OVERNIGHT CINNAMON SWIRL CRANBERRY FRENCH TOAST
I had some homemade cinnamon swirl bread that I needed to use up so this recipe was born. Very easy to put together and bake the next morning.

Steps:
- Place cubed bread in GREASED casserole and cover with cranberries evenly.
- Mix remaining ingredients in a small bowl.
- Pour over bread cubes.
- Put in fridge overnight. The next morning.
- turn on oven to 350°F Place cold casserole in middle of cold oven. Once oven gets to temperature, set timer for 40 minutes. Bake till center is set and knife inserted comes out clean.

CINNAMON SWIRL FRENCH TOAST

- In a medium bowl whisk flour & milk together. Add salt, eggs, cinnamon, vanilla and white sugar. Mix well. Heat up a griddle or frying pan on medium heat with 2 tablespoons of butter, allow butter to melt. Whisk batter again to evenly distribute cinnamon and then dip bread into mixture and put in hot pan. Whisk batter between each dip as cinnamon will float to top. Cook french toast on each side until cooked through and golden. (approx. 2 minutes each side). Add more butter between batches to ensure pan stays well coated. Serve immediately.

EASY CINNAMON FRENCH TOAST
This recipe is off of a sample card I received in the mail. It's a great way to make cinnamon french toast without using cinnamon bread. Easy enough to make any day of the week and they feeze well.

Steps:
- Beat eggs with wire whisk until foamy.
- Add milk, cinnamon and vanilla; Beat well.
- Spray large non-stick skillet with cooking spray. Heat over medium heat. You can also use a griddle set at 375.
- Dip bread into batter and cook until golden brown, about 1-2 minutes per side. Whisk the batter before you dip each slice to distribute the cinnamon.
- These can be made low fat by replacing the eggs with 4 whites or 1/2 cup egg substitute and using fat free milk. I usually double the recipe and refrigerate (up to a week) or freeze (2 months) the leftovers.

- Beat eggs, yogurt, milk, salt, cinnamon, nutmeg, and vanilla in a mixing bowl.
- Heat a lightly oiled skillet over med-high.
- Dunk each slice of bread into egg mix, and soak both sides.
- Place in pan and cook on both sides until golden.
- Serve hot and top with yogurt and fresh berries, or your favorite syrup.

- Heat a griddle or large frying pan on medium heat. In a shallow bowl or plate, whisk together the eggs, milk, vanilla extract and cinnamon until combined.
- Poke each bread slice a few times with a fork and then dip each side of the bread slice in the egg mixture. Coat until each slice is coated completely in the mixture. I like to put all of my coated bread slices on a baking sheet lined with foil.
