Roasted Cauliflower with Garlic Parmesan Butter | Traeger Grills image

Cauliflower is roasted with salt and olive oil and tossed with with parmesan cheese, butter and garlic for a savory and healthy dish. Who says it's bland?

head cauliflower
olive oil
salt and pepper
butter, melted
shredded Parmesan cheese
garlic, minced
chopped parsley

Steps:

  • When ready to cook, set Traeger temperature to 450˚F and preheat, lid closed for 15 minutes.
  • Brush the cauliflower with olive oil and season liberally with salt and pepper.
  • Put cauliflower in a cast iron skillet, place directly on the grill grate and cook for 45 minutes until golden brown and the center is tender.
  • While the cauliflower is cooking, combine the melted butter, parmesan, garlic and parsley in a small bowl.
  • During the last 20 minutes of cooking, baste the cauliflower with the melted butter mixture.
  • Remove the cauliflower from the grill and top with extra parmesan and parsley if desired. Enjoy!

Traeger smoke roasted cauliflower has a rich & deep flavor. Create this simple grilled vegetable recipe then rock it up the flavor scale with your favorite flavor wood pellets. Grilled cauliflower is simple to make.

cauliflower
Olive oil
garlic, crushed
paprika
Salt
Pepper
Parmesan cheese

Steps:

  • When ready to cook, set the temperature to 180°F and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.
  • Cut the cauliflower into medium-sized florets, and place it on a sheet tray. Transfer the sheet tray to the grill and smoke for 20 minutes
  • While the cauliflower is smoking, mix all of the ingredients together except for the Parmesan cheese.
  • After 20 minutes remove the cauliflower. Increase the grill temperature to 450°F and preheat, lid closed for 15 minutes.
  • While the grill is coming up to temperature, toss the cauliflower with the spice mixture, and place it back on the sheet tray.
  • Place back on the Traeger and roast it for 10 minutes or until it has a nice golden brown color.
  • In the last few minutes of cooking, sprinkle the Parmesan over each piece and close the lid until the cheese is melted. Enjoy!

cauliflower, cut into florets
onion, sliced
garlic, unpeeled
Olive oil
fresh thyme leaves
Kosher salt
Ground black pepper
Parmesan cheese

Steps:

  • When ready to cook, set Traeger temperature to 400℉ and preheat, lid closed for 15 minutes.
  • On a baking tray, mix together cauliflower, onion, thyme, garlic, olive oil, salt and pepper.
  • Place tray on preheated grill and cook until cauliflower is firm and almost tender (about 25 minutes).
  • Sprinkle cauliflower with Parmesan cheese and continue to cook on the Traeger for another 10 to 15 minutes. Cauliflower should be tender and the Parmesan crisp. Serve immediately, enjoy!

Steps:

  • Preheat oven to 450 degrees.
  • Grease large casserole dish.
  • Place olive oil and garlic in large resealable bag.
  • Add cauliflower and shake to mix.
  • Pour into prepared casserole dish.
  • Bake for 20 to 25 minutes, stirring halfway through.
  • Top with Parmesan and parsley and broil for 3 to 5 minutes until golden brown.
