ROASTED PORK LOIN WITH ROASTED GARLIC VINAIGRETTE

Steps:
- Preheat the oven to 475 degrees F.
- For the roasted garlic:
- Cut the bulbs of garlic in half crosswise into a top and bottom. Place the garlic halves on a sheet of foil, drizzle with olive oil and sprinkle with salt. Fold the foil up and around the garlic halves, making sure they stay flat. Seal the foil into an airtight package. Roast until golden and soft, about 60 minutes. Keep the garlic in the foil and let cool slightly.
- For the pork:
- Place the pork loin in a medium, heavy roasting pan. Season all sides with salt and pepper. Place the pork in the oven 30 minutes after the garlic has started roasting. Roast until an instant-read thermometer registers 140 to 145 degrees F, about 30 to 40 minutes. Remove the roasting pan from the oven, tent the pork loin with foil, and let rest for 15 minutes.
- For the vinaigrette:
- Remove the garlic from the foil. Remove the cloves by squeezing the base of the garlic. Place the garlic, parsley, and balsamic vinegar in a blender. Pulse the machine until blended. Drizzle the oil into the blender while the machine is running. Add the sugar, salt, pepper, and water and blend until incorporated.
- To serve:
- Slice the pork into 3/4-inch thick slices and transfer to a serving platter. Drizzle some of the vinaigrette over the pork and pass the remaining vinaigrette alongside the pork in a small dish.

- Cut a horizontal slit in the pork tenderloin, leaving the halves attached. Rub tenderloin with olive oil.
- Insert garlic into the slit and on onto the fatty part of pork. Press thyme and rosemary into slit. Sprinkle tenderloin with salt and pepper.
- Preheat an outdoor grill for medium-high heat.
- Lightly oil the grill grate. Place pork on grill. Cook approximately 1 hour, turning every 15 minutes, to a minimum internal temperature of 145 degrees F (63 degrees C).

GARLIC PORK TENDERLOIN WITH MUSHROOM GRAVY
One of my family's favorites. If you aren't a garlic fan, pass on this one. A diet breaker, but worth it. Pork tenderloin are often sold 2 to a bag, so they are perfect for this dish. Serve extra gravy with mashed potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- Rub salt and pepper over all sides of pork tenderloins; nestle tenderloins next to each other in a 9x13-inch baking dish.
- Melt butter in a saucepan over medium heat; add garlic and mushrooms. Bring to a boil, reduce heat to medium-low, and simmer, stirring frequently, until sauce is fragrant, about 5 minutes. Stir vinegar into mushroom sauce. Pour mushroom sauce over tenderloins, letting sauce seep between the two tenderloins.
- Bake in the preheated oven until tenderloins are lightly pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer tenderloins to a serving dish.
- Drain the drippings, including mushrooms, from the baking dish into a measuring cup, scraping the bottom to get all the brown bits. Remove 1/4 cup of the fat from the mixture and pour into a saucepan. Add enough chicken broth to the drippings to make 2 cups; whisk flour into drippings until incorporated. Stir broth-drippings mixture into the saucepan with fat over medium heat until thickened, about 5 minutes; season with salt and pepper.
- Slice tenderloins into medallions and top with half the gravy. Pour the remaining gravy into a gravy boat for serving.

Steps:
- Preheat oven to 350 degrees.
- Melt the butter and oil in a large, oven safe pan with a lid.
- Season the pork by rubbing it with the lemon pepper and half of the garlic and then rolling it in flour.
- Brown the pork on all sides over medium heat; this should take roughly 10 minutes. Remove the pork to a plate.
- Add the onions and mushrooms to the pan and brown for 5 minutes, then add tomatoes and stir to coat everything. Add the remaining garlic and the chicken stock. Stir well and then place the pork on top.
- Cover the pan and return to the oven for 45 - 60 minutes until the pork is done.
- Remove the pork from the pan, and add the cream to lightly thicken the sauce.
- Let the pork rest for approx 7 minutes, then slice and serve atop rice or noodles and pour some sauce over the top of the pork.

- In a small bowl stir together the salt, black pepper, cumin, chili powder and cinnamon.
- Using clean hands rub the spice mixture over the pork to coat well.
- Heat a large heavy oven-proof skillet with oil over medium-high heat until very hot.
- Add in tenderloins (if you have a large enough skillet to brown both at the same time).
- Brown the pork on all sides then leave in the skillet.
- Set oven to 350 degrees F.
- To make the glaze: Stir together brown sugar, garlic and Tabasco; pat onto the top of each tenderloin.
- Roast in the middle of the oven for about 20-22 minutes, or until a thermometer registers 140°F.
- Let sit in the skillet for 10 minutes at room temperature (the temperature of the pork will rise to about 155F while standing for the 10 minutes).
- Remove to a board and slice.
- Delicious!

- Preheat oven to 425 degrees F.
- Rub pork on all sides with salt and pepper.
- Place pork on one side of a large roasting pan.
- In a large bowl combine mushrooms, tomatoes, oil, garlic, and salt and pepper to taste; mix gently.
- Spoon vegetables into pan with pork, spreading in an even layer.
- Roast until meat thermometer inserted in the middle of the pork registers 160 degrees F.
