HERBY ROASTED GARLIC OLIVE OIL DIP



Herby Roasted Garlic Olive Oil Dip image

An easy olive oil dip loaded with herbs and roasted garlic, making it a super flavorful appetizer! Serve with warm crusty bread for the ultimate experience!

1 whole garlic bulb
1/2 teaspoon dried rosemary
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 cup high-quality olive oil + drizzle for garlic
1/8 teaspoon red pepper flakes (or to taste)
1/4 teaspoon fine sea salt (or to taste)
1/4 teaspoon freshly ground black pepper (or to taste)
Half of a lemon (juiced (~1/2 - 1 TBSP))

Steps:

  • Preheat oven to 425°F. Remove excess paper from the exterior of the garlic bulb, and cut the top of the bulb off, exposing the top of the cloves inside. Place in the center of a piece of foil that's large enough to cover the bulb. Drizzle with olive oil and add a pinch of salt. Wrap foil around the bulb, and roast in the oven for 20-25 minutes until tender and golden brown. Set aside to cool slightly.
  • Meanwhile, combine dried herbs, olive oil, red pepper flakes, salt, and pepper in a small dish. Add the squeeze of lemon. Once garlic has cooled enough to handle, flip upside down and squeeze out the garlic bulbs. Combine with the rest of the ingredients. Let sit for approximately 30 minutes to allow the flavor to develop (the longer the better!).
  • Serve with warm crusty bread and enjoy!

1 head of garlic (halved)
2 tsp olive oil
½ cup olive oil
2-3 tsp lemon juice (to taste )
2 tsp dried oregano ((rosemary, thyme or sage will also be delicious))
1 tsp chilli flakes / red pepper flakes ((or to taste))
salt and pepper (to taste )
bread (for serving)

Steps:

  • Preheat the oven to 200°C/400°F.
  • Place the halved head of garlic on a piece of foil then drizzle over the two teaspoons of oil and season with salt. Wrap in the foil, making sure the garlic is completely enclosed.
  • Place in the oven and allow to roast for 30-45 minutes or until completely soft.
  • Remove from the oven and allow to cool for 15 minutes.
  • Squeeze the roasted garlic out of the papery skins and mash into a bowl.
  • Add the olive oil, herbs, chilli flakes, lemon juice, salt and pepper. Mix then taste and adjust seasoning if necessary.
  • Serve the dip with good bread.

1 medium bulb garlic, end cut off, 1 clove reserved
1 tablespoon extra-virgin olive oil, plus some for drizzling
1 cup walnut halves, toasted
1 1/2 cups feta cheese, crumbles
1/2 cup milk
1 teaspoon dried oregano
1/4 cup flat-leaf parsley, a handful of leaves
Freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
1 large clove garlic, reserved from above, cracked away from skin
4 flat breads or pitas, cut into wedges and toasted

Steps:

  • Preheat oven or toaster oven to highest setting. Pour oil over cut side of garlic bulb and rub into skin. Double wrap garlic in foil and roast 20 to 25 minutes in toaster oven or hot conventional oven.
  • Combine walnuts, feta, milk, oregano, parsley, black pepper, red pepper and garlic clove in food processor and pulse process until spread is smooth. Scrape spread into serving dish with spatula. Drizzle dip with extra-virgin olive oil and serve.
  • When you remove garlic from the oven, turn heat off. Arrange triangles of cut pita or flat brad on a small tray or cookie sheet. Place bread into the hot toaster oven or conventional oven. The bread will be warmed through and lightly toasted in 5 minutes.

2 whole heads garlic
1/2 cup good quality EV olive oil+ 2 tbsp
Crusty bread
1/2 tsp salt
1/2 tsp dill- finely chopped
1/2 tsp onion powder
1/2 tsp dried oregano
1/4 tsp marjoram
1/4 tsp pepper
Garnish fresh dill

Steps:

  • Roast Garlic- Preheat oven to 400. Peel most of the outer layers of garlic bulbs. Cut off the tops to expose cloves. Drizzle each garlic bulb with a but of olive oil and tightly wrap each in aluminum foil. Place bulbs on a baking sheet and roast 35-40 minutes. Allow bulbs to cool enough to easily touch, then peel gently peel cloves.
  • Mix and Serve: In a small serving bowl, mix extra virgin olive oil with dill, onion powder, dried oregano, marjoram, salt and pepper. Top with roasted garlic and garnish with fresh dill. Add a little more pepper and salt if needed, and serve with crusty bread.

  • This can also be refrigerated.
  • Refrigerate after using.
  • If you purchase a good olive oil, it will solidify in the fridge.

3 heads garlic, unpeeled
1 tablespoon olive oil
½ cup sour cream
¼ cup mayonnaise
1 green onions, chopped
1 tablespoon red wine vinegar
½ teaspoon salt
¾ tablespoon ground black pepper

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of the head. Brush the cut cloves with a small amount of olive oil, then nestle the head into a piece of aluminum foil.
  • Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.
  • Once cool, squeeze the garlic cloves out of their skins and into a mixing bowl. Mash well with a wire whisk, then add the sour cream, mayonnaise, green onions, vinegar, salt, and pepper. Whisk until evenly blended, then refrigerate 2 to 4 hours to allow the flavors to blend.
