GRAPEFRUIT GRILLED CHICKEN



Grapefruit Grilled Chicken image

2 pink grapefruits
2 tablespoons brown sugar
1 tablespoon honey
1/4 cup olive oil
Kosher salt and freshly ground black pepper
4 boneless skinless chicken breasts, sliced in half horizontally

Steps:

  • Prepare the grapefruit. Juice one grapefruit into a liquid measure. On the second grapefruit, slice the bottom and top to level it, then starting at the top where the white pith ends and the pink flesh begins, cut between the 2 layers at an angle from the top to bottom all the way around to remove the skin and expose the flesh, making sure to slice off all the pithy white parts. Holding the grapefruit in one hand, release the wedges by using the knife to slice on either side of each segment.
  • Place these wedges in a medium saute pan. Squeeze the remaining flesh and membranes of the grapefruit to release any juice into a bowl. Add the sugar and honey. Whisk to combine, then taste. If needed, add a teaspoon or more brown sugar to take away the tart of the grapefruit. Pour half of the mixture into a saute pan with the grapefruit wedges. Bring to a simmer and cook until liquid is reduced and slightly thickened, about 8 minutes.
  • To the remaining half add the oil, 1 teaspoon salt, and a few grinds of black pepper. Whisk to combine and pour into a plastic bag. Add the chicken, seal and toss a bit before resting on the counter for 25 to 30 minutes. Cook's Note: Any longer and the acid in the grapefruit juice will "cook" the chicken in the marinade and ruin it.
  • Heat a grill pan to medium high and brush lightly with oil. Remove the chicken from the plastic bag and shake off the excess marinade. Place the smooth-side down on the grill and cook 2 to 3 minutes, then flip and cook 2 minutes more. Remove to a serving plate and pour the grapefruit sauce over the top.

FRIED CHICKEN WITH HONEY-PINK PEPPERCORN SAUCE

1 quart buttermilk
Kosher salt
2 teaspoons chili de arbol powder, or 2 tablespoons hot sauce
2 chickens (3 to 4 pounds each), cut up into 8 pieces each
3 cups all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon sweet paprika
2 teaspoons cayenne pepper
Freshly ground black pepper
Peanut oil, for deep-frying
Honey-Pink Peppercorn Sauce, recipe follows
1 cup honey
2 teaspoons pink peppercorns, toasted and coarsely chopped
Grated zest of 1 lime
Juice of 2 limes
Kosher salt and freshly ground black pepper

Steps:

  • Whisk together the buttermilk, 2 tablespoons salt and the chili de arbol in a large bowl or large baking dish. Add the chicken and turn to coat.
  • Stir together the flour, garlic and onion powders, paprika and cayenne in a large baking dish. Season generously with salt and pepper.
  • Pull the chicken out of the buttermilk, gently shaking off any excess liquid. Dredge the pieces a few at a time in the flour mixture and pat off any excess. Then dip back into the buttermilk and allow any excess to drain off. Dredge again in the seasoned flour and pat off the excess. Put the chicken pieces on a baking rack set over a baking sheet while the oil heats.
  • Pour about 3 inches of oil into a deep cast-iron skillet; the oil should not come more than halfway up the sides of the skillet . Put the skillet over medium-high heat and heat the oil to 375 degrees F on a deep-fry thermometer.
  • Working in batches, add the chicken pieces to the hot oil, 3 or 4 at a time, and fry, turning the pieces occasionally, until evenly golden brown and cooked through, about 20 minutes. Remove from the oil with a slotted spoon and transfer to a rack to drain; repeat to cook the remaining pieces.
  • Drizzle the fried chicken with the Honey-Pink Peppercorn Sauce.
  • Stir together the honey, peppercorns, lime zest and juice in a small bowl and season with salt and pepper. Cover and let sit at room temperature.

1 (3 pound) whole chicken, rinsed and patted dry
1 grapefruit, cut in half
1 tablespoon olive oil
½ teaspoon seasoned salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken into a roasting pan, and squeeze the juice from the grapefruit halves all over and inside the chicken. Drizzle chicken with olive oil, and sprinkle with seasoned salt. Cover with aluminum foil.
  • Bake in the preheated oven, covered, for 45 minutes; remove foil, and bake until meat is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

1/2 baguette
1/4 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1 cup ricotta cheese
1 teaspoon grated lemon zest
3 tablespoons extra-virgin olive oil
1/8 teaspoon kosher salt
1/4 cup honey
1 1/2 tablespoons flaky salt, such as Maldon
2 tablespoons pink peppercorns, crushed

Steps:

  • Make the crostini: Preheat the oven to 400 degrees F. Cut the baguette on a slight bias into 1/4-inch slices. Brush each slice with the olive oil and place on a baking sheet. Sprinkle with the kosher salt and bake for 10 to 12 minutes, or until golden brown and crunchy. Set aside to cool.
  • Assemble the crostini: In a small bowl, whisk together the ricotta, lemon zest, olive oil and kosher salt. Once the crostini are cool, top each one with 1 heaping tablespoon of the ricotta mixture, a drizzle of honey, a pinch of flaky salt and a sprinkling of crushed pink peppercorns. Serve at room temperature.

PEPPERCORN CHICKEN WITH LEMON SPINACH

3 large skinless, boneless chicken breasts (about 1 3/4 pounds)
2 to 3 teaspoons coarsely ground mixed peppercorns
3/4 teaspoon finely minced fresh rosemary

2 shallots, thinly sliced
1/3 cup brandy or red wine
1/3 cup low-sodium chicken broth
1 tablespoon chopped fresh parsley
2 cloves garlic, chopped

Steps:

  • Preheat the oven to 350 degrees. Brush 1 tablespoon mustard all over the chicken. Sprinkle with the peppercorns, rosemary and salt to taste, patting gently so the seasonings stick. Heat a large skillet over medium-high heat; add 2 tablespoons oil. Add the chicken and cook until golden brown, about 6 minutes, turning once. Transfer to a baking dish (set aside the skillet for the sauce); bake the chicken until cooked through, about 10 minutes. Meanwhile, add the shallots to the skillet; cook over medium-high heat until just soft. Remove the pan from the heat, add the brandy, then return the pan to the heat and scrape up any browned bits. Add the broth, bring to a boil and cook until slightly thickened, about 2 minutes. Stir in the remaining 2 tablespoons mustard and the parsley. Heat the remaining 1 tablespoon oil in a deep skillet over medium-high heat. Stir in the garlic; cook about 30 seconds. Add the spinach, season with salt and cook until wilted; add the lemon zest. Sweet and savory curry powder is combined with honey and a pleasantly tart grapefruit juice to create a rich glaze for your above-average weeknight bird. Roasting the chicken low and slow keeps the meat moist, and basting frequently prevents the caramelization of the sauce from scorching. Serve with a side of greens such as spinach, kale or Swiss chard that have been sautéed in lots of garlic and oil.

  • Heat the oven to 375 degrees. Pat the chicken dry and season it well with salt and pepper, both inside and out. Place the chicken breast-side up in a 10-inch cast-iron or ovenproof skillet.
  • In a medium bowl, whisk together the grapefruit juice, honey, curry powder and thyme. Spoon all the mixture over the chicken, making sure it is evenly covered.
  • Roast the chicken for 30 minutes, basting every 15 minutes or so. Turn heat down to 325 degrees and continue basting the chicken with the pan juices until the skin is lacquered with sauce and the chicken registers 165 degrees with an instant thermometer in the thickest part of the thigh, about 45 to 50 minutes more. If skin is starting to become too dark, tent with foil. Allow the chicken to rest for 10 minutes before carving.

2 lbs chicken thighs
salt
1 tablespoon butter
2 garlic cloves
2 lbs onions
1 tablespoon all-purpose flour
2 bay leaves
1/2 cup white wine
6 cups vegetable stock
2 tablespoons pink peppercorns
4 slices bread
4 ounces gruyere

Steps:

  • Set a large soup pot over medium-high heat. Add the chicken thighs, skin side down, and season with salt. Cook for 3 to 4 minutes on each side, until golden, stirring them around a little so the meat won't stick to the bottom. (Be careful not to burn yourself with the sizzling chicken fat.).
  • Remove the chicken from the pot and set aside on a plate. Pour out and discard the excess fat from the pot. Lower the heat to medium-low. Melt the butter in the pot, add the garlic and onions, season with salt, and stir. Cover and cook for 25 minutes, stirring from time to time to avoid colouring, until the onions are very soft.
  • While the onions are cooking, remove the skin from the chicken thighs- don't worry if you can't remove all of it. When the onions are soft, add the flour, if using, and stir to blend. Add the chicken, bay leaves, wine, and stock. Grind the peppercorns with a mortar and pestle or spice grinder, or by crushing them on a cutting board with a rolling pin. Reserve 1 teaspoon for garnish, and add the rest to the pot. Bring the soup to a simmer, cover, and cook for 30 to 35 minutes, until the chicken is cooked through. Let it simmer for 20 more minutes, uncovered. (The recipe can be made a day ahead up to this point. Let cool, cover, and refrigerate. The next day, skim the chicken fat from the surface.).
  • Preheat the oven on the broiler setting. Remove the chicken thighs from the pot and bone them with a fork and knife. Discard the bones and any remaining strips of skin, and cut the meat into bite-size chunks. Return the meat to the pot, stir, taste the broth, and adjust the seasoning. Ladle the soup into ovenproof bowls or soup plates, top each with a slice of bread, and sprinkle with grated cheese.
  • Put the bowls under the broiler for a few minutes, watching them closely, until the cheese is melted, bubbly in places, and lightly golden. (If your oven isn't large enough to accommodate all the bowls, work in batches: the first bowls will be a bit less hot than the last, but still hot enough.) Sprinkle with the reserved peppercorns and serve: set each bowl on a folded napkin if your table needs to be protected from heat, and warn your guests that the bowls and soup will be very hot.

Steps:

  • Broil peppers (with oven door partially open) 5 minutes each side or till blistering. Remove from roasting pan, place in dish, cover with clingfilm and leave ten minutes.
  • Meanwhile, melt butter or margarine.
  • Add onions and sauté till soft, but not brown.
  • Remove skin from peppers, chop coarsely and add to onions. Pour in stock and spices plus a squeeze of lemon.
  • Simmer 20-30 minutes uncovered.
  • Remove from heat, allow to cool and then process in batches so that the soup is a little chunky but not puréed.
  • Before serving, add sour cream or half-and-half and heat through.
  • Will keep well in fridge 2-3 days. Can also be frozen.
