1 1/2 teaspoons minced shallots
1 teaspoon Dijon mustard
1/8 teaspoon salt
1/8 teaspoon ground pepper
2 1/2 teaspoons extra-virgin olive oil
1 pound fresh asparagus
1 teaspoon olive oil
1/4 teaspoon freshly ground black pepper

Steps:

  • In a small bowl, whisk together the white wine vinegar, shallots, Dijon mustard, salt and pepper until smooth.
  • While whisking slowly pour in the olive oil until the dressing is combined.
  • Preheat oven to 400 degrees F.
  • Trim the tough ends from the asparagus and place the asparagus on a baking sheet.
  • Toss the asparagus with olive oil and pepper until coated.
  • Lay the asparagus on the baking sheet, in a single layer.
  • Roasted the asparagus until it is just tender, 12 to 18 minutes (depending on the thickness of the asparagus).
  • Serve the asparagus warm or room temperature, with some of the Dijon dressing drizzled over top (use as much as you like, to your taste).

3/4 pound fresh asparagus, woody stems removed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 teaspoon Dijon mustard
1/2 lemon, juiced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl toss the asparagus in the olive oil, and liberally season with salt and pepper. Spread the stalks out on a baking sheet, in a single layer, and roast until tender but still firm and moist, about 10 minutes.
  • Meanwhile, make the vinaigrette: In a small bowl, vigorously whisk together the mustard and lemon juice. Slowly drizzle in the olive oil, whisking quickly to emulsify the olive oil into the juice mixture. Season with salt and pepper, to taste.
  • Transfer the asparagus to a serving platter, toss with the vinaigrette and serve. The dish may be eaten warm or cold.

2 tablespoons olive oil
6 - 8 garlic cloves, minced
¼ cup olive oil
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 teaspoon lemon juice
2 teaspoons honey
½ teaspoon dill

Steps:

  • Preheat oven to 400 degrees.
  • Place asparagus in a 13x9 baking dish.
  • Drizzle 2 tablespoons of olive oil over asparagus, Sprinkle minced garlic over the asparagus and turn asparagus to coat.
  • Bake at 400 degrees for 20 minutes or until tender.
  • While the asparagus is roasting, combine the dressing ingredients.
  • Once the asparagus is tender, remove from oven. Drizzle dressing over the asparagus and turn to coat.
  • Serve immediately.

2 tablespoons balsamic vinegar
1 small shallot, very finely minced
kosher salt
1 bunch asparagus, trimmed and cut into two inch pieces
1 tablespoon extra virgin olive oil
2 teaspoons extra virgin olive oil
cracked black pepper
1 lb baby red potato, cut into quarters
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 450 degrees.
  • In a lage salad bowl, combine vinegar, shallot, and salt to taste. Let stand 20 minute.
  • Place asparagus in a plastic zipper bag with 1 tsp olive oil and shake until well coated. Pour onto cookie sheet and season to taste with salt and pepper.
  • Place potatoes in same bag used for asparagus, add 1 tsp olive oil and shake until well coated. pour onto second cookie sheet and season to taste with salt and pepper.
  • Roast potatoes and asparagus 15 min or until potatoes are golden and crispy and can be pierced by a fork. Potatoes may take longer than asparagus.
  • Meanwhile, whisk remaining 1 TBS olive oil and dijon mustard into the bowl with the shallot and vinegar. Taste and adjust seasonings.
  • When the vegetable are done, add to bowl with dressing. Toss to combine. Taste and adjust salt and pepper and serve.

1 1/2 tablespoons virgin olive oil
3 tablespoons light soy sauce (if using regular soy sauce, add 2 tablespoons more water) or 3 tablespoons reduced sodium soy sauce (if using regular soy sauce, add 2 tablespoons more water)
1 tablespoon minced garlic
1 teaspoon sugar
2 tablespoons water

Steps:

  • Preheat the oven to 475 degrees. Snap off the tough woods ends of the asparagus and rinse the spears. Drain on paper towels. Spread the asparagus out on a cookie sheet and brush or toss with the olive oil.
  • Roast the asparagus 10 to 12 minutes, or until tender when pierced with the tip of a knife. Alternatively, you can grill or steam the asparagus for 4 to 5 minutes, until tender. Arrange the asparagus on a serving plate.
  • Stir together the ingredients of the garlic dressing until the sugar has dissolved. Pour over the asparagus or serve as a dipping sauce. Serve warm or at room temperature.

1 pint cherry tomatoes (red or mixed colors)

1/2-3/4 cup skim milk (or if not diabetic, whole milk)
2 teaspoons cornstarch
1 teaspoon Dijon mustard
1 dash white pepper (or black)
1 teaspoon grated parmesan cheese

Steps:

  • Snap off and discard the woody bases of the fresh aspargus. Cook the fresh asparagus, covered, in a small amount of boiling water for 8-10 minutes. Or better yet steam for 8-10 minutes till tender. If frozen, cook according to package directions. Drain asparagus; transfer to a serving platter and keep warm.
  • To make the sauce:.
  • In a small saucepan stir together milk and cornstarch. Cook and stir over medium heat until the mixture is thickened and bubbly. Cook and stir for 2 minutes more. Stir in mustard and pepper.
  • Spoon sauce atop asparagus. Sprinkle with Parmesan cheese. Enjoy!
