- Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
- Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
- Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

- Begin by scrambling the eggs in one bowl and combining the salt, black pepper, Italian Seasoning, flour, and grated parmesan in another bowl. Dredge each chicken cutlet in the egg mixture, then coat completely in the parmesan cheese mixture.
- Heat the oil in a large skillet over medium high heat. Once hot, add the chicken breast cutlets and sear for 2 minutes on each side. The chicken should release when it is ready to turn. It is important not to move the chicken around until it is time to flip so it gets a nice crust.
- Then place the lid on the skillet, reduce the heat to low and continue to cook for 3-6 minutes or until the chicken is cooked through to a internal temp of 165˚F. (Time will vary based on thickness of the chicken.) Once cooked, remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and garlic and increase the heat to medium. Stir until the butter is melted.
- Add the chicken stock (or wine) and lemon juice and bring to a simmer. Simmer until it has reduced by about 1/3, then stir in the basil.
- Nestle the chicken into the sauce and simmer for 2-3 minutes. Garnish with fresh basil and serve hot. Enjoy!

- Cut chicken breasts in half lengthwise to make 4 pieces (try to make them equal sized for an even cooking). Set aside.
- Prepare the marinade. In a large glass bowl combine lemon juice, honey, water, garlic and basil. (You can also use a large ziplock bag: add all the ingredients, seal and shake to combine).
- Place chicken in the marinade bowl (or ziplock bag) and toss so that all the breasts are covered with marinade. Cover bowl with plastic wrap, refrigerate and marinate for one hour (or at least 30 minutes).
- When chicken has marinated, heat olive oil in a non stick skillet, on high heat. Remove chicken from marinade, paying attention to remove all the garlic and basil leaves that may have sticked to the breasts (they would burn while cooking).
- When skillet is very hot, brown chicken breasts 2 minutes per side (4 minutes total). Pour the marinade in the skillet and mix well to get all the meat juices. Bring to a boil (this will happen very quickly) and cook for one minute.
- Reduce to a rapid simmer (medium heat) and cook for 5 more minutes, basting the sauce over the chicken breasts regularly. Chicken is ready when no longer pink inside (don't over cook to make sure chicken isn't dry).
- To serve, place chicken on a plate, and spoon sauce on top. Scatter fresh basil or parsley, if using, and serve.
- Sides suggestion: mashed potatoes or mashed cauliflower to soak up all the sauce, with a green salad on the side.

- Sprinkle chicken, both sides, with basil (1 T per piece). It should be a liberal coating; you can even use more than what's listed.
- Heat a fry pan on medium-high and add 1 T of the olive oil.
- Mix remaining oil, lemon juice and soy sauce. Set aside.
- Brown chicken in oil, both sides. Add liquid mix. Bring to a boil.

LEMON BASIL ORZO WITH CHICKEN

- In a pot of generously salted water, cook orzo just until al dente; don't overcook. Drain and toss with about 2 TB olive oil to prevent sticking. Keep warm.
- While pasta is cooking: pat dry the moisture from chicken tenders with paper towels. In a small bowl, whisk together 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1 tsp garlic powder. Sprinkle evenly on both sides of chicken pieces.
- In a large skillet (not non-stick) add 4 TB olive oil over medium high heat. When oil is hot, cook chicken tenders just until no longer pink in center, about 2-3 min per side (depending on thickness of chicken.) Remove chicken from pan and keep warm.
- In same used skillet, add the butter over medium high heat. Once melted, add garlic and onion, stirring 1-2 minutes until fragrant. - Clean and trim fat from chicken, and salt and pepper each side. Place chicken in a baking dish, skin side up.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
- Wash chicken breasts and pat dry with paper towels. Trim and discard fat. Tenderize chicken with a meat mallet. Rub 1 tablespoon olive oil on each breast, lightly covering both front and back. Season with salt, pepper, and garlic powder and set on the prepared baking sheet.

- Preheat the oven to 425 degrees F and set a wire rack on a rimmed baking sheet. Bring a medium saucepan of salted water to a boil. - 1. Pound out a 4 oz. boneless skinless chicken breast with meat mallet until thin. Put oil of your choice in fry pan, heat on medium heat. Salt and pepper the chicken, place in heated pan.
- 2. Cook 1 minute, then turn chicken over and turn heat to low. Cover pan and let it cook for 10 minutes. Turn off the heat and let set for 10 more minutes. Check with meat thermometer. 165° reading is done. Set aside.
- 3. Cook the pasta according to package directions. Drain, set aside.
- 4. In another pan saute kale greens in oil of your choice, add a little salt and pepper, remove greens to a plate, add a little more oil and saute the yellow squash until soft.
- 5. Combine Pasta, Greens, Squash, Artichoke Hearts in a bowl, I added the fresh lemon juice in the basil pesto sauce with the roasted red peppers. Pour over ingredients, reserving a little. toss to coat.
