8 ounces dried mission figs
1/2 cup red wine
1/4 cup sugar
Kosher salt and freshly ground pepper
2 sprigs fresh thyme
Cheese and sliced bread, for serving

Steps:

  • Trim and halve the figs, place in a saucepan with the wine, sugar, salt and pepper, and bring to a boil. Reduce to a simmer and cook until the wine is reduced by half and slightly thickened, about 10 minutes. Remove from the heat and stir in the thyme sprigs. Serve on top of an assertive cheese, such as Manchego, blue, Taleggio, or a triple cream spread over bread slices.

Roasted Figs with Red Wine image

This is a dish inspired by my summers in California, a unique dessert using an elegant fruit. I roast the figs in a red wine glaze and add a dollop of ice cream for a decorative finish. It's a fun dish to make and a beautiful dish for entertaining.

1 bottle (750 ml) red wine, dry
1 cup sugar, granulated
1/4 cup honey
1/4 teaspoon black peppercorns
1 star anise pod, whole
1 teaspoon fennel pollen (optional), you can add a handful of fennel fronds if you can't find the pollen
2 pints figs, fresh, preferably Black Mission, Kadota or Candy Stripe
9 lemon verbena leaves, if lemon verbena is not available, fresh thyme or sweet basil are good substitutions
Ice cream or sweetened mascarpone, to serve with the figs

Steps:

  • Preheat the oven to 375 degrees F. In a nonreactive metal saucepan, combine the red wine, sugar, honey, peppercorns, star anise and fennel pollen (or fennel fronds). Bring to a rolling boil, lower to a simmer until the liquid is reduced by half, about 15 to 20 minutes.While the wine liquid is coming to a simmer, prepare the figs for roasting. With a small paring knife, trim and discard the tough stems and make a small incision down the middle of the fig. Stud each fig with a sliver of lemon verbena.Once the wine has come to a boil, reduce the heat to a low simmer, and let it reduce for about 15 to 20 minutes. Place the prepared figs in a tightly packed, single layer in a deep baking dish.
  • After the liquid has reduced by half, remove from the heat and pour through a fine mesh strainer into a bowl. Discard Solids. Cover liquid with plastic wrap and let cool for 20 minutes. Return the liquid to the same saucepan, and put it back on the heat. Bring it to a simmer, and let it reduce for another 15 minutes.Glaze the figs with the reduced liquid and place the pan in the oven. Roast for 30 to 35 minutes.
  • Remove the figs from the oven and serve warm with sweetened whipped cream, ice cream or mascarpone cheese.

ORANGES AND FIGS IN SPICED RED WINE

2 cups red wine
1 cup sugar
Tied in cheesecloth: 1 inch piece of cinnamon stick; 4 star anise, 4 cardamom pods and 2 whole cloves
6 large navel oranges, peeled, pith removed and cut in half lengthwise
12 dried figs, halved
1/3 cup walnuts or pistachios, chopped

Steps:

  • Combine the wine, sugar and bouquet garni in a saucepan large enough to contain the oranges and figs in a single layer. Bring to a simmer, covered, over moderate heat. Add the figs and simmer for 5 minutes. Add the oranges and turn them for 3 to 4 minutes, turning them so they cook evenly. Turn the heat off and let the oranges and figs cool in the syrup.
  • Remove them to a serving bowl. Reduce the syrup by half and let cool. Discard bouquet garni and spoon syrup over figs and oranges. Garnish with walnuts or pistachios if you wish.

POACHED FIGS IN SPICED RED WINE WITH VANILLA GELATO



Poached Figs in Spiced Red Wine with Vanilla Gelato image

1 to 2 tablespoons sugar, or to taste
1 cinnamon stick
3 whole cloves
3 whole fresh figs, quartered
Vanilla gelato as an accompaniment
Mint sprigs for garnish if desired

Steps:

  • In a saucepan combine the wine, sugar, cinnamon and cloves. Bring the liquid to a boil over moderately high heat, stirring, and simmer the mixture for 5 minutes. Add the figs and simmer just until figs are heated through. Let cool to warm. Arrange scoops of gelato in two stemmed glasses and top with the figs and some of the poaching liquid. Garnish with mint if desired.

Steps:

  • Preheat oven to 400°F.
  • Score top of each fig with a sharp knife.
  • Place figs on baking sheet; sprinkle with sugar and drizzle with red wine.
  • Bake for 12 to 15 minutes or until softened.
  • Transfer to serving places and spoon the thickened red wine sauce over figs.
  • Serve with yogurt or cream.

  • In a saucepan, combine the figs, wine, sugar, lemon zest, anise seeds and 1 cup of water and bring to a boil. Simmer over low heat until the figs are softened and the liquid is syrupy and reduced to 1/2 cup. Let the figs cool in their syrup, then puree in a food processor until smooth. Transfer the filling to a pastry bag fitted with a 1/2-inch plain tip.
  • In a bowl, using an electric mixer, beat the butter until creamy. Beat in the sugar, vanilla, zest and salt at medium-high speed until fluffy, 3 minutes. Beat in the egg. At low speed, beat in the 1 1/2 cups of flour. Divide the dough in half, shape into rectangles and wrap in plastic. Freeze until firm, 20 minutes.
