This smooth, creamy Roasted Garlic Spread is addictive! Roasting garlic magically transforms the flavor into a nutty, mellow flavor. Spread it on toasted baguette slices for a quick and easy appetizer.

2 cups peeled garlic cloves or 4-6 garlic heads
1/4 teaspoon fine salt
1-1/2 cups extra-virgin olive oil
1 tablespoon fresh thyme leaves (optional)

Steps:

  • In an oven-proof casserole dish or pie plate, add the garlic and toss with the salt. Spread the garlic cloves in an even layer and add the olive oil until the cloves are completely submerged.
  • Cover the dish with foil and transfer to the oven. Roast for 30-35 minutes until the garlic is light golden in color and very tender.
  • Cool the garlic in the dish then strain the oil through a mesh sieve set over a bowl. Save the oil in a sealed container for other recipes.
  • Place the cooled garlic cloves in a food processor or blender. Add 2 to 4 tablespoons of the infused oil and process until smooth and creamy.
  • Add salt according to taste preference, transfer to a container and stir in the thyme leaves if using.

This delicious garlicky herbed goat cheese spread makes the most delectable appetizer or spread. Spread on toasted or grilled sourdough bread or crackers, or use it for epic sandwich creations. It also pairs wonderfully with eggs, roasted or grilled vegetables, and can also be tossed with pasta!

4 ounce package goat cheese (room temperature)
¼ cup fresh dill fronds (plus more for garnishing)
2 tablespoons flat-leaf parsley leaves
1 small garlic clove (finely grated with a microplane)
1 large pinch red pepper flakes
1 teaspoon lemon zest, plus 1 teaspoon lemon juice
1 teaspoon extra virgin olive oil (plus more for drizzling)
pinch of kosher salt
freshly cracked black pepper

Steps:

  • Combine all the ingredients in a mini food processor. Pulse until just whipped and blended (and the herbs are well-distributed in small, even pieces), scraping down the sides of the bowl once or twice if needed. Transfer the goat cheese spread to a serving bowl (I like to place it off-center, as seen in the photos above), using the back of a large spoon to create a divet and swoosh.
  • Just before serving, drizzle with extra virgin olive oil and garnish with several dill fronds. This goat cheese spread is best served right away, but can be prepared in advance and stores well in the refrigerator for 2-3 days. Store in a container with a tight-fitting lid.
  • If you do not have a mini food processor or don't wish to use one: before proceeding, finely chop the herbs (it is especially important for the goat cheese to be at room temperature if mixing by hand) and mix everything together with a spoon or spatula until well incorporated. *I prefer to use a mini food processor, because it is quick, fast, and incorporates a little air into the goat cheese, creating a slightly whipped, lighter texture.

This spread is irresistible not only for its near-life-size football shape, but for its creamy fluffy texture and bright herb flavor. A layer of ground toasted walnuts and some sour cream stitching complete the look, making this the world's most delicious football.

12 ounces cream cheese, softened
3/4 cup heavy cream
1/2 cup plus 2 tablespoons sour cream
1/4 cup mixed chopped fresh herbs, such as chives, parsley and dill
1 small clove garlic, minced
Kosher salt and freshly ground black pepper
1/2 cup walnut halves, very finely chopped
Assorted crackers, for serving

Steps:

  • Beat the cream cheese with an electric mixer on medium-high speed until fluffy, about 2 minutes. Reduce the speed to low and slowly beat in the heavy cream. Increase the speed to medium and beat until smooth. Beat in 1/2 cup of the sour cream. Beat in the herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Line a medium strainer about 7 1/2 inches in diameter with a few layers of cheesecloth, letting the ends hang over the edges of the strainer. Set the strainer over a bowl. Pour the cream cheese mixture into the strainer and fold the ends of the cheesecloth over the top. Gently flatten with your hands and shape into an oval football. Gather the edges of the cheesecloth up and twist until tight, trying to keep the oval shape of the spread. Place the strainer and bowl in the refrigerator 8 hours or overnight.
  • To serve, unwrap the spread and invert onto a serving dish so the rounded side is facing up. Use the cheesecloth to gently reshape the oval and taper the ends to look like a football, then discard the cheesecloth and any liquid in the bottom of the bowl.
  • Put the walnuts in a medium skillet set over medium heat and cook, stirring, until they are toasted, about 5 minutes; watch carefully so that they do not burn. Remove from the heat and cool. Sprinkle and press the nuts into the spread so it is covered. Put the remaining 2 tablespoons sour cream in a small resealable plastic bag and snip about 1/8 inch off the end of one corner. Pipe the sour cream over the spread to create the laces of a football. Serve with assorted crackers.

2 heads garlic
1/2 cup extra virgin olive oil
6 sprigs fresh thyme
3 sprigs rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Put oven rack in middle position and preheat oven to 425.
  • Cut off and discard 1/2 inch tops of garlic heads, exposing cloves.
  • Put garlic in pie plate with oil, herbs, salt, and pepper and cover plate tightly with a double layer of foil.
  • Roast until garlic is golden and tender, 1-1 1/4 hours.
  • When garlic is cool enough to handle, squeeze cloves into a bowl and pour oil through a fine-mesh sieve onto garlic.
  • Mash well with a fork and season with salt.

1 tablespoon plus 2 teaspoons roasted, mashed garlic (about 12 cloves)
1 tablespoon plus 2 teaspoons picked and finely chopped thyme
2 1/4 teaspoons fresh squeezed lemon juice
1 quart plain yogurt
1/2 teaspoon Worcestershire sauce
Salt and pepper

Steps:

  • (For an alternative replace the lemon, garlic and thyme with 1 1/2 teaspoons cumin and 2 tablespoons chopped parsley)
  • In a mixing bowl, add garlic, thyme, and lemon juice to the yogurt and mix well. Place mixture in cheesecloth, set over a colander, set over a bowl and place in refrigerator for 12 hours.
  • Discard liquid and place remaining yogurt in bowl. Add salt and pepper, to taste.

My favorite way to serve this spread is to smear it on lightly toasted bakery-fresh sourdough bread, however, any bread would be delightful. I have not tried using in place of a typical garlic bread spread, but I bet it would be fantastic. I also have not tried it with other herbs, but there's a lot of room for creativity here. All measurements are approximations, and are always adjusted for taste and consistency. This simply made concoction will have everyone thinking you are a culinary genius!

1 clove garlic
1 teaspoon olive oil
1/4 cup butter, softened
1 teaspoon fresh oregano, minced

Steps:

  • Preheat oven to 375 degrees.
  • Seperate garlic into individual cloves.
  • Place cloves on sheet of tinfoil and drizzle with olive oil.
  • Wrap cloves tightly in foil and bake for 45 minutes.
  • While garlic is roasting, mince fresh herbs.
  • Unwrap tinfoil and let cloves cool.
  • Squeeze cloves out of paper casing into bowl.
  • Mash together with fork or whisk butter, roasted garlic and herbs.
  • Store covered in refrigerator for up to three days, bringing to room temperature before serving.

Steps:

  • Cut garlic crosswise in half and spread some oil on cut surface, wrap in foil.
  • Roast in 375°F oven about 45-50 minutes.
  • Till soft and golden.
  • Squeeze the meat out of the skins season with salt and pepper add enough oil to taste while using a fork to smash till smooth and creamy. Mix in rosemary.

1 head garlic
4 sun-dried tomatoes, not packed in oil
1 cup nonfat yogurt, strained into a cheese
1/2 teaspoon maple syrup
2 tablespoons fresh basil, chopped
1/2 teaspoon red pepper flakes
1/4 teaspoon sea salt, freshly ground
loaf Italian bread, sliced (optional)

Steps:

  • Wrap the garlic head in aluminum foil and bake in a preheated 375F oven for 35 minutes.
  • Remove the foil and press the baked garlic until all the flesh squeezes out. You should have 1 heaping tablespoon of puree. .
  • Bring the sun-dried tomatoes to a boil in a small amount of water.
  • Let sit for 15 minutes, then drain on paper towels. Chop finely when dried.
  • Combine all the ingredients except the bread with a wire whisk.
  • Allow to sit for at least 30 minutes. If using the bread, lightly toast the slices on a baking sheet at 325F for 15 minutes.
