ROBYN'S CROCK POT HERB ROASTED POTATOES

This is an easy side dish recipe for the crock pot. Adjust seasonings to your liking because I don't know if the measurements are exact. I also make these in the oven, just bake at 350 degrees for 30-45 minutes or until tender.

6 medium potatoes
1/4 cup water
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon instant minced onion
1/2 teaspoon dried dill
1 teaspoon italian seasoning
1 teaspoon dried parsley
4 tablespoons butter

Steps:

  • Chop potatoes into half moons (slice potato in half longways, then into pieces). Place into crock pot.
  • Add water and sprinkle with all the herbs and seasoning. Stir to distribute the herbs.
  • Add butter in separate pieces on top of the potatoes.
  • Cover and cook on low for 5 hours or until tender.
  • Note: It may take less time to cook, I'm never home to check when they are actually ready! I've let them cook up to 8 hours and they are still good.

10 -12 medium red potatoes, cut in quarters
1/4 cup fresh lemon juice
1/8 cup butter or 1/8 cup margarine, melted
3 garlic cloves, minced
2 tablespoons fresh thyme leaves, minced
3/4 teaspoon salt
1/2 teaspoon paprika
1/4 cup fresh Italian parsley, chopped

Steps:

  • Combine all of the ingredients except the parsley in the slow-cookers.
  • Make sure that the potatoes are evenly coated with the herbs and seasonings.
  • Cover; cook on low 6-8 hours (or on high 3-4 hours).
  • Before serving, toss potatoes with the fresh parsley for added color and flavor.

8 ounces cream cheese, softened
10 3/4 ounces cream of mushroom soup or 10 3/4 ounces cream of potato soup
1 ounce dry ranch dressing mix
1/2 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Mix all ingredients in a greased slow cooker.
  • Cover and Cook on Low for 6-8 hours, until potatoes are tender.

I don't remember where I got this recipe, but it has become one of our favorites. You can cover any leftover potatoes and refrigerate or freeze. Reheat quickly in the microwave, adding a little milk for desired consistency.

3 lbs red potatoes
4 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 cup water
1/2 cup cream cheese with chives and onions (from an 8-ounce tub)
1/4-1/2 cup milk

Steps:

  • Halve or quarter potatoes as necessary to make similar size pieces.
  • Place in a 4 to 6 quart crock pot.
  • Add garlic, oil, salt and water; mix well to coat all potato pieces.
  • Cover and cook on HIGH for 3-1/2 to 4-1/2 hours or until potato pieces are tender.
  • With a fork or potato masher, mash potatoes and garlic.
  • Stir in cream cheese until well blended.
  • Stir in enough milk for soft serving consistency.
  • Serve immediately, or cover and hold in slow cooker on LOW setting for up to 2 hours.
  • I have used a 3 ounce piece of cream cheese, cubed, in place of the tub of cream cheese and chives and onions.

7 cups cubed uncooked red potatoes
1 cup 4% cottage cheese
1/2 cup sour cream
1/2 cup cubed process cheese (Velveeta)
1 tablespoon dried minced onion
2 garlic cloves, minced
1/2 teaspoon salt
Optional: Paprika and minced chives

Steps:

  • Place the potatoes in a 3-qt. slow cooker. In a blender, puree cottage cheese and sour cream until smooth. Transfer to a large bowl; stir in the process cheese, onion, garlic and salt. Pour over potatoes and mix well., Cover and cook on low for 5-6 hours or until potatoes are tender. Stir well before serving. Garnish with paprika and chives if desired.

I love recipes that free up my time in the kitchen. I love serving these potatoes with Southern-Style Green Beans. This recipe comes from Not Your Mother's Slow Cooker Cookbook. I use my Rival two sided insert so I can cook both at the same time.

2 lbs small waxy boiling potatoes
4 -5 garlic cloves, to your taste, peeled
1 tablespoon olive oil
1/2 teaspoon dried rosemary
1/4 teaspoon kosher salt or 1/4 teaspoon coarse sea salt
1 pinch dried thyme

Steps:

  • Yukon Gold, baby new red or white potatoes work well for this recipe.
  • Scrub the potatoes and drain them.
  • Put them in the slow cooker with the garlic. Drizzle with the olive oil and sprinkle with the rosemary, salt, and thyme.
  • With a spoon or your hands, toss the potatoes and garlic to coat them lightly witht the oil and herbs.
  • Spread out the potatoes as evenly as possible in the crock.
  • Cover and cook on High until the potatoes are tender withen pierced with a sharp knife, 2 1/2 to 3 1/2 hours.
  • Serve immediately.

2 tablespoons of melted butter
1/2 teaspoon coarse salt

Steps:

  • Wash the potatoes and scrub lightly with a vegetable brush. Scrubbing too vigorously removes the skin, which is part of the appeal of red potatoes.
  • Cut into 1/2 to 3/4 inch wedges. Dry with paper towels and set aside.
  • Pour the olive oil into a large bowl and add the potatoes; stir to evenly coat the wedges.
  • Sprinkle with the seasoning, and stir well.
  • Pour the melted butter into the bottom of the crock pot, and add the potato mixture.
  • Ste the crock pot on low, and allow to roast for 4-5 hours until fork tender.
