VANILLA ICE CREAM WITH BALSAMIC FIG SAUCE

- Place ice cream on counter to soften. In a small pot, combine vinegar and water and bring to a boil. Add figs and reduce heat to simmer. Stew figs in sauce until they are soft and sauce is thick and syrupy, about 12 minutes.
- Scoop ice cream into glass goblets or other dessert dishes and top liberally with hot balsamic fig sauce and whipped cream. Garnish the top of the whipped cream with a little freshly grated nutmeg.

- Heat broiler. Place figs, cut side up, on a cookie sheet. Sprinkle the sugar over the figs and dot with butter. Place figs under the broiler as close to the flame as possible and cook until they begin to brown around the edges, about 2 minutes. Place 2 fig halves on each of 4 plates, along with a scoop of ice cream. Drizzle 1/2 tablespoon honey over each scoop of ice cream and sprinkle figs with pepper, if desired. Garnish with mint sprigs.

- In a 1 1/2-quart saucepan combine all ingredients and bring to a boil, stirring occasionally. Simmer figs, covered, until tender, about 30 minutes.
- Transfer figs with a slotted spoon to a bowl and boil syrup until reduced to about 1/4 cup. Strain syrup through a fine sieve into another bowl. Add syrup to figs and cool to warm.
- Serve fig mixture spooned over ice cream.

- Arrange figs, cut sides up, in a large shallow baking pan. Sprinkle sugar evenly over fruit and broil 2 to 3 inches from heat until most of sugar is melted and deep golden in places, 3 to 5 minutes.
- Immediately serve figs over ice cream, drizzled with vinegar.

- Toss the halved figs with the olive oil and 1 tablespoon of the honey and spread out on a parchment-lined baking sheet. Roast in the oven for 10-15 minutes, or until soft and beginning to caramelize.
- To make the candied pine nuts, heat a small sauté pan over medium heat. Add the nuts and toast for about two minutes, or until just starting to brown and smell fragrant. Add the ground cardamom and a large pinch of flaky sea salt and stir to combine.
- Add the remaining 2 tablespoons honey, cook for about 30 seconds, then turn off the heat. Stir to combine everything, then immediately transfer to a large plate to cool, spreading them out in an even layer.

- Position broiler rack 6 inches from heat source and preheat broiler. Line a large baking sheet with aluminum foil.
- In a small bowl, mix sugar and spices. One at a time, dip figs, cut side down, in sugar mixture to coat. Then coat figs a second time with sugar mixture and arrange cut side up on baking sheet. Broil figs, watching closely, for about 4 minutes, or until sugar melts and begins to caramelize and figs soften slightly and begin to ooze their juice.
- Divide figs among 4 bowls. Spoon 1/3 cup of Breyers® Natural Vanilla Ice Cream into each bowl and sprinkle with hazelnuts.
