really good colour because they won't get any browner in the slow cooker. Transfer to the slow cooker and add the sweet potato and tomatoes.
- Put the purée in the frying pan and add 250ml boiling water, swirl everything around to pick up every last bit of flavour, and tip the lot into the slow cooker. Add the herbs, stock cube and some pepper. Don't add salt until the casserole is cooked as the stock can be quite salty. Cook on high for 4 hrs or on low for 8 hrs, then serve or leave to cool and freeze.

- Preheat oven to 375.
- Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
- Place potatoes, onions and apples into ziploc bag.
- Pour in olive oil and all seasoning (more or less of these taste.).
- Shake bag until everything is coated well.
- Pour into 13x9 in pan and toss with sausage.

- Preheat your oven to 425 degrees F.
- Add the cubed sweet potatoes, the diced onion, and the slivered garlic to the sheet pan. Drizzle with the olive oil (2 tablespoons) and add seasoning on top (1-2 teaspoons; see notes). Toss to coat and spread everything out evenly.
- Roast the potatoes, onions, and garlic for 20 minutes. Remove, stir, spread it all back out, and roast for another 15 minutes. Remove, stir (I like using a metal spatula for this), and spread it all back out.

- Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
- Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first.
