12 large unpeeled garlic cloves, divided
1 tablespoon chopped fresh rosemary leaves
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter, melted
1 (6-pound) boneless leg of lamb, trimmed and tied
4 to 5 pounds small unpeeled potatoes (16 to 20 potatoes)
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 450 degrees F. Place the oven rack in the lower third of the oven so the lamb will sit in the middle of the oven.
  • Peel 6 of the cloves of garlic and place them in the bowl of a food processor fitted with the steel blade. Add the rosemary, 1 tablespoon salt, 1 teaspoon pepper, and butter. Process until the garlic and rosemary are finely minced. Thoroughly coat the top and sides of the lamb with the rosemary mixture. Allow to sit at room temperature for 30 minutes to 1 hour.
  • Toss the potatoes and remaining unpeeled garlic in a bowl with the olive oil and sprinkle with salt. Place in the bottom of a large roasting pan. Place the lamb on top of the potatoes. Roast for 20 minutes. Turn the heat down to 350 degrees F and roast for another 1 to 1 1/4 hours, until a meat thermometer registers 130 to 135 degrees F for medium-rare. Place the lamb on a cutting board, cover with aluminum foil, and allow to rest for 15 minutes. Slice and serve with the potatoes.

Steps:

  • For Sauce: Stir marmalade in small skillet over medium heat until marmalade melts. Strain into small bowl, discarding solids. Return marmalade to skillet. Stir in remaining ingredients. Stir over medium heat until blended and warmed through, about 2 minutes. Season with salt and pepper. (Can be made 2 days ahead. Cover; chill. Rewarm before using.) For Lamb Chops: Mix rosemary, basil, garlic, and orange peel in small bowl. Brush olive oil over lamb; sprinkle with salt and pepper. Divide herb mixture among racks of lamb, spreading all over and pressing to adhere. Cover; chill at least 1 hour and up to 1 day. Preheat oven to 475 degrees F. Cut each lamb rack into double chops. Stand chops, rounded side up, on rimmed baking sheet. Roast chops until thermometer inserted into center registers 130 degrees F for medium-rare, about 12 minutes. Let stand 10 minutes. 6 to 8 large cloves garlic, quartered
2 cups panko bread crumbs (Japanese)
3 to 4 sprigs fresh rosemary, stripped from the stems
1/4 to 1/2 cup olive oil
Salt and freshly ground black pepper
6 to 8 loin lamb chops
1/4 cup grapeseed oil

Steps:

  • Preheat oven to 325 degrees F.
  • Place the garlic, bread crumbs, and rosemary in a food processor and pulse for a few seconds to chop, then add enough olive oil until a paste is formed. Season with salt and pepper. Press paste firmly onto surface of lamb chops. Heat grapeseed oil over medium heat in a saute pan and brown each side of the chops, leaving undisturbed for the first 2 minutes to allow the crust to integrate into the meat. Place on a baking sheet and finish in the oven, for approximately 6 to 8 additional minutes.

2 onions, chopped
1 clove garlic, minced
3 tablespoons butter
2 cups bitter orange marmalade (available in specialty shops)
3 tablespoons malt vinegar
2 tablespoons of fresh mint, chopped (or 2 tsp dried)
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Melt the butter, over moderate heat, in a large saucepan, add the onions& garlic.
  • Cook until just beginning to brown-5 minutes.
  • Add the lamb and cook until browned lightly 8-10 minutes.
  • Add the marmalade, vinegar, mint, salt& cayenne.
  • Cook, stirring once in a while, covered for about 20 minutes.
  • Season to taste.

2 pounds lamb loin chops
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon cumin
1 teaspoon mixed herbs - Italian, Greek, or French blend
½ teaspoon black pepper
½ teaspoon ground coriander
¼ teaspoon cinnamon
1 pinch cayenne pepper
salt as needed
¼ cup orange marmalade
1 pinch hot chili flakes
½ tablespoon rice vinegar
1 tablespoon chopped fresh mint

Steps:

  • Place lamb chops in a large bowl. Season with olive oil, garlic, cumin, mixed herbs, pepper, coriander, cinnamon, cayenne, and salt. Toss until well coated with oil and seasonings. Cover and refrigerate. Allow to marinate at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Place lamb chops on grill. Sprinkle the chops with a bit of salt. Grill until seared on the first side, 4 to 7 minutes depending on the size of the chops. Rotate chops a half turn on the grill about a minute before turning them. Turn and grill the other side to desired doneness, another 4 to 7 minutes. For medium rare, an instant-read thermometer inserted into the center should bead 125 to 130 degrees F (54 degrees C). Transfer to a serving dish and tent loosely with foil.
  • Place marmalade in bowl. Add chili flakes, mint, and rice vinegar. Stir together thoroughly.
  • Brush the sauce over the chops and serve.

6 shoulder lamb chops, cut 3/4 inch thick
1/2 teaspoon shredded orange rind
1/4 cup orange juice
1/2 teaspoon dried thyme, crushed
1 tablespoon oil or 1 tablespoon butter
salt, to taste
pepper, to taste
1/2 cup sliced mushrooms (if canned, drain before using)
1 teaspoon butter

Steps:

  • In a small pan, sauté sliced mushrooms in 1 teaspoon of butter, until mushroom juices evaporate; then set aside (if using canned mushrooms, omit this step).
  • Trim excess fat from chops.
  • Combine orange peel, juice and thyme; spoon mixture over chops.
  • Let chops marinate for 1 hour at room temperature (or about 3 hours in refrigerator), turn chops once or twice.
  • Remove chops from marinade, and reserve.
  • Brown chops on both sides in hot shortening; season with salt and pepper.
  • Add reserved orange mixture and mushrooms.
  • Cover pan and simmer for 40 minutes.
  • Uncover pan and simmer about 5 minutes longer.

Thanks to a Mrs. Keiller of Dundee, who bought a load of surplus oranges and made them into marmalade, Dundee will forever be associated with that fruit (and jute and journalism as well as jam). So whenever marmalade is added to a Scottish recipe it is immediately labeled as "Dundee". The quantities below will serve four (unless the chops are very small or the appetites are large).

4 leg lamb chops
2 1/2 fluid ounces vinegar
1/2 teaspoon ground ginger
4 tablespoons keiller's marmalade or 4 tablespoons robertson's marmalade

2 1/2 fluid ounces water
1/2 teaspoon paprika
salt and pepper, to taste

Steps:

  • You will need a frying pan with a heavy base and a close-fitting lid.
  • First, brown the chops in the butter.
  • Sprinkle the ginger, paprika, salt and pepper over the chops and add water and vinegar.
  • Place a generous tablespoon of marmalade on the top of each chop.
  • Bring to a slow simmer and cook for 45 minutes on a very low heat.
  • If required, add a little extra water.

LAMB CHOPS WITH BALSAMIC REDUCTION

This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

¾ teaspoon dried rosemary
¼ teaspoon dried basil
½ teaspoon dried thyme
salt and pepper to taste
4 lamb chops (3/4 inch thick)
1 tablespoon olive oil
¼ cup minced shallots
⅓ cup aged balsamic vinegar
¾ cup chicken broth
1 tablespoon butter

Steps:

  • In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
  • Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
  • Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.
