I got this from a newspaper food section. My kids love this, and I plan on sending this posting to my daughter in Texas so she can start cooking the good stuff..........

Steps:
- Cook potatoes in boiling water, about 25 minutes or until tender.
- Cut zucchini into 1/4 inch slices.
- In skillet, heat 2 Tbs. butter.
- Add zucchini and cook, turning occasionally, about 3 minutes.
- Cut potatoes into chunks and add to zucchini.
- In small saucepan or microwave, melt remaining 2 Tbs. butter.
- Add tarragon, chives, salt and pepper.
- Pour over vegetables and toss gently.

BROILED ZUCCHINI AND POTATOES WITH PARMESAN CRUST

Steps:
- Bring a medium pot of water to a boil over high heat. Add the potatoes and cook until just tender, about 8 to 10 minutes. Drain the potatoes and let cool. When cool, cut the potatoes in half.
- Place a medium saute pan over medium heat. Add the butter, garlic, thyme and rosemary and let cook until the butter melts, about 2 minutes. Meanwhile, season the cut sides of the zucchini and potatoes with salt and pepper. Carefully place the zucchini and potatoes cut side down in the melted butter. Let them cook until golden brown, about 12 to 15 minutes.
- Preheat the broiler. Line a baking sheet with foil. Place the browed zucchini and potatoes on the baking sheet cut side up. Sprinkle the tops with the Parmesan. Place in the broiler until the cheese is golden brown, about 4 minutes. Transfer to a plate and serve.
ROASTED RED POTATOES & ZUCCHINI
Good side dish for potato lovers that need to try and incorporate some more green veggies. I used dry dill because it is what I had. You can use fresh as well. Probably tastes better. Use seasonings to taste. Just had to add them in to the ingredients for a more accurate calorie count. Also, I used this recipe as 2 servings with my meal because I had no other side dishes. If you have other sides, you could break this up into 3 or 4 servings.

- Cube potatoes and slice zucchini - cut bigger pieces in half
- put in ziplock bag
- add olive oil and seasonings and close bag
- shake until everything is coated well
- spray cooking spray into baking dish
- put veggies in dish in a single later
- bake covered for 30 minutes
- remove cover and bake for another 5 minutes
