BALSAMIC ROASTED BEET SALAD

Balsamic Roasted Beet Salad image

Provided by Ina Garten

Time 1h20m

Yield 6 servings

Number Of Ingredients 8

8 medium-size beets, tops removed and scrubbed
1/2 cup balsamic vinegar
1/2 cup good olive oil
2 teaspoons Dijon mustard, such as Grey Poupon
Kosher salt and freshly ground black pepper
4 ounces baby arugula
1/3 cup roasted, salted Marcona almonds, toasted
4 ounces soft goat cheese, such as Montrachet, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Wrap the beets individually in aluminum foil and place them on a sheet pan. Roast them for 50 minutes to 1 hour, depending on their size, until a small sharp knife inserted in the middle indicates that they are tender. Unwrap each beet and set aside for 10 minutes, until cool enough to handle. Peel the beets with a small, sharp knife over a piece of parchment paper to prevent staining your cutting board.
  • Meanwhile, whisk together the vinegar, olive oil, mustard, 2 teaspoons salt, and 1 teaspoon pepper and set aside. While the beets are still warm, cut each one in half and then each half into 4 to 6 wedges and place them in a large mixing bowl. As you're cutting the beets, toss them with half of the vinaigrette (warm beets absorb more vinaigrette), 1 teaspoon salt, and 1/4 teaspoon pepper. Taste for seasonings.
  • Place the arugula in a separate bowl and toss it with enough vinaigrette to moisten. Put the arugula on a serving platter and then arrange the beets, almonds, and goat cheese on top. Drizzle with additional vinaigrette, if desired, sprinkle with salt and pepper, and serve warm or at room temperature.

ROASTED BABY BEET AND BABY CARROT SALAD WITH A SHERRY WALNUT VINAIGRETTE

Roasted Baby Beet and Baby Carrot Salad with a Sherry Walnut Vinaigrette image

Provided by Emeril Lagasse

Categories     side-dish

Time 1h35m

Yield 4 servings

Number Of Ingredients 13

12 ounces baby beets, without the tops, peeled
12 ounces baby carrots, without the tops, peeled
2 tablespoons olive oil, plus 1/4 cup
3/4 teaspoon kosher salt, divided
3/4 teaspoon ground black pepper, divided
2 teaspoons chopped fresh tarragon leaves
1 teaspoon chopped fresh chives
1/4 cup sherry vinegar
2 teaspoons honey
1/2 cup walnut oil
6 ounces mixed baby lettuces or spring mix, washed and spun dry
1/2 cup lightly toasted walnut pieces
3 ounces mild soft goat cheese, crumbled

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small ovenproof casserole or roasting pan place the beets with 1 tablespoon of the olive oil, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss to coat well and push to 1 side of the pan. In a piece of foil, place the carrots with 1 tablespoon of the olive oil, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss to coat well. Wrap the foil tightly and place alongside the beets in the roasting pan. Transfer to the oven and bake, stirring occasionally, until the beets are crisp-tender, about 45 minutes. The carrots may be done earlier, so check occasionally. Remove the beets from the oven and allow to cool slightly. Toss with the tarragon and chives and set aside to cool to room temperature.
  • In a mixing bowl combine the sherry vinegar, honey, remaining salt, and remaining pepper and whisk to combine. While continuing to whisk, add the remaining 1/4 cup of olive oil and the walnut oil in a thin, steady stream, until smooth and emulsified.
  • Place the lettuce in a salad bowl and add the beets, walnuts, and crumbled goat cheese. Drizzle some of the vinaigrette over the salad, to taste, and toss to thoroughly combine. Serve immediately, drizzled with additional vinaigrette, if desired.

BEET AND ENDIVE SALAD WITH GARLIC AND HERB VINAIGRETTE

Beet and Endive Salad with Garlic and Herb Vinaigrette image

Provided by Amy Finley

Categories     appetizer

Time 2h40m

Yield 4 to 6 servings

Number Of Ingredients 15

3 to 4 small-sized red beets, greens trimmed
1/4 cup olive oil
Salt, for seasoning
4 large or 6 small heads Belgian endive, cored
Garlic and Herb Vinaigrette, recipe follows
2 tablespoons red wine vinegar
Salt, for seasoning
Pepper, for seasoning
1 small shallot, finely chopped
1 clove garlic, finely chopped
1 tablespoon Dijon mustard
1 tablespoon chopped fresh chives
2 teaspoons chopped fresh tarragon leaves
1 tablespoon chopped fresh parsley leaves
1/4 cup olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Place a large sheet of aluminum foil on a baking sheet. Place the beets on top, drizzle with the olive oil and sprinkle with salt, then fold the long and short edges of the aluminum foil up to the middle and roll together, making a packet with the beets inside. Put in the oven and roast until fork-tender, about 1 1/2 hours. (Can be done a day or two ahead of time.) Allow to cool, then slip the skins from the beets, trim the ends, and cut into 1/2-inch cubes. Set aside.
  • Quarter the endives lengthwise, then slice crosswise into 1/2-inch thick moons. Combine the beets and endive in a salad bowl and toss with the vinaigrette. Season with additional salt and pepper, if necessary. Serve immediately.
  • In a small glass bowl, melt the salt in the vinegar, then add the pepper, shallot, garlic, mustard, and herbs and combine well. Whisk in the olive oil in slow, steady stream until the dressing is thickened. Alternately, place all ingredients in a glass jar, close the lid, and shake vigorously.

  • Preparing the Beets and Walnuts 1. Preheat the oven to 400°F. 2. Scrub the beets well, peel, and cut off the greens to save for another use. (They are delicious sauteed with a little garlic and lemon juice.) 3. Wrap the peeled beets loosely in foil and place them on one side of a baking sheet. Don't worry about drying them off. The moisture will keep them from drying out while baking.
  • 4. Place the walnuts in a single layer on the other side of the baking sheet. 5. Check the walnuts after 5 minutes, stir, and remove them with a spatula if done. If not, keep a close eye on them and check every minute as walnuts toast VERY quickly at this high temperature.
  • 6. Once the walnuts are toasted, use a spatula to carefully remove them to a dish to cool. The beets will continue to bake for another 35 - 50 minutes. The larger the beets, the longer they will take to become soft. 7. Check the beets halfway through the baking time and add a splash of water to the foil if the beets are drying out.
  • 8. Once the beets are done baking, you will be able to easily insert a knife into them. Set them aside on the baking sheet to cool while you prepare the Tarragon Vinaigrette. 9. When the beets are cool, unwrap them on the baking sheet to avoid staining your counter and cut them into bite-sized pieces. 10. Add the beets to your mixing bowl with the walnuts.
