4 chicken breast halves, boned and skinned
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh basil
1 tablespoon lemon zest

Steps:

  • Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
  • Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
  • Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

1.5 lbs chicken breast cutlets ((5-6 thin pieces))
2 tbsp olive oil
2 large eggs
1 cup grated parmesan
1/4 cup flour
1 tsp Italian Seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup chicken broth ((or white wine))
6 tbsp butter
4 garlic cloves
1/4 cup lemon juice ((about 1 lemon))
1/2 cup fresh chopped basil (about 15 leaves)

Steps:

  • Begin by scrambling the eggs in one bowl and combining the salt, black pepper, Italian Seasoning, flour, and grated parmesan in another bowl. Dredge each chicken cutlet in the egg mixture, then coat completely in the parmesan cheese mixture.
  • Heat the oil in a large skillet over medium high heat. Once hot, add the chicken breast cutlets and sear for 2 minutes on each side. The chicken should release when it is ready to turn. It is important not to move the chicken around until it is time to flip so it gets a nice crust.
  • Then place the lid on the skillet, reduce the heat to low and continue to cook for 3-6 minutes or until the chicken is cooked through to a internal temp of 165˚F. (Time will vary based on thickness of the chicken.) Once cooked, remove the chicken from the skillet and set aside.
  • In the same skillet, add the butter and garlic and increase the heat to medium. Stir until the butter is melted.
  • Add the chicken stock (or wine) and lemon juice and bring to a simmer. Simmer until it has reduced by about 1/3, then stir in the basil.
  • Nestle the chicken into the sauce and simmer for 2-3 minutes. Garnish with fresh basil and serve hot. Enjoy!

2 large chicken breasts (about 1.5 lbs / 680 grams total)
8 tbsp lemon juice (from about 3 large lemons)
1 1/2 tbsp honey
2 tbsp water
3 cloves garlic (minced)
12 fresh basil leaves (roughly chopped)
salt (to taste)
freshly cracked pepper (to taste)
1/2 tbsp olive oil
fresh parsley (chopped, to serve - optional )

Steps:

  • Cut chicken breasts in half lengthwise to make 4 pieces (try to make them equal sized for an even cooking). Set aside.
  • Prepare the marinade. In a large glass bowl combine lemon juice, honey, water, garlic and basil. (You can also use a large ziplock bag: add all the ingredients, seal and shake to combine).
  • Place chicken in the marinade bowl (or ziplock bag) and toss so that all the breasts are covered with marinade. Cover bowl with plastic wrap, refrigerate and marinate for one hour (or at least 30 minutes).
  • When chicken has marinated, heat olive oil in a non stick skillet, on high heat. Remove chicken from marinade, paying attention to remove all the garlic and basil leaves that may have sticked to the breasts (they would burn while cooking).
  • When skillet is very hot, brown chicken breasts 2 minutes per side (4 minutes total). Pour the marinade in the skillet and mix well to get all the meat juices. Bring to a boil (this will happen very quickly) and cook for one minute.
  • Reduce to a rapid simmer (medium heat) and cook for 5 more minutes, basting the sauce over the chicken breasts regularly. Chicken is ready when no longer pink inside (don't over cook to make sure chicken isn't dry).
  • To serve, place chicken on a plate, and spoon sauce on top. Scatter fresh basil or parsley, if using, and serve.
  • Sides suggestion: mashed potatoes or mashed cauliflower to soak up all the sauce, with a green salad on the side.

1/2 lb dry orzo pasta
2 lbs chicken breast tenders
Olive oil
Kosher salt and freshly ground black pepper
1 tsp garlic powder
2 TB salted butter
6 cloves garlic (chopped)
1 onion (chopped)
1 cup dry white wine
2 TB freshly squeezed lemon juice
1 cup freshly grated parmesan cheese
1/2 cup freshly torn basil leaves
Garnish: Lemon wedges (more parmesan, extra basil leaves)

Steps:

  • In a pot of generously salted water, cook orzo just until al dente; don't overcook. Drain and toss with about 2 TB olive oil to prevent sticking. Keep warm.
  • While pasta is cooking: pat dry the moisture from chicken tenders with paper towels. In a small bowl, whisk together 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1 tsp garlic powder. Sprinkle evenly on both sides of chicken pieces.
  • In a large skillet (not non-stick) add 4 TB olive oil over medium high heat. When oil is hot, cook chicken tenders just until no longer pink in center, about 2-3 min per side (depending on thickness of chicken.) Remove chicken from pan and keep warm.
  • In same used skillet, add the butter over medium high heat. Once melted, add garlic and onion, stirring 1-2 minutes until fragrant. Add wine; deglaze pan by scraping bits loose with your spatula while the liquid cooks. Reduce liquid by half, about 3 minutes. Add lemon juice and turn off heat. Add kosher salt and freshly ground pepper to taste (1/4-1/2 tsp each.)
  • Place cooked orzo in a large serving bowl; toss with freshly grated parmesan and onion/garlic mixture. Toss in basil leaves. Serve with chicken and garnish as desired.

4 large fresh basil leaves
4 garlic cloves, mashed slightly with the side of a knife

  • Preheat oven to 400°F.

2 tablespoons olive oil, or more as needed

1 medium lemon, halved

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.

3 cups fresh basil leaves
1 stick unsalted butter, at room temperature
1 clove garlic, grated
Finely grated zest of 1 lemon
1 3 1/2-pound chicken
Freshly ground pepper
1 1/2 pounds baby potatoes
1 tablespoon white wine vinegar
1 teaspoon whole-grain mustard
3 tablespoons extra-virgin olive oil
1 head frisee, torn (about 5 cups)
2 plums, cut into 1/2-inch wedges

Steps:

  • Preheat the oven to 425 degrees F and set a wire rack on a rimmed baking sheet. Bring a medium saucepan of salted water to a boil. Add 2 cups basil; cook 30 seconds, then drain and rinse under cold water. Transfer to a food processor and puree with the butter, garlic, lemon zest and 1/2 teaspoon salt until smooth. Set aside.
  • Spatchcock the chicken: Cut along each side of the backbone with kitchen shears; discard the backbone. Open the chicken like a book; flip over. Press down on the backbone to flatten. Gently loosen the skin from the breasts and thighs using your fingers. Transfer half of the basil butter to a bowl and rub all over the chicken and under the skin; season with salt and pepper. Transfer skin-side up to the rack. Roast until the skin is browned and crisp and a thermometer inserted into a thigh registers 165 degrees F, about 45 minutes. Transfer to a cutting board and let rest 15 minutes.
  • Meanwhile, fill a medium saucepan with water; season with salt and add the potatoes. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 12 minutes. 4 chicken breast halves with skin and bones (8 to 10 ounces each), fat trimmed or 1 whole chicken (about 2 pounds) cut up
Salt and freshly ground black pepper
4 large basil leaves
4 cloves garlic, bruised with the side of a knife
4 thin lemon slices
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F. Place the chicken in a baking dish; sprinkle both sides with salt and pepper and arrange skin side up. Loosen the skin from each chicken breast and slip a basil leaf between the skin and the meat. Add the garlic to the baking dish. Place a slice of lemon on top of each piece of chicken. Drizzle with oil. Bake, basting occasionally with pan juices and turning the chicken and the baking dish occasionally so the chicken browns evenly, 35 to 40 minutes. If using a whole chicken, the baking time will be about 50 minutes. To serve, place a browned lemon slice and garlic clove on top of each portion of chicken.

This is my Version of a Healthy Choice Frozen Steamer Meal. I tried it and really liked it. So I decided to make it myself. My first try. You can adjust ingredients, and steps to make a larger amount. I cook for one. ( ME )

1 boneless skinless chicken breast
2/3 c cooked penne pasta
1 c fresh kale greens cut up
1/4 c jarred basil pesto
1/4 c jarred artichoke hearts
2 Tbsp jarred roasted red bell peppers
1 small yellow squash sliced
2 Tbsp fresh squeezed lemon juice

Steps:

  • 1. Pound out a 4 oz. boneless skinless chicken breast with meat mallet until thin. Put oil of your choice in fry pan, heat on medium heat. Salt and pepper the chicken, place in heated pan.
  • 2. Cook 1 minute, then turn chicken over and turn heat to low. Cover pan and let it cook for 10 minutes. Turn off the heat and let set for 10 more minutes. Check with meat thermometer. 165° reading is done. Set aside.
  • 3. Cook the pasta according to package directions. Drain, set aside.
  • 4. In another pan saute kale greens in oil of your choice, add a little salt and pepper, remove greens to a plate, add a little more oil and saute the yellow squash until soft.
  • 5. Combine Pasta, Greens, Squash, Artichoke Hearts in a bowl, I added the fresh lemon juice in the basil pesto sauce with the roasted red peppers. Pour over ingredients, reserving a little. toss to coat.
  • 6. In a pan and the combined ingredients, top with the chicken breast and drizzle the reserved pesto sauce over the chicken. Heat and serve.
