Acorn squash is simply prepared with butter, salt and pepper but the caramelization from being roasted is the secret ingredient.

1 large acorn squash rinsed (about 11/2 pounds)
2 tablespoons unsalted butter, melted
Kosher salt and freshly ground black pepper
Fresh thyme sprigs for garnish (optional)

Steps:

  • Preheat oven to 425 degrees F. Halve the squash and scoop out and discard the seeds and strings.
  • Put the squash halves on a baking sheet. Brush with the butter and sprinkle them with the salt and a few grinds of pepper. Roast until they are brown and tender, 50 to 55 minutes.
  • Transfer the squash to a serving plate and garnish with fresh thyme sprigs if using. Serve warm or at room temperature.

  • Preheat oven to 450 degrees F.
  • Assemble acorn squash on a baking sheet. Place 1 tablespoon of butter and brown sugar in each half. Add 1/4 teaspoon of nutmeg in each and season with salt. Bake until golden and tender, about 1 hour to 1 hour 15 minutes, basting flesh of squash several times.
  • Twenty minutes before the squash is done, sprinkle edges with raw sugar. Serve squash warm.

  • Halve squash crosswise. Scoop out seeds; discard. Slice a small piece off bottom of each squash half just enough to level.
  • Set squash halves, scooped sides down, on prepared sheet. Bake until golden, 20 to 25 minutes. Turn squash; prick insides all over with a fork. 2 whole acorn squashes*
1/4 cup pure maple syrup
3 tbsp unsalted butter**
1/4 tsp ground cinnamon
1/8 tsp ground cloves
1/2 tsp salt

Steps:

  • Preheat the oven to 375F.
  • Wash each squash well, then dry with a towel.
  • Trim the top and bottom off, then cut each squash in half through the center.
  • Use a melon baller or spoon to remove the inner seeds and strings.
  • Lay each cut half on its flat side, and cut straight down toward the cutting board to make 1-inch thick slices.
  • In a small bowl, microwave together the maple syrup, butter, cinnamon, cloves, and salt for about 60 seconds, until the butter has melted. Stir well with a spoon.
  • Place the cut slices on a rimmed sheet pan in a single layer, then brush the maple butter onto both sides of each piece.
  • Roast for 25 minutes on the first side, then flip each slice over and bake for another 15-20 minutes, until caramelized and soft. Enjoy!

1 acorn squash, halved and seeded
2 tablespoons extra virgin olive oil
1/2 sweet onion, diced
3 garlic cloves, minced
1/2 teaspoon curry powder, to taste
nutmeg, to taste
1 1/2 cups arborio rice, uncooked (italian style)
1/2 cup dry sherry (optional)
3 cups vegetable broth
1/2 cup water, heated
1/2 cup pecans, chopped (for garnish)
parsley (for garnish)

Steps:

  • Preheat your oven to 400 degrees.
  • Place the acorn squash, cut side down on a well oiled baking sheet.
  • Bake for about 30 minutes, or until 'fork' tender.
  • Remove from the oven, and let cool for a few minutes.
  • Scoop out the roasted squash from the skins and set aside.
  • In a heavy saucepan, heat the olive oil on medium heat, and sauté the onion and garlic for 3 minutes.
  • Add the curry, spices, and uncooked Arborio rice and stir well, until the rice is coated.
  • Stir and cook for about 5 minutes.
  • Combine the water and vegetable broth.
  • Add the sherry, and 1 cup of the broth, and bring to a boil.
  • Reduce heat and simmer uncovered, stirring frequently for 7-8 minutes.
  • When most of the liquid is absorbed, add the remaining cups of broth 1 cup at a time, stirring and simmering until each cup of liquid is absorbed before adding the next one. (The whole process should take about 20-25 minutes.).
  • When the final cup of liquid is mostly absorbed, add in the roasted squash and mix well.
  • Continue stirring with a wooden spoon until the rice is creamy, yet still retains some bite.
  • Add freshly ground pepper, cover and set aside for a few moments before serving.
  • Garnish with pecans and parsley.

2 medium acorn squash
3 tablespoons butter
2 onions, thinly sliced
3 cloves garlic, minced
1 teaspoon ground coriander seed
½ teaspoon freshly grated nutmeg
½ teaspoon salt
freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut acorn squash in half. Roast them cut side up on a baking sheet for 50 minutes or until the flesh is just tender. Let the squash cool for 20 minutes.
  • In a large skillet over medium heat melt the butter; saute the onions. Stirring occasionally, cook the onions for 10 minutes, or until they begin to brown at the edges. Mix in the garlic, coriander, and nutmeg. Cook the mixture 2 minutes more; then remove the pan from the heat.
  • Spoon the seeds and stringy middle out of the squash, and discard these. Spoon out the flesh, chop it and add it to the onion mixture. Discard the skins. Heat and stir the squash-onion mixture, then season it with salt and pepper. Serve the squash hot.

Extra-virgin olive oil, optional
1 stick (1/2 cup) unsalted butter, softened
1/2 cup brown sugar
3 tablespoons amaretto
8 fresh sage leaves
1/2 pound crushed pignoli cookies, almond biscotti, or vanilla wafers

Steps:

  • Preheat the oven to 350 degrees F.
  • Split the squash in half through the equator and scrape out the seeds with a spoon. Set the squash halves, cut sides up, on a baking sheet and sprinkle with salt and pepper. Drizzle with extra-virgin olive oil, if desired. If squash are very large, cut lengthwise into quarters.

Steps:

  • Preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
  • To prepare the squash, use a sharp chef's knife to slice through it from the tip to the stem. I find it easiest to pierce the squash in the center along a depression line, then cut through the tip, and finish by slicing through the top portion just next to the stem. Use a large spoon to scoop out the seeds and stringy bits inside, and discard those pieces.
  • Place the squash halves cut side up on the parchment-lined pan. Drizzle the olive oil over the squash, and sprinkle with the salt. Rub the oil into the cut sides of the squash, then turn them over so the cut sides are against the pan.
